Chocolate & walnut bread<br />This recipe gets better and better on the days AFTER you’ve made it, maybe it has magical powers... store in a cake tin.<br />Recipe <br />6 eggs ( room temperature)<br />3/4 cup coconut flour <br />2 tsp baking powder <br />F1 tsp xantham gum <br />1/2 cup granular erythritol <br />1/2 tsp @flavorgod buttery  cinnamon roll<br />OR 1/2 tsp cinnamonr <br />1/2 cup melted butter, cooled<br />1/3 cup chopped walnuts <br />5oz grated zucchini <br />1 sachet @perfectketo chocolate collagen powder ( see my highlights how to purchase)<br />1 tsp vanilla <br />1.5 oz choc chips<br />Preheat oven 350F<br />.<br />Place the zucchini in a small bowl, and sprinkle with salt. Put it aside while you prepare the rest of the ingredients.<br /><br />In a large bowl whisk the eggs until they are light and fluffy. Add in the vanilla and butter. Mix.<br />Then add in all the dry ingredients, and mix well. The batter becomes very thick.<br />Now take the zucchini in your hands and squeeze out as much liquid as you can, then drop it into the batter, along with the walnuts & chocolate chips. Stir well.<br />Add the batter into a lined 1 lb loaf tin.<br />Bake for 30 minutes. Then loosely cover with foil and bake for another 20 minutes. ( or until a sharp knife comes out clean when inserted into the middle )<br />Leave to cool for at least 6 hours.
