Mini Coffee Cheesecakes Ingredients: CRUST: 1 ½ cups oreo crumbs 2 tbsp melted butter CHEESECAKE: 2 packages full fat cream cheese, room temperature, 8 oz each ⅓ cup sugar 1 tsp vanilla extract 3 tbsp brewed espresso 2 large eggs For the Ganache: 6 ounces semi-sweet chocolate finely chopped 1/2 cup (113ml) heavy cream 1/2 teaspoon DeLallo espresso powder espresso beans for garnish, optional shaved chocolate for garnish, optional Directions: Preheat the oven to 350º F. Line a regular-sized muffin pan with 12 muffin liners. Combine the oreo crumbs and melted butter until it resembles coarse sand. Distribute 1-2 tbsp of oreo crumbs into each muffin cup.
