Dark Oolong tea has been an amusing discovery. Tasted it after almost a year of receiving . I found it to be quite strong but not bitter. Deep brown and tightly curled up. Roasted and almost charcoal-ish. . I steeped it after a quick rinse and I could see that the leaves became soft but still didn’t open up, unlike any fresh oolong. I kept the liquor light brown at first for I wasn’t sure if I could handle the strength of the tea, considering the overpowering aroma, but once I realised I could, I kept the next few steepings dark and golden brown. Glad I persisted. And I am impressed that the leaves didn’t dodge their character, they remained dark and roasty and coiled up till the end. . Something to learn from dark oolong tea- be your self. Don’t change your character just because others expect you to change. A walk through a very wet Wudong Mountain. While the drought we saw out in Yunnan takes its toll on the young bushes and the slower yielding Gushu trees, at least you can still pick and make tea in a drought. When it rains for days on end, you really can’t pick or make tea. This year has seen a very wet season in the Phoenix mountains with yields low, some cultivars missing their picking turn entirely, and a lot of tea with too much water being processed. We expect either a price hike on the good weather teas or a price drop on the rainy day teas, but either way there will be a lot of dross to sift through when selecting our 2024 dancong lineup. Sipping on some Four Seasons Spring Oolong from @tearunners this afternoon! I rarely ever brew up this varietal of oolong, but this session honestly has me questioning why that is. The whole session was more light to medium bodied and very aromatic. It starts off soft and buttery with a silky and slightly sweet note of fresh coconut milk, with a gentle green and grassy undertone. In some of the later steeps I started noticing notes of mildly toasted sesame - and I'm definitely a sucker for that kind of rich and nutty flavour. But what I enjoyed the most was the backend of the sip, which had a beautifully tropical fruit note that made me think of fresh mango; juicy but still with the tiniest touch of green, pine-like flavour to it's undertones. When the creamy coconut and summery mango combination meet in the mid sip of each infusion they just sing, and the aftertaste is a gentle lingering sweetness that makes you immediately want the next steep. 🌱🥭 . Is this the most amazing tasting Four Seasons I've ever tasted!? No, definitely not. However, that's certainly not to say it's bad. Far from it. Instead it's that perfect sweet spot of being approachable and easy to brew, with solid tasting notes and a really great mouthfeel - the kind of tea that's so easy going and tasty that could easily become a daily drinker without you ever really making a conscious decision to treat it as such. It's a sneaky, sneaky oolong in that regard... 👀

I am still drinking my way through both the winter and spring boxes from @teathoughts and am excited to continue this tea journey. This was the Honey GABA cake. I am pretty sure this was the first GABA oolong I’ve ever tried. Since I had two cakes, I tried it both ways recommended by Nazanin. The gongu method warranted a very earthy honey taste, with quite a cooling effect in the mouth. It was quite honey scented and that really came out the longer I brewed it. I also tried it “western” style in just a teapot. I enjoyed this much more, it wasn’t as heavy and intense, but was definitely more honey and sweet. It's Saturday morning. I did my exercises and meditation. Now, I'm prolonging the quiet of the meditation by preparing tea gong fu style. While I generally prefer highly oxidized oolongs, occasionally I prepare a low oxidation, low roast oolong like @tecompany 's #2028, the 'stolen cultivar' from Yilan County in northeast Taiwan. ❀ ¡ #Ankori cumple 8 años! Este año ha sido un período cargado de melancolía y recuerdos, reflexionando sobre los comienzos y el camino transcurrido desde que el té llegó a mi puerta. Estos momentos han sido capturados gracias al sensor de una cámara, permitiéndonos apreciar los efectos que la luz nos brinda en su constante danza con la oscuridad. Durante todo este mes, he compartido videos con estas grabaciones, seleccionando aquellas imágenes que han tenido un significado especial en mi propio viaje con el té. Observar cómo el paso del tiempo ha dejado su marca en cada escena y cómo cada entorno ha evolucionado hasta el día de hoy ha sido revelador. Aunque no haya registros visuales de este año en curso (todavía), cada representación plasmada en la imagen digital permite que la historia de Ankori sea recordada como una faceta personal de la transformación de esta práctica que surge de la repetición, algo que, de manera similar, experimentamos cuando nos sentamos a la mesa del té. Al final de este proceso, quizás, cada imagen cobre vida con solo contemplarla, un concepto similar a lo que wabi y sabi contextualizan dentro del chanoyu. Considero, de manera crítica, que después de tomar más de dos mil fotografías del mismo sujeto, aún queda mucho por explorar, tanto en lo físico como en lo etéreo. Creo que el futuro nos reserva el tiempo necesario para descubrir lo que aún falta y, sobre todo, para comprender el proceso de aprendizaje. Como dijo alguna vez Sen no Rikyū: “Si la práctica te atormenta, la paz nunca llegará a su destino”. Han sido ocho años de experiencias en cada paso, sin juzgar el resultado. Durante este tiempo, hemos compartido cuencos de té y cerámica, y desde ya, agradezco enormemente que nos hayan acompañado en este viaje, desde el principio hasta ahora, ayudándonos a ampliar nuestros conocimientos y a forjar conexiones en un mundo dividido. Espero que el té se convierta en una herramienta para nuevas oportunidades y que nos guíe hacia el corazón de cada uno de nuestros seres. ¡Feliz té! Pablo

We’re back in Chaozhou, Wu Dong Mountain in particular, and once again we are staying up late into the night to shadow the makers. Weve been coming to the Phoenix mountains every spring since 2017 (except for a year of covid restrictions), and every year it’s a grind. Up until 3 am making teas, only to get up at 8am to kill the green. We don’t envy these dedicated makers and their months of very little sleep. All that said, it produces a beautiful tea, as someone said to me recently: tea is difficult to make, but easy to drink.
