Para acompañar como cada lunes a @sarairenedelasnieves de @loslunesdeensalada a quien acompaña hoy la capitana @thegooodtaste , he caminado las hojas verdes por legumbres pero diferentes. Tb xa aprovechar lo que tenemos en la nevera. Además puede servir de plato único. ENSALADA DE LENTEJAS CON CUS CUS , PIMIENTOS ASADOS Y CHERRYS CONFITADOS. 400 g de lentejas cocidas 1 taza de cuscús 2 huevos cocidos 200 g de pimientos rojos asados Tomatitos Cherry confitados Albahaca y hojas de menta picadas 50 g de queso fresco (tipo Burgos) 50 g de avellanas picadas Cebollino 6 cucharadas de aceite de oliva virgen extra 2 cucharadas de vinagre de Jerez 1 cucharadita de miel Sal Lavar y escurrir las lentejas. En un cazo cocer los huevos 10 min. Confitamos los cherrys(, yo los hice en la airfryer) poniéndolos a 190° 15 min. Previamente salpimentados con un poco de aove y albahaca Troceamos a tiras los pimientos asados. Preparamos la taza de cuscús con agua cocida y sal, tal como indica el envase. Cortamos en trocitos muy pequeños el cebollino, la albahaca y las hojas de menta. Finalmente, mezcla todos los ingredientes: las lentejas ya frías, el cuscús, los huevos cocidos troceados, las tiras de pimiento, los tomatitos, el queso, las hierbas machacadas y el aliño de aceite, vinagre, miel y sal. Por último espolvorea con menta y avellanas picadas. Ensalada asiática de salmón y tomate Un buen aliño hace todo en una ensalada. Este de inspiración asiática es de la web de Nick Sharma @abrowntable y sirve para cualquier ensalada. Tiene aceite vegetal, vinagre de arroz, sirope de arce, mostaza, aceite de sésamo, salsa de soja y ajo picado con un pellizco de pimienta de Sichuan Y buscando en la nevera encontré un montón de cosas para bañar con ese aliño: tomates Cherry, hojas de cilantro y menta, edamame, pepino, cebolleta china, cebolla roja, rabanitos, manzana y por encima unos cacahuetes tostados y sésamo. El salmón eran los recortes de mis salmones marinados de Navidad, que estaban en el congelador. In just 30 minutes this Paleo + Whole30 savory and sweet strawberry chicken salad will be on the table! It's full of flavor and super easy to make!⁣ ⁣ INGREDIENTS⁣ For the dressing:⁣ 1/4 cup olive oil⁣ 1/4 cup balsamic vinegar⁣ 1 tbsp dijon mustard⁣ 1/4 tsp sea salt⁣ 1/4 tsp ground pepper⁣ ⁣ For the salad:⁣ 4 Boneless skinless chicken breasts⁣ 1 tbsp avocado oil⁣ 4 cups spinach⁣ 4 cups arugula⁣ 12 strawberries, sliced, (about 1/2 lb)⁣ 1/2 red onion, sliced thinly⁣ 2 avocados, sliced⁣ 1/4 cup sliced almonds⁣ 1/2 cup feta cheese, (optional – omit for Whole30)⁣ salt and pepper⁣ ⁣ INSTRUCTIONS⁣ 1. Preheat oven to 450° Fahrenheit and lightly grease a baking pan with avocado oil.⁣ 2. Season chicken on both sides with salt and pepper. Place chicken on the baking pan.
