Jedva smo dočekali vratiti se u naš omiljeni restoran Hišu Franko i probati novi menu s kojim su prije nešto više od mjesec dana otvorili sezonu 2024. Pod nazivom “50 nijansi crvene” Ana Roš i njen tim na čelu s Yvonne Simon, nastavljaju u slavljeničkom duhu s obzirom da su lani ovjenčani najvećim priznanjem u restoranskom svijetu, 3 Michelinove zvjezdice te ujedno rangirani kao 32. restoran svijeta prema World’s 50 Best Restaurants listi. Uz mnoštvo noviteta, na meniju su u modificiranim verzijama zadržana 3 klasika koje gosti uvijek priželjkuju kušati u Hiši Franko poput njihovog kukuruznog beigneta s fermentiranim svježim sirom i ikrom pastrve, zatim krumpirom pečenom u sijenu s piskavicom i vrhnjem infuziranim pečenim kvascem te vrlo popularnim srnjakom kojeg služe za glavno jelo. Naravno, kakav bi to bio menu Hiše Franko da ne njemu nema lokalne soške pastrve. Nahaja se v As boutique hotelu.🌆Ne gre za fine dining restavracijo, niti bistro, je pa prostor za vse. Poleg večerij imajo tudi zajtrke in kosila. Jedi so preproste, a nadgrajene. V ponudbi imajo velik izbor vin(tudi na kozarec🥂), prav posebna pa je bila njihova brezalkoholna hišna kokakola, ki je bila vrhunska. Quem me acompanha por aqui já sabe que amo experiências gastronomicas e principalmente aquelas que priorizam produtos locais e que podemos ver e sentir todo o carinho e dedicação do chefe e sua equipe através de cada prato. E foi realmente o que senti no restaurante Hisa Franko da premiada chefe Ana Ros, na Eslovênia. Apesar da chefe nunca ter estuda gastronomia, ela vem se destacando mundialmente e eu adorei ter ido conhecer o restaurante durante minha breve ida à Eslovênia. A aventura começou com 2hrs de carro do aeroporto até o restaurante e essa experiência já foi super especial e já pude ver algumas paisagens maravilhosas; montanhas nevadas, bosques e lagos de água turquesa. Um agradecimento especial ao Waze, pq sem ele, eu não teria chegado…. E pude viajar mais tranquila 🙏🏻🤣 Para não ter que voltar no mesmo dia, dormi no pequeno hotel do restaurante, que não é nada super luxuoso, mas é charmoso e perfeito para ficar depois do jantar e ainda ter o direito a aproveitar um dos melhores café da manhã no dia seguinte. O menu tinha 16 pratos e sem nenhum problema eles adaptaram para a vesão pescetariana devido à minha restrição. O serviço é super easy going e os garçons explicam cada prato para que você possa entender antes de provar e se surpreender com cada sabor. Os pratos são pequenos e na medida certa para que você não saia nem com fome e nem super cheio. Existe opção de fazer o menu harmonizado com vinhos e drinks, mas eu acabei optando para provar 1 drink e 2 vinhos, todos da região e muito bons. Dica extra: se você vai ao país, e não terá tempo de ir conhecer o restaurante Hisa Franko, a chefe acaba de abrir o Restaurante Jaz em Lubliana, na capital do país. A few highlights of the ‘50 Shades of Life’ menu, which celebrated both @anaros40 and @hisafranko 50th birthdays, but of course keeping some mandatory classics. A special menu for two very special occasions in one of the most iconic restaurants in the world. Now lead by another woman, the kind and lovely @ysimon27 as Head Chef, @hisafranko is still one of the greatest examples of how to persevere in this ruthless sector while being far away from the big cities, and to make the best of our culture and what surrounds us in what feels more like a family than a business. A small country house in the isolated Soča Valley, in the Slovenian mountains near the Italian border, serving mainly plant based creations with intense flavours, combined with some of the best wine producers in the world - like @joskogravner @matejagravner - that happen to be Slovenian and located nearby. JAZ by Ana Roš je savršeno mjesto za vrhunsku domaću tradicionalnu hranu. Od sjajnih tjestenina do legendarnog Frankovog roastbeefa, cevichea od jadranske bijele ribe, telećih okruglice s istarskom šalšom, izvrsnog telećeg šnicla s maminom pireom. Od deserata probali smo jednu neklasičnu verziju tiramisua sa sourdough kruhom iz pekarne Ana ali i top sorbeta od kivija i bergamota na kojeg su djeca navalila kao luda. Ana Roš is a Slovenian chef, a sport and travel enthusiast from a young age, graduated in international and diplomatic science in Italy, polyglot and much more. She is one of the 8 female chefs in the world whose restaurant has been awarded 3 Michelin stars. She has also been awarded the World’s Best Female Chef in 2017 by The World’s 50 Best Restaurants. The famous Corn Beignet by Chef @anaros40 which she says is “better than any comfort food that you can imagine” The one she served at the @hisafranko pop-up @tajmahalhotelnewdelhi was made out of corn flour and filled with cottage cheese, salad of kohlrabi & caviar and topped with roasted polenta. One of the world’s most celebrated chefs @anaros40, whose restaurant @hisafranko in Soča Valley, Slovenia has been awarded 3 Michelin Stars and a green star for sustainability, is currently in India for a series of pop-ups organised by @conoshofficial @bahlvaibhav I was fortunate to attend the one at The Chambers @tajmahalhotelnewdelhi, where Chef Ana presented an Indo-Slovenian feast, subtly incorporating elements used in Indian cooking like cardamom, rose, mustard oil, tamarind in her dishes, showcasing her unique style of cooking and brilliant understanding of flavours. The star dish for me was the potato cooked in summer hay crust.
