This is a hard post to share, which is probably why it took us so dang long. This weekend will be our last day operating Garlic & Spice. While many of you have become regular, familiar faces and we’ve enjoyed becoming a “favorite” spot here in our amazing town, we were not given the option to renew our lease for next year. We are so grateful for the unconditional support and love you’ve shown us and our family over the years. The fact that we started on Friday the 13th, three days before the FIRST COVID lock down, and made it through everything after, is a miracle. Rob has worked long days, countless hours, missed many family events, dinners, and the girls just kept growing. But he did it do so that I could be home with our girls, which I’m forever grateful for. We both realize it’s time for him to step back and enjoy life more, so maybe this is a blessing and it’s all working out just how it’s supposed to. We are also so grateful for our staff who has stood by us through this journey and stepped up when we needed them to fill in. The restaurant business is not easy, but it was better with them! A special thanks to Travis French (Facebook.com/Travis.The.French) for helping us literally build the kitchen and run it. He has been a rock and backbone. National Pfeffernuesse Day - December 23, 2023 Pfeffernusse, also known as ‘pepernoten’ or peppernuts, originated from Central Europe. A confectioner from Offenbach am Main, named Johann Fleischmann, is believed to have created the recipe in 1753. Since then, the cookie became very popular, attracting the interest of so many people, including renowned individuals like Felix Mendelssohn. Germany, Denmark, and the Netherlands are the countries most popularly known for this delicacy. In North America, the ethnic Mennonites are also very fond of pfeffernusse. Today, the recipe is widely available and the cookie is widely consumed around the world. However, pfeffernusse is traditionally reserved for the holiday period, around December. This is in keeping with the tradition of its origins, as the cookie has been associated with the celebration of Saint Nicholas Day and Christmas. The traditional recipe consists of nutmeg, cinnamon, cloves, ginger, black pepper, mace, anise, sugar, butter, eggs, and flour. Popular nuts such as walnuts and almonds are also used to give the cookie some flavor. Leavening agents are applied to the mixture, kneaded, and then baked. They usually come out hard from the oven but would soften after a few days. Also, they are tiny and are sometimes shaped like nuts, which is probably why they are called peppernuts. Ice Cream and Violins Day - December 13, 2023 This is the 2nd Ice Cream Day of the year! Your favorite ice cream shop may even be closed for the season! But it’s still a perfectly good reason to get a pint or three (who’s counting) of the good stuff to share with your friends and family. Vanilla Ice Cream Ingredients 2 ¼ cups milk 1 cup heavy whipping cream ¾ cup white sugar 2 teaspoons vanilla extract Directions Stir milk, cream, and sugar in a saucepan over low heat until sugar has dissolved. Heat just until the mixture is hot and a small ring of foam appears around the edge. Transfer cream mixture to a pourable container such as a large measuring cup. Stir in vanilla extract and chill mix thoroughly, at least 2 hours. (Overnight is best.) Pour cold ice cream mix into an ice cream maker, turn on the machine, and churn according to manufacturer's directions, 20 to 25 minutes. The noodle ring is a dish made of various ingredients, including noodles of course, that is placed into a mold and then baked. Of course, recipes vary from one person to the next, so you can certainly put your own spin on this dish when you make it for National Noodle Ring Day—a holiday celebrated on December 11th. The History Of The Noodle Ring The noodle ring is a dish that goes back hundreds of years, all the way back to the Middle Ages. During this time, people made “edible vessels” from a variety of different things during this time, including pasta. Pasta arrived in Europe around the 13th century and was immediately used for making a variety of different dishes, but we won’t get into that here. About 1936, the recipe ended up in a Pennsylvania Dutch cookbook and by the 1940s it had become an extremely popular dish as housewives searched for recipes that could be used to make tasty and visually attractive dishes. Although it fell out of favor during the 1960s with American households, it still has sort of a cult following. That’s probably why there’s a holiday dedicated to it. HISTORY OF NATIONAL BROWNIE DAY Legend has it that the creation of brownies hales from the Palmer House Hotel in 1893. Bertha Palmer, a prominent Chicago socialite whose husband owed the hotel, asked a pastry chef for a dessert suitable for ladies attending the Chicago World’s Columbian Exposition. She requested a cake-like delicacy small enough to be included in boxed lunches. The result was the Palmer House Brownie with walnuts and an apricot glaze. The modern Palmer House Hotel serves a dessert to patrons made from the same recipe. The name was given to the dessert sometime after 1893, but was not used by cook books or journals at the time. By 1907 the brownie was well established in a recognizable form, appearing in Lowney’s Cook Book by Maria Willet Howard as an adaptation of the Boston Cooking School recipe for a “Bangor Brownie”. It added an extra egg and an additional square of chocolate, creating a richer dessert. The name “Bangor Brownie” derives from the town of Bangor, Maine, which legend states was the hometown of a housewife who created the original brownie recipe. Maine food educator and columnist Mildred Brown Schrumpf was the predominant proponent of the theory that brownies were invented in Bangor. National Sacher Torte Day - December 5, 2023 The Sacher-Torte ranks among the most celebrated culinary creations in Vienna. Sacher-Torte is a special kind of chocolate cake invented under equally special circumstances in 1832 by Austrian pastry chef, Franz Sacher, for the Austrian State Chancellor, Prince Clemens Lothar Wensel Metternich. A huge fan of novel dishes, the Prince ordered the creation of a new cake. With the head chef out sick, the kitchen staff immediately went into panic mode. No one had any idea what to prepare — and then Franz Sacher had a culinary revelation. Despite being a 16-year-old, Sacher gathered his wits and the available ingredients, then set about to create what has since become a famous chocolate cake. The prodigy would go on to run several restaurants and cafes. The Sacher-Torte was by far his most notable creation; it established his genius and made him prosperous. In 1876, Franz Sacher’s son, Eduard Sacher, opened a luxury hotel in Vienna which bore the family name. The Sacher-Torte unsurprisingly became the staple of the Sacher Hotel. The hotel would rise in popularity under the management of Eduard’s wife, Anna Sacher. Famous for her love of cigars and dogs, Anna Sacher transformed the hotel into a hotspot for diplomats, aristocrats, and socialites. It called for a standard pie crust, slices of soft seedless apples, and a few tasty spices—specifically cardamom, ginger, cinnamon, nutmeg, clove, mace, and sugar—all cooked up in a traditional Dutch oven. The English also had their version of apple pie, which dates back to the time of Chaucer. The English version also suggests adding figs, raisins, and pears to the apple-and-spice mixture. In Sweden, apple crumble was the gold-standard. Traditional Swedish apple crumble requires breadcrumbs or rolled oats instead of pastry, and is served up with custard or ice cream. In France, apple pie is served upside-down as a tarte tatin. The French also caramelized their apples, an innovation which added a whole new dynamic to the flavor. They were also the ones who decided to add cheese to their pies, which actually makes for a surprisingly delicious treat. In the 17th century, apple pie was finally brought to the American colonies. Over time, apple trees (which were not native to the Americas) began to grow, which made baking much easier. However, it is believed that fritters were first consumed by the ancient Romans, who later introduced them to Europe. Fritters are used in many cuisines. The French beignets, Italian “bignè”, and Greek “loukoumades” are examples of fritter varieties specific to different countries. The custom of coating food in batter and frying it was introduced to Japan by the Portuguese and Spanish in the late 16th century. From this, tempura – deep-fried shellfish, fish, and vegetables – was incorporated into traditional Japanese cuisine. Similarly, the Indian pakora is a savory deep-fried cake containing meat or vegetables such as cauliflower and eggplant. National Mousse Day - November 30, 2023 Chocolate mousse, as the name suggests, originated in France. It is not clear when exactly the dish was invented, but a few clues in history do allow us to put together some semblance of an idea. Chocolate first came to France back in 1615. While chocolate was being incorporated in other desserts, it wasn’t until the 1800s when chocolate mousse was finally invented. Mousse, at this point, had already become a part of the savory French cuisine. After the French, chocolate mousse found popularity with Americans. There are varying accounts of when chocolate mousse was introduced to the masses in the U.S. One instance states that chocolate mousse’s recipe was advertised in the “Brooklyn Daily Eagle” for a cooking class by Miss Parloa in 1887. But other two accounts say that the recipe was revealed by A) an exposition in 1892 and B) the “Boston Daily Globe” in the Housekeepers Column in 1892. These differing accounts do leave us dizzy with confusion but it does not matter in the end because we are here for the chocolate mousse. National Lemon Cream Pie Day - November 29, 2023 Food historians believe lemon desserts have been around since the Middle Ages! Whipped cream, on the other hand, is a relative newcomer: it didn’t show up until the 16th century. It first appeared in recipes in Italy in the mid 1500s and then traveled to France and showed up in recipes there just after 1600. Somewhere between then and now, someone had the brilliant idea to marry them together in a way that’s basically sunshine baked into a pie dish. While lemon custards, puddings, and pies have been made since Medieval times, meringue was perfected in the 17th century. Lemon meringue pie, as it is known today, is a 19th-century product. The earliest recorded recipe was attributed to Alexander Frehse, a Swiss baker from Romandy. Travel writer Larissa Milne credits chef/entrepreneur Elizabeth Goodfellow for this pie. According to noted food historian William Woys Weaver, Goodfellow was “one of the most creative forces in American cookery during the early nineteenth century.” Her shop was unique. Unlike the many bakeries that supplied bread and daily baked goods, Goodfellow’s pastry shop provided elegant cakes, pies and sweets for Philadelphia’s high society parties. While known for many treats, including jumbles (an early version of sugar cookies) and queen’s cakes, and individual spiced cakes flavored with brandy and madeira, her most lasting legacy is the advent of lemon meringue pie. National French Toast Day - November 28, 2023 Here’s the first thing you need to know: The French do not call this French toast. It’s called “pain perdu,” or “lost bread,” because you can literally use stale bread to make it. (Most Americans, however, might find that objectionable.) French toast, according to Frenchly, comes from a desire to not waste food. Also, please note that it’s a major faux pas to throw bread way. (Bread has religious meaning.) Most experts agree that French toast dates back to ancient Rome. A similar recipe can be found in the book of Apicius from the 5th century BC. The Romans dipped slices of bread in milk (and sometimes eggs) before frying them, and called it “Pan Dulcis.” Fast forward to the 1400s and you’ll find a similar recipe at the court of Henri V where the “lost bread” attracted many fans. Still, it wasn’t until the mid 17th century that the term “French Toast” appeared in England. Food historians believe the term “French” does not even mean France; instead, it refers to the verb “to French” which means “to slice” in Old Irish. So, “French toast” is actually “sliced toast.” Irish settlers traveling to the U.S. and Canada may have brought the term with them. The phrase “French toast” first appeared in The Encyclopedia of American Food and Drink in 1871. However, similar recipes were also called “Egg toast,” “Spanish toast,” and even “German toast.” There’s another less exotic theory. French toast may have been called “French” because it enabled chefs to inflate the price. “Traditionally in the United States, we have an admiration for French cuisine, which we consider elaborate and gastronomic,” says Kitchen Project Editor-in-Chief Stephen Block. “And that’s probably why this dish was named that way. It’s just marketing. There’s no chance that ‘Lost Bread’ could have worked.
