The Hopi baskets and plaques on the “Hopi Float” are carefully made from natural materials including corn husks hand laid one piece at a time. The Rose Parade’s elaborate floats have stayed true to its floral beginnings. Every inch of every float must be covered with flowers or other natural materials, such as leaves, seeds, beans or bark. The most delicate flowers, including roses, are placed in individual vials of water, which are set into the float one by one. Nicholas Rajen, I learned about Apache Coffee from the American Indian Foods Program - a few months back, I started getting in to coffee and espresso brewing and wanted to try different roasts. Apache Coffee has an excellent selection of roasts to choose from, and so far, their beans/grinds (the ones I’ve tried) have been downright awesome! I love the Mexico sourced one from Oaxaca; side note there’s a cool book called “Zapotec science” which has a few chapters devoted to how the campesinos (most if not all indigenous Zapotecs from Oaxaca) farm their coffee). I am excited to try the Peruvian and Tanzania coffees, and the signature cowboy coffee roast (this bag got gifted before I could give it a taste). Apache Cowboy Coffee So here is the process. You start with a burr grinder. You grind it on a setting of about 12. Then you use filtered water. And then use a good coffee brewer that gets the water up to at least 202°. Then you mix 8 tablespoons of coffee grinds to 40 ounces of water. (Whatever that ratio is for what you’re using). I use a gold basket but you could also use a paper filter. The grind setting is dependent upon the type of filter that you use. Remember, if people say that they want coffee to be “not so strong“, what you do is as you brew the coffee at the proper settings that I have given you here. And then you add boiling or hot water to sit out the coffee. This is the best way to make coffee less strong. The wrong way, is to use less grounds, meaning, putting more water through the grounds. That is the wrong way to make coffee less strong. That depends on what type of coffee you have. All coffee should be stored long-term between 50 and 70 degrees Fahrenheit, at about 30 to 50 percent humidity. If you have green coffee beans they should be stored in the open air (for example, burlap bag) and are good to roast for 2 to 4 years, depending on humidity. Keep them dry and away from water and sunlight. Roasted coffee beans should be kept in an air-tight container, as well as ground coffee. You can store roasted coffees without much flavor loss for about a year unopened, or 2 years in the freezer. Coffee is still good past these dates if kept properly, but flavor fades away quickly over time. Once you open roasted beans or ground coffee you should plan to use it up within a week for the best flavor. That is why it is always best to buy small amounts instead of 5 or 10-pound packages.
