Keto Chicken Parmesan! 🤤 INGREDIANTS:- 2 pounds Boneless Skinless Chicken Breast ¼ cup sea salt optional 1 cup almond flour 1 cup parmesan cheese grated 1 teaspoon Italian Seasoning ½ teaspoon sea salt ½ teaspoon fresh ground pepper 2 eggs Avocado Oil Spray ⅓ cup sugar-free marinara 4 ounces fresh mozzarella Fresh Basil for garnish INSTRUCTIONS:- Place chicken breasts in a plastic bag and pound to a uniform thickness with a meat mallet. (About ½”.). Alternatively, place the chicken breasts on a plastic cutting board. Carefully slice horizontally into two thin pieces. Optional step: Heat 1 cup of water over medium heat and stir in salt until the salt dissolves. Transfer to a medium bowl and fill the bowl with cold water. Add chicken breasts and allow to brine in the refrigerator for 45 minutes. Preheat an Air Fryer to 390 degrees or the oven to 425. Place the almond flour, parmesan cheese, Italian Seasoning, salt, and pepper in a large bowl. Place the eggs in a separate bowl and beat well. Drain the chicken and pat dry with paper towels. Coat with the egg mixture and then dredge in the almond flour mixture.  The mixture will not stick as well as traditional flours and breadcrumbs, so you may have to use your fingers to gently press the coating into the chicken. Repeat with remaining pieces. Spray both sides of the chicken well will oil. Air Fryer Instructions Add the chicken to the air fryer and cook for 10 minutes or until golden brown. (Cooking times can vary by air fryer brand.) Carefully flip with a spatula. Re-spray and cook for an additional 5 minutes, until cooked through. Shedding 10 lbs in just 1 week with our keto recipes! Keto Lemon Herb Grilled Chicken! 🍗🔥 INGREDIANTS:- 4 bonless, skinless chicken breasts ¼ Cup olive oil ¼ Cup lemon juice freshly squeezed 4 Cloves garlic finely minced 1 small shallot finely minced (¼ cup minced) 2 tablespoon fresh thyme leaves salt & pepper INSTRUCTIONS:- Trim the chicken breast of any visable fat and remove the fillet if the butcher did not already do so. Place the chicken between two pieces of plastic wrap, or into a small ziplock bag. Using a rolling pin or meat mallet, gently pound the thicker end of the chicken so the chicken breast is an even thickness. Generously season both sides of the chicken breasts with salt and pepper, then place into a small baking dish. The chicken should be crowded, but not overlapping. I use a 7×9 dish, but 8×8 will work well too. Pour the olive oil and lemon juice into a small bowl or measuring cup, then finely mince the shallot and garlic. Remove the leaves from the stems of the thyme and add the thyme, shallot and garlic to the olive oil and lemon juice. Stir well. Pour the marinade over the chicken. Turn the chicken a few times to make sure it is fully coated then cover the dish and refrigerate a minimum of one hour, or overnight. Heat the grill to medium high heat. Remove the chicken from the marinade and place on the grill. Cook 8-10 minutes then flip and cook an additional 8-10 minutes until internal temperature reads 165°F. Remove the chicken to a plate, cover with foil and let rest for 5 minutes before serving. Shedding 10 lbs in just 1 week with our keto recipes! Krossade tomater, benbuljong med lite tryck (@nyttoteket )i, en skvätt balsamico för söttma, paprikapulver, vitlök, oregano, salt. Kokade blomlål i buljong (@rawfoodshop.se), mixade med parmesan (näringsjäst hade ju också funkat) och smör (ghee dito) och salt. Spenat, tomater och vattenmelon. Well, the forecast called for rain and, apparently “rain” here consists of frozen white flakes… and it just kept coming… and I was committed to an event that had me outside well into the afternoon. My meal forecast called for “easy dinner” but one not to forsake that Saturday night standard. It was a perfect opportunity to go to the freezer for a pre-prepared Lamb Shank in a Balsamic-Fig Jus. It was gifted in a promo a while back and needed only a reheat, which I did via sous vide. I reduced the cooking Jus into a sauce, made some Creamy Cauliflower Mash, and Sautéed Kale with Cherry Tomatoes. Not a bad go to, and there are leftovers, so stay tuned for wherever that goes.
