Let's take a minute to appreciate salmon. It's the most versatile fish that I know. It can be served raw or cooked, hot or cold, and its color is simply beautiful! We indulged in salmon prepared two ways at Epcot's Festival of the Arts. L'Art de la Cuisine Francaise is known for having some of the best offerings of the fest (I'm looking at you, Frozen French Martini), and this year was no different. Duo de Saumon, Hot and Cold ($14.95) allows you to sample each of their salmon creations side by side. The cold offering is Saumon Fume Mousse et Aspic, Bilni et Fromage de Chevre, which is salmon mousse topped with smoked salmon and dill, atop a flaxseed biscuit. The mousse had a slightly gelatinous texture that paired well between the crispy biscuit and toothsome smoked salmon, but those sensitive to textures may find that unappealing. The hot offering is Vol-au-Vent de Saumon et Epinards, Sauce Chardonnay, which is puff pastry with baked salmon and wilted spinach, topped with a sweet and flavorful chardonnay cream sauce. This was a great hot entree, but I felt the salmon was overshadowed by the amazing pastry and sauce. It was delicious while hot, but we were there on a 50-degree day, and our portion cooled quickly. This resulted in a less appetizing, congealed sauce. My advice: if it's cold, don't stop to take pics. Dig in, my friends! Both the hot and cold options can also be purchased on their own for $7.95 each. If you have the Disney Dining Plan, any of the three salmon options can be had for a Snack Credit. Behold the Spring Roll Snack Cart 💕 Enjoy the Cheeseburger Spring Rolls and usually a seasonal flavor. (Cheeseburger is the best IMO) Served as 2 rolls with a dipping sauce and is a fav of lots of Disney foodies. These are one of my all time favorite snacks in Walt Disney World. Have you been to Galaxy's Edge at Disney's Hollywood Studios in Orlando, Florida or Disneyland in California? If you have, did you try the blue or green milk? The Blue Milk tastes more tropical to me. According to the Disney description: It's a blend of Coconut and Rice Milk with alluring fruity characteristics. Green Milk is probably my favorite. I’m a big fan of more citrus flavors and Disney describes this one as: A blend of Coconut and Rice Milk with zippy citrus and tropical characteristics. Contrary to its name, these are both non-dairy, made from an blend of alternative milks (which is rice and coconut) and they are both labeled as plant based. They are both creamy, icy, and super refreshing on a hot day.
