🌶🍍 Sweet chilli chicken traybake with pineapple and greens 🍍🌶 Who loves an all in one dish? 🙋🏼♀️ especially on a Monday! 🫠 I adoreeeeeee anything Asian flavoured and this was so easy, quick, delicious, healthy and most of all MY GIRLS ATE IT 🙏 Roast your marinated chicken and pineapple in a tray for 15 mins, add in your veg and ta-daaaa! Dinner! . . . How to...✔️ Serves 2 adults and 2 youngsters Coat 6 skinless chicken thighs (bone in or out, up to you) in 4 cloves crushed garlic, 1tbsp grated ginger, 3 tbsp soy sauce, sweet chilli sauce and the juice of 1 lime. Pop onto a baking tray and scatter around chunks of pineapple. Bake for 15 mins at 200c. Next add in some pak choi, broccoli or any other green veg you have. Drizzle over a little sesame oil and bake again for 10 mins. #ad Yesterday Adam and I finally visited the beautiful @wisteriakitchen in Boldon after being invited down for a spot of lunch 😍 The menu is huge offering signature dishes from around the world including Bunny Chow, Canadian Stack and your classic full English too! 🍳🥓 they also offer an ALL DAY brunch menu because ya know, brekkie foods are great any time 😏 I ordered their Cypriot Lamb Kofta Flatbread which was delicious! Tear and Share Iced Buns Super soft, sweet bread rolls topped with melt in your mouth icing; Iced Buns are a delicious and addictive British classic. Naughty but very, very nice, these nostalgic little buns have been popular across the generations for decades. Wonderful served fresh, as they are, or, if you are in a decadent mood, sandwich with whipped fresh cream and jam. Unbelievably good. Either way, a cup of tea (or coffee) is essential. The Globbatrotter I made these Iced Buns to celebrate the publication of my cousin’s (Pat Sumner’s) incredible new children’s fantasy novel, called The Globbatrotter. I was honoured to have a sneaky peak earlier in the year and I can guarantee that it is an absolute page turner. Aimed at 9-12 year olds, and set in the marshes, rhynes and ditches of the Somerset Levels, the Globbatrotter takes you on a magical, exhilarating adventure with pathos, humour and suspense. With relatable, likeable, and sometimes unlikable (yet interesting) characters, this wonderful tale is a masterclass in creative writing and page-turning story telling. Furthermore, references to Arthurian legends and Shakespeare permeate throughout the novel and add further interest and knowledge invaluable for young minds. So why Iced Buns? You’ll have to read the book to find that out! Whilst iced buns feature from the opening credits to the book itself, they play a small, but important, part of the story.
