I feel like macaron making is like running…hear me out When I’m running, I go on this emotional rollercoaster and I’m not a massive fan of doing it when I’m doing it. But when I’m done, home, had a shower and sitting with a coffee I’m like, whoop I just ran! When I make macarons…it’s the same. The same emotional rollercoaster and you hope to god everything’s fine at the end. When they’re out the oven and cool enough to peel off the paper and decorate that’s when I finally relax and think ‘whoop I just made macarons!’ It’s a strange situation but I come out both with tears sometimes 😂. This weeks a big macaron week with a few different orders for them. So the flavours so far have been raspberry, lemon and lime. 🍞 Milk Brioche Rolls 🍞 Ingredients: - 1 1/4 cups warm milk - 2 tablespoons active dry yeast - 1/4 cup granulated sugar - 4 cups all-purpose flour - 1 teaspoon salt - 1/2 cup unsalted butter, softened - 2 large eggs, room temperature Directions: 1. In a bowl, combine warm milk, active dry yeast, and sugar. Let it sit for 5-10 minutes until frothy. 2. In a large mixing bowl, combine flour and salt. Add the yeast mixture, softened butter, and eggs. 3. Knead the dough on a floured surface until smooth and elastic. 4. Place the dough in a greased bowl, cover, and let it rise for 1-2 hours or until doubled in size. 5. Punch down the dough and divide it into equal portions. Shape each into a ball and place in a greased baking pan. 6. Cover and let the rolls rise for another 30-45 minutes. 7. Preheat the oven to 375°F (190°C). 8. Milk Brioche Rolls Recipe Ingredients: 500g all-purpose flour 250ml warm milk 50g sugar 10g active dry yeast 2 large eggs 100g unsalted butter, softened 1 tsp salt Egg wash (1 beaten egg mixed with 1 tbsp water) Pearl sugar for topping (optional) Directions: In a large bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until frothy. Add sugar, eggs, and half of the flour. Mix until smooth. Gradually add the remaining flour and salt, mixing until a soft dough forms. Knead in the softened butter until fully incorporated. Cover the bowl with a damp cloth and let the dough rise in a warm place until doubled in size, about 1 hour. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a roll and place on a baking sheet lined with parchment paper. Cover the rolls with a cloth and let them rise again for 30 minutes. Preheat the oven to 375°F (190°C). A whole wheat-ish artisan loaf to add to your weekend baking plan 🌾 I’m often asked how to make my everyday artisan bread with whole wheat flour and the answer is, it depends! Whole grain flours absorb more liquid than white flours, resulting in a stiffer dough. The stiffer/drier the dough, the harder it is for it to rise so you will end up with a flatter loaf with reduced oven spring. There are also different types of whole wheat flours to choose from, so where to start? If you would like to experiment, this is a 2:1 unbleached bread flour to whole wheat all-purpose flour loaf. You will still get some of the added nutritional value that comes with using whole grains, but with the softer texture that comes with good hydration. When adding different flours to my artisan bread recipes, I’ve found that you can usually replace 25-30% of the bread flour and still get a light, airy loaf like you see here without any additional changes. Cinnamon Sugar Swirl Loaf Ingredients: 1 cup of butter, room temperature 2 cups granulated sugar, plus an additional 1/3 cup for the swirl 2 large eggs 1 tablespoon pure vanilla extract 2 cups of buttermilk 4 cups all-purpose flour 2 teaspoons of baking soda 2 teaspoons of cinnamon powder Directions: Prep Time: 10 minutes | Cooking Time: 50-60 minutes | Total Time: 1 hour 20 minutes | Yields: 2 loaves Warm your oven to 350°F (175°C). Use non-stick baking spray on your loaf pans, or alternatively, line them with parchment paper. Using a stand mixer equipped with a paddle attachment, cream the butter and 2 cups sugar until the mixture is pale and fluffy. Incorporate the eggs one at a time, followed by the vanilla, ensuring each is well mixed before adding the next. Scrape the bowl sides as needed. Slowly blend in the buttermilk, flour, and baking soda to the mixture, ensuring you mix at a low speed to avoid flour dusting. Distribute a quarter of the batter evenly between the two prepared loaf pans. Combine the remaining 1/3 cup sugar with cinnamon, then sprinkle half of this mix over the batter in each pan. Evenly spread the rest of the batter into the pans, and finish by scattering the last of the cinnamon-sugar mix on top. With a knife or skewer, gently swirl the batter to create a marble effect. Bake in the preheated oven for about an hour, or until a skewer inserted into the center comes out clean.
