Well, Hudson’s 1st Birthday trip to @disneyland is done & we have been home for a week now. To put it as briefly & bluntly as possible, while there were definite moments of magic & to see the joy & happiness on my children’s faces can never be beat; as a whole, this trip was very hard on us. I could have read 100 Disney blogs about going with kids but nothing could have prepared me for the chaos that ended up being our family vacation. Traveling while chronically ill is hard. Traveling with two toddlers is hard. But combining the two made it almost impossible. We were late to literally everything. We ran late leaving home & missed out on a lot of plans the 1st day, we were late to our Goofy’s Kitchen res (luckily they still sat us) & late to our Storyteller’s res (where they did not accommodate us) & just so many hiccups along the way. Would I do it again? Yes, but with lots of lots of alterations that focus mainly on needing more time/days to handle it all with enough rest & grace to make it all worthwhile. The entire week prior & the entire trip was all go go go & I don’t think I ever had a moment to really breathe, really take it all in, & really enjoy myself. The return of princess dining at Akershus! The dinner is served family style and the princesses rotate through to each table, taking pictures and signing autographs. The food was delicious and the commentary and helpfulness of the Norwegian cast members was unmatched. Had a wonderful late lunch at Citricos in The Grand Floridian! I had one of the tastiest non alcoholic drinks, the purple penguin. Super fun presentation and definitely a fun fruity vacation vibe drink. I had a little bit of everything off the menu. The strawberry salad with the goat cheese was phenomenal, as was the short rib and the potatoes and cauliflower. I wanted SO much to love the truffle Mac and cheese, but it was very heavy on the truffle, which I normally like, and it was more of a truffle cheese soup with noodles sprinkled in.
