Fresh Ricotta, Parmesan, and herb filled ravioli in browned butter and sage sauce. Fresh Pasta: 200g “00” flour. 2 Eggs. Browned Butter Sauce: 4 tbs unsalted butter. 3 tbs fresh sage, chiffonade. A pinch of salt to taste. 1 clove or garlic, crushed. Freshly shredded Parmesan to top. Filling: 250g ricotta. 1 cup freshly grated Parmesan. 1 tsp Italian herbs. For the pasta, pour the flour into a bowl, make a well, add the eggs to the well, beat the eggs, and begin to incorporate the flour. Once the flour is wet and starting to come together, begin to combine with your hands. Form a cohesive ball and begin to knead. Knead for about 5 min, cover and let rest at room temp for about 20 min. For the filling, simply mix all of the ingredients together. To form the pasta I used a kitchen aid roller but you can roll by hand as well. You want to be able to almost see through the dough. Make 2 sheets, place about a tbsp of the filling onto the dough, I also used a ravioli stamp to cut out the ravioli. Place another sheet of dough over the other to stamp out the desired shape. For the sauce, begin by melting the butter, and add the garlic, and sage, let the garlic infuse the butter with flavor as it begins to brown and allow the sage to get crispy. Cook your pasta! Remove the crushed clove of garlic. Reserve a quarter cup of pasta water and add the water and pasta to the butter sauce. Toss to emulsify and coat. Rest and reset Saturday. Having very strange sensations in my body, especially my gut. It’s as if my hormones are going crazy. Could be a mix of cortisol from the recent whirlwind coupled with progesterone and other cosmic forces - swear I’m not crazy I’m just sensitive. Plus the weather got hotter by about 10 degrees… and Mercury retrograde is finally over. My mind feels a bit clearer so it’s as if the floodgates of words just opened up again. Whatever decisions that were made during Mercury retrograde seem to be undoing themselves; cancellations here and there, and new opportunities arising. I’m a bit afraid of human potential, since having to admit that most of life’s experiences are actually uncontrollable. I mean look, I ordered some Okinawan purple sweet potatoes online because they’re impossible to find in regular supermarkets in Tokyo. A month later they come in bulk and now I have probably 15~20 pieces frozen. (Friends - does anyone wants to come over for dinner?) I have also impulsively bought more fruits than a sane human can consume in a day. So I made chocolate-coated frozen fruit pops. Ugly delicious. This song has been stuck in my head for a week. It's a shame I didn't take a photo before I baked this confit garlic cauliflower cheese. It looked much nicer before the flipping sauce split 🤦♀️ Not sure why it happened but hey, dinner was still tasty enough. I would never normally make something like this because we don't really go for cheesy bèchamel nowadays. Pasta making class in Italy paid off. Made these tiny ravioli stuffed with herbs, Ricotta, and Parmesan. Tossed in a home made tomato sauce and topped with more fresh herbs and a basil and garlic infused olive oil. I think y’all know how to make a tomato sauce so I will be posting the basil infused oil recipe below along with a common recipe for fresh pasta. Basil Infused Oil for pasta: 1/2 cup packed fresh basil. 1 and 1/2 cups olive oil. 3 crushed cloves of garlic. 1 tsp chili flakes. 1/2 tsp both salt and pepper. Instructions: Blend in a food processor until nearly smooth. You will want to keep this in the fridge. It should last a good 3-4 days. It will begin to solidify and separate so take it out an hour before using and shake well. Also let it sit for at least 1-2 hours or over night before using to give it time to infuse. Fresh pasta: 100 grams 00 flour (per person). 1 egg (per 100 grams flour). Yes, that is all you need. Instructions: Add flour to a bowl or clean surface, make a well for the egg. Crack the egg into the well, mix the egg, start incorporating the flour, once all the flour is wet, begin to knead. Knead for about 5 min, depending on the size of the egg or the wetness, add more flour. Pinch by pinch, don’t go crazy 🤏. Shan Noodles a.k.a. The Ultimate Comfort Noodles for 99.9% of Burmese diaspora... My first memory of having these noods is in Kalaw where my grandparents had a gorgeous little retirement home. I remember walking to the market with my Grandma for groceries and then have breakfast! We had a choice of Noodles or Shan Rice Balls. We normally make 2 types at home, with tomatoes and minced pork (Southern-style) or with pork shoulder and no tomatoes (Northern-style). This version I made for my Shan-themed pop up at @mrmh_studio is the latter and it’s equally as good IMHO! Dagene på kontorpinden har aktuelt et roligt pace og det er om at nyde det, for jeg ved af erfaring, at det hurtigt kan vende! Synes at morgentrafikken med massiv kø var vildt irriterende, men når man ved at dagens program er roligt, er det bare om at finde sit zen med P1 Morgen og automatgearet 😄 Den rolige dag betød da også at jeg kunne tage forholdsvis tidligt hjem og med en god borgersamtale bag mig og en yderst fornuftig dialog med en af mine borgeres psykiater, føler jeg egentlig at ugens værste dag har behandlet mig godt❣️ Gårsdagens laserbehandling har dog givet lidt ekstra murren i knæet, men jeg tror nu ikke at det skyldes selve behandlingen, men mere at det blev mast lidt på lige præcis dér, hvor det ikke er rart, så jeg har allieret mig med min bedste ven Ibuprofen og tager en omgang laser mere i morgen 😉 Mine mænner og jeg tog også lige en omgang fisk mere, for selvom det ikke er mandag, svømmede fisken også ned i maven i dag, mens der blev talt og grint, lige præcis som jeg elsker ♥️ Håber at I alle er kommet vel gennem ugens værste dag, og at I, som jeg, kan lukke dagen ned med tilfredshed med dagens præstation, fuld mave og kærligt nærvær 🤗 #TodaysSpecial #Hake #Quinoa #Avocado #Lime #Broccoli #UglyDelicious #DontForgetTheFish #HealthyDish #Tuesday #WorstDayOfTheWeek #MondaysUglySister #NiceWorstDay #EasyPace #NoStress
