I've been at the beach for four days eating anything I pleased (I'm looking at you, fried snapper!) and it's nice to be home and back on track with my usual high protein, high fiber, no dairy situation. Tonight I made @food52's recent recipe for Burmese Chicken Braised in Coconut Milk & Turmeric with Sweet Potato and it hit the savory, spicy and healthy notes I was looking for. Chicken thighs marinated in @diasporaco coriander, turmeric and ginger while I prepped a quick curry paste of cilantro stems, garlic, ginger, and chile. The sweet potato is seared in oil, followed by the chicken. Broth gets added for a quick simmer and the whole thing is finished with coconut milk, fish sauce, lime and crispy Shallots. I’m making #meatloaf tonight (and an extra one for my parents to take home it’s one of my dad’s favorites! They just returned from their roadtrip to the Grand Canyon on Friday). My mom’s meatloaf was always my favorite growing up & @inagarten recipe is very close to how my mom made it. Super moist & full of flavor. The next day mom would pan fry leftover slices & serve with fried eggs & Japanese rice for breakfast. Mmmm so good! Recipe below. . Meatloaf . Ingredients: 1 tablespoon good olive oil 3 cups chopped yellow onions (3 onions) 1 teaspoon chopped fresh thyme leaves 2 teaspoons kosher salt (I use sea salt) 1 teaspoon freshly ground black pepper 3 tablespoons Worcestershire sauce 1/3 cup canned chicken stock or broth 1 tablespoon tomato paste 2 1/2 pounds ground beef (I sometimes like to use a 75% ground beef & 25% ground pork mixture or ground turkey. It all comes out great) 1/2 cup plain dry bread crumbs (I use panko) 2 extra-large eggs, beaten 1/2 cup ketchup (I use @portlandiafoods organic ketchup my favorite) . Directions Preheat the oven to 325 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly. . In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. . Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through.
