So I’m going over to my families house for SuperBowl Sunday and my sister-in-law asked for 7 Later Dip. I made it for the first time ever and I didn’t follow the instructions which is why the cheese was on there after the lettuce and tomatoes but it’s still going to taste good. It’s not a chip dip but a spoon some out and eat it with chips. I didn’t use chunky salsa since I made pick de gallo for the avocado part and spicy sausage with fresh borracho beans that I then refried. Let’s hope it’s a touchdown with a field goal at the end. Let’s do this. Oh yeah and I also practiced some self care while making this dish. Not too shabby for my first time. I’ll post pics once I take it to my families house. Go 49ers!!! You would think it had snowed and there was a shortage of food as the parking lot was completely packed, to include all spaces in the curbside pick-up and cars lined up and around the corner to get into HEB. I’m thankful I’ve got plenty of paper products, plenty of 5 gallon containers of water in the garage and plenty of food in the freezer and lots of canned goods because just to pick up a small order of milk, eggs, bacon, steaks and cereal was over an hour wait. I’ve lived in countries where it was 25 below and freezing and there was still food in the store and paper products on the shelves. Just venting but am grateful for my Blessings. Woke up early today and washed and dried clothes. I cleaned my bathroom and unpacked a couple of boxes of bathroom toiletries. I have to say I have the greatest friends in the world. I received another package in the mail. I know what’s new. Lol. To my surprise it was a housewarming gift. I had bought Madonna’s Top 50 songs on CD so I would have a memento to go along with going to one of her last concerts coming up. What I didn’t realize was that the only CD player I have is the one on my iMac and Mac. So wasn’t it a pleasant double surprise that I not only received a CD player but Madonna’s Rainbow Collection on LP of her top 50 Hits. I am beyond words but I always knew I have exceptional friends. I grew up with the Trilogy and yes Faith wise but also music wise which were Michael Jackson, Prince and Madonna not to mention countless other artists who I still have tapes from and single EPs. The Music Trilogy were those three as they were still putting out hits in the 2000s which is quite the accomplishment. Ok getting back to this gift. All I can say is I am forever grateful and I am taken back to such great memories of my hometown Del Rio and of course the great times we all had in Mexico.
