Just family meals… but cooking like this always makes me think of mum. Golly she was a good cook! She was adventurous and always had her eye on the latest TV chef (no not like that silly!) with their Italian, Greek and Spanish dishes. She’d try everything… I honestly believe my mum taught me practically everything I know about cooking. She’d make what we called ‘casserole’… which in some parts of UK would be a stew and here in France it’s a ragout. The thing I love about this style of cooking is the way the flavours layer and blend with very little involvement from the hands throwing it together! It’s all about seasoning, ingredients and patience. I miss her. 🌟 CAULIFLOWER STEAKS WITH SWEET POTATO PUREE 🌟 Earthy cauliflower, delicately seasoned and roasted to perfection, paired with creamy sweet potato puree. Topped with a delicious mix of olives and soft dried tomatoes for a burst of Mediterranean flavour. This dish is a celebration of wholesome ingredients coming together for maximum flavour and texture. - 1 Cauliflower - 5 tablespoons Olive oil - Salt - Pepper - 1 tablespoon Lemon juice - 2 Sweet potatoes - 150 ml Vegetable broth - 1 handful Basil - 60 g Sun-dried tomatoes - 90 g Green olives - 90 g Black olives 1 tablespoon Pine nuts. Clean, wash and cut the cauliflower into slices about 1cm thick. Brush with 2 tbsp oil, season with salt and pepper and place on a baking tray lined with parchment paper. Sprinkle with lemon juice and bake in the preheated oven at 200°C until golden brown. Meanwhile, peel and chop the sweet potatoes and place in a saucepan with the stock. Cook over a medium heat until tender. For the topping, wash the basil, keeping some for garnishing. Chop the rest into strips. Chop the tomatoes and olives and mix with the basil strips. Using a potato masher, mash the sweet potatoes with 2 tbsp of oil. Season to taste with salt, pepper and a pinch of freshly grated nutmeg. Arrange the cauliflower steaks on top of the puree and top with the olive mixture. Une tarte salée qui se mange même au goûter 😋😍 Encore une fois j'ai repéré une recette dans un magasine (et les jolies quiches de @julie_eden m'ont donné l'eau a la bouche) donc j'ai voulu tester : quiche salée aux asperges/courgettes/ricotta/saumon & ail des ours Un délice !! D'abord, cuire les asperges vertes 8 min dans l'eau bouillante. Même chose avec une courgette verte (garder la peau) Precuire pendant ce temps là la pate feuilletée au four. Mixer dans un saladier la courgette cuite, 5/6 asperges, ajouter une cuillère à soupe de ricotta et l'ail des ours. Ajouter le saumon en dés à votre préparation. Verser la préparation sur votre pâte précuite et ajouter 2 œufs battus au dessus + parmesan râpé. Remettre la quiche au four 20 minutes et dresser ensuite quelques asperges au dessus. Red Wine Braised Short Ribs🍷🥩🔥 by @calwillcookit FULL RECIPE ⬇️ INGREDIENTS - ~3 lbs boneless chuck short ribs (bone-in works as well) - Extra virgin olive oil - Seasonings: Salt, pepper and garlic powder - Beef tallow (can use any high smoke point oil or fat) - 1.5-2 cups celery chopped - 1.5-2 cups carrots chopped - 1 white onion (medium diced) - 4-6 tbsp fresh minced garlic - 2 tbsp tomato paste - 1 750 ml bottle of red wine (cabernet) - 3-4 cups beef broth - 4-5 springs of fresh thyme - 3 springs of fresh rosemary - 1 dried bay leaf - Chopped parsley (for garnish) Garlic-Parm Potato Purée (Full recipe is in the comments) Note(s): Measurements are estimated, adjust ingredients to your liking. DIRECTIONS 1. Pat the short ribs dry, coat in olive oil and season generously on all sides with salt, pepper and garlic powder. 2. Get a large greased skillet going over medium high heat and sear the short ribs on all sides until you get a nice crust. Once done, set aside. 3. Get a dutch oven or any large oven-safe pan/pot going over medium heat. Add in some olive followed by your celery, carrots, onions and garlic. Season with salt and pepper then mix. Let sauté for a few minutes then clear a spot in the middle and add in the tomato paste. Mix that in tell everything is well combined then place your short ribs on top. Pour in the wine and beef broth untill the liquid covering the top of the short ribs. Add in the thyme, rosemary and bay leaf. Place the lid on and pop it in the oven at 325 for 2.5-3 hours or until the short ribs are fall apart tender. 4. Once the short ribs are done, turn off the oven & leave them in there while you make the garlic-parm potato puree. 5. Plate it up & ENJOY! 🙌🏻 Optional: Remove the short ribs, strain out the veggies & reduce the broth to make a sauce.
