Highlights included the Eoganjang ceviche of amberjack with 11 year old fermented snow crab & anchovy sauce, which was surprisingly mellow & delicate, along with the Tohu-Tjin of Burmese tofu. Shan Noodles a.k.a. The Ultimate Comfort Noodles for 99.9% of Burmese diaspora... My first memory of having these noods is in Kalaw where my grandparents had a gorgeous little retirement home. I remember walking to the market with my Grandma for groceries and then have breakfast! We had a choice of Noodles or Shan Rice Balls. We normally make 2 types at home, with tomatoes and minced pork (Southern-style) or with pork shoulder and no tomatoes (Northern-style). Dear Lahpet Police, I made this gorgeous Gremolata out of Myanmar’s famous organic Shan Pickled Tea (grown and fermented in Baw-Seng). Instead of serving it as a salad like 99.99% of the households in Myanmar, I blended it with some high quality local products from Khon Kaen and made it into an Italian-inspired dip. It’s been a favourite at many of my pop ups and supper clubs so I must be doing it right!!! Pls don’t come after me. Girl Dinner but make it #Korean , #Thai & #Burmese fusion!! So I went to my local 7 Eleven to get the legendary #JayFai & @nongshim_thailand collab instant ramens to find out if it’s worth the hype. I’m already a major fan of Shin Ramyun so I was curious to see what tweaks they did to make it more Thai. I tried the stir fry version first and it did not disappoint!! A fun day out to the #Kudichin community near Wat Arun to learn about all the unique dishes cooked by Portuguese descendants in the neighbourhood and to see if there are any similarities to the Anglo-Burmese stuff my grandma cooked for us. 1st pic is Macaroni with tomato sauce, chicken breast and raisins. Nga dukkha du lac Inle, merluchon en colère, mousseline d’herbes, aromates & congee de maïs made at @lesresidents with Chef Patrick @blasterpiji ! Inle-style “Nga Dukkha” (literally meaning suffering of the fish!!) served with spicy herb sauce and our copycat Chin Sabuti a.k.a Corn Congee. We call this fish dish “Nga Dukkha” ‘cos the poor fish has to be gutted, stuffed with herbs and aromatics, bound with a string to keep the herbs in place, deep fried in oil and then served!!! We used Angry Fish from France and we stuffed it’s tail into it’s mouth too. This little rice based flavour bomb is courtesy of one of our fav chefs @_ladygoogoo_ 🤩 👩🍳 Apparently a go-to whilst growing up, this crunchy mix of beans, nuts and rice is excellent is quick as anything to rustle up and brilliant as a snack or even better as a side. *Warning* We batch made this at the weekend and have already finished the whole thing 🐽😬 INGREDIENTS: 70g Burmese Bean And Nut Mix 180g Rice 3 Spring Onions DRESSING Peanut Oil Ginger Garlic Lime Chillis Chilli Oil (always @rice_over_everything) Coriander M E T H O D : 1. Cook your rice and finely chop the spring onions 2. In a large bowl mix the rice with the spring onions and Bean and Nut mix 3. Once you've made the dressing, stir it in spreading the flavour 4. Garnish with coriander and Chilli Oil (we always recommend Rice Over Everything) 5. Enjoy!

Throwback to an afternoon at @araksatearoom with P’Ake @ake_thweep and P’Golf @ekarin_foodandtone . Supposed to be a Tea Tasting session but ended up ordering food and fell in love with everything we had!! July started off slow and sad but improved immensely 'cos I got to cook at @maadae.slowfish in Chiang Mai run by the inspiring P'Yao @yaowadeechookong of @slowfoodcommunitychiangmai . For those who's not aware of Maadae, it's a sustainable seafood restaurant that supports fisherman in the Southern parts of Thailand and local organic farmers. Quality food combined with highly skilled chefs means a heavenly meal!! (Definitely visit if you go to Chiang Mai.) It was super fun and rewarding to show all the chefs how to make some Burmese dishes, especially those of my Grandma and to learn some Thai chefs from them too. Have you ever tried Mandalay Zay-Cho Market style rice & curry served on a banana leaf/ ဖက်ထမင်း ပုံစား / #ข้าวแกง ? They usually have a row of trays filled with assorted curries and veges where you point and choose and they serve it for you. Complimentary soup, fish poste relish and crudités provided on the table. Us Burmese do know a thing or two about salads! Give us any edible leaves, shoots or blossoms and we'll turn it into a nice plate of salad. This is #Pennywort Salad a.k.a. #ใบบัวบก which is more widely consumed as a medicinal juice in Thailand. I made this at my pop up at @nobar.winebar in Bangkok and at first, diners were reluctant to order in case it's bitter and not quite palatable. Many are squeamish about these plates of wonders but as long as ingredients are nicely prepared and kept covered and handled in a hygienic manner, you need not worry! Made a quick trip to Mandalay to learn more about their "Steamed Rice" which is a savoury/non-spicy rice dish with BBQ Pork and Crispy Pork. They mix cooked rice with some special red tinged sauce, aromatic oils and mix it with fried peanuts and top with yummy meat. (Some add innards and blood cake too.)
