Attended a very nice food photography workshop given by Joleen Cronin at L’Atitude 51 over the weekend during Cork on a Fork Fest. A NEW PERSPECTIVE ON CORK FOOD… For @corkonaforkfest I gathered together an inspiring panel of speakers from different sectors of the food industry in Cork to speak on their experiences of finding their niche and growing successful businesses and careers in a city that is their adopted home. Like me, all of my panellists came to Cork from another place, settled here, and found a grá for the city’s food culture that was open, supportive and thriving. Community, passion, people, cheeky, connection were some of the words used by the panel to express their New Cork Perspective. THIS is Cork Food, and that makes the here and now and future of the food in our city and county very exciting indeed! My heartfelt thanks to Eman Alkarajeh and Izz from @cafeizz, Kate Dempsey from @kinsalemeadco, @chefmeeran of @rarekinsale and Virginia O’Gara of @mygoodnessfood for being wonderfully engaging and impassioned speakers! And of course - the food! I said “bring a small sample” but foodies being foodies enough food was brought to feed a small army! From Izz Cafe came Arabic coffee, stuffed dates, date cakes and different flavoured hummus’s. Meeran brought little spiced chocolate tarts that were an absolute taste of heaven and as light as the angels. Kate brought bottles of their delicious meads - redolent with summer berries. And Virginia brought classic rainwater kefirs, their mind boggling veg-based “Notcho Cheeze” and funky kimchi. The kind of feast that says much about where the food of Cork is going. A WASTED DINNER… Who can take a box of unwanted food and turn it into magic? @spacey_chef can! The final event of @corkonaforkfest saw us head to the ever wonderful @latitudefiftyone for a special event celebrating the launch of Conor’s zero food waste primer, Wasted, part of the @blastabooks family of small books with big voices! Creating a plant-based menu on the fly from would-be waste food was the challenge, and what came forth from the kitchen proved the point that, with a little creativity, anything can be turned into something crazy delicious! @corkrooftopfarm donated tenderstem broccoli that had gone to flower, some excess cauliflowers and courgettes that had grown to marrows. A local hotel donated some left over mash potato that became perfect gnocchi, left over milk was turned into ricotta, the whey left over from the ricotta turned into a caramel sauce and also used to create a loaf of bread. Butter made from beans and beans in chocolate cake. Cauliflower leaves and tenderstem turned into awesome bhaji’s and served with banana skin ketchup. A limited palate of ingredients turned into a six course tasting menu where every dish was as individual and distinct from the next. Bravo chef! Beverly and her team poured a wonderful selection of natural wines (the dessert Malbec was outstanding!), and for no-drinkers, a treat of @terra_ignis cordials who themselves incorporate a low/no waste policy to their creative brews and bottles. All this and in amazing company! There were many familiar friendly faces from across the Cork food community supporting this dinner, and the craic was mighty at our social 6-top where I was delighted to find Mr Flavour and I seated with @orla_mcandrew_food @lilly_higgins_ & @meraki.ie … much laughter and sharing of stories was the cherry on a fab Sunday evening in the Rebel City! CORK’S BLACK GOLD… a reflection 💖 As Storm Betty raged overhead, an intrepid group of curious food adventurers found sanctuary and solace inside @farmgatecafe at @theenglishmarketcork for my first @corkonaforkfest event all about the culinary history of Black Pudding in Cork. There’s no denying that any talk concerning the blood puddings of Cork is a tightly visceral experience for all. As gently as possible, I approached the themes of survivalism and death, war and famine, blood and guts. But we also celebrated community, the important role of women in pudding making, traditional practices long since lost, and discovered the diversity of puddings of county Cork. To showcase all of that, and, some could say, in spite of it, the event concluded with a tasting of 5 different Cork Black Puddings: @donaghreilly rare food of Cork - the Drisheen, @mjoneillbutchers beef fresh blood pudding, @clonakilty_blackpudding dried beef blood pudding, @rosscarbery_recipes dried pork blood gluten free pudding, and @mybutchertim fresh pork blood Coronation Pudding devised for QEII’s famed visit to Cork in 2011. Our erstwhile support on the night came from Steve Guiney, co-founder of the fabulous @original7.ie brewery who supplied bottles of their rich, malty Wonderland Red Ale - a @blasnaheireann 2023 finalist, and a perfect pairing for our pudding smorgasbord. Fun Cork day out with @hettscreativekitchen for a look at the Cork On A Fork Festival - it’s on all weekend and there’s load to do, including a demo from @rachelallencooks. We saw the fabulous @orla_mcandrew_food demonstrating how to make the most delicious cheese and ham croquettes. A wander round then a wonderful lunch of tabbouleh and falafel at @umifalafel, a great recommendation from the lovely people @iagocork. Then home to @ballymaloecookeryschool to cook dinner together. I pan fried some salmon, served with a vibrant herb salsa, some baby potatoes and a salad, dressed with some flowers, the Ballymaloe way.
