So for those of you that like a few whisky facts and figures: 📝The first mash was done on the 6th December 2017 and was done by Gary Haggart, Distillery Manager. 📝 The first fermentation in washback no.1 also was on the 6th and was set at 15:05 with a temp of 19.6c, with a horrendous OG ( Original Gravity ) 📝 The first run of the wash still ( Dodo ) was on the 12th December 2017 and was charged with 10,500 ltr of wash by Gavin and was run by Gavin and David 📝 The first run of the spirit stills ( Poppy and Gee ) was on the 13th December 2017, both stills charged with 3590ltr of low wines and feints and the first spirit ran into the spirit safe at 15:56 for Poppy and 16:00 for Gee, Drew took the first cut on Poppy at 16:30 and Gary took the 2nd cut on Gee at 14:31. 📝 The first cask to be filled was on the 20th Dec 2017. We filled just 20 casks, and these were x18 Old Forester Bourbons and x2 Monbazillac’s. We know the monks here at Lindores were kept busy making the first recorded scotch whisky, but they didn't just get to sit around drinking the lovely Aqua Vitae. In fact, their life here could be a harsh one and on the 13th of September 1290, Pope Nicholas IV granted the monks permission to wear skull caps and animal furs as many had previously died from the cold! ⛪️ Lindores History Fact of the Week. We know the monks here at Lindores were kept busy making the first recorded scotch whisky, but they didn't just get to sit around drinking the lovely Aqua Vitae. In fact, their life here could be a harsh one and on the 13th of September 1290, Pope Nicholas IV granted the monks permission to wear skull caps and animal furs as many had previously died from the cold! For instance, we know that on 15th August 1507 the Abbot sent his man with ‘plowmyss’ or plums, for King James IV who was staying, as he often did, at nearby @falkland_palace. 🍐 The orchards at Lindores were famous and at their height, covered over 30 acres and were the largest in Scotland, growing apples, pears and plums. 💗 This is genuinely one of our favourite Aqua Vitae cocktails. The Last Word originated in the prohibition era, and for our twist we used Aqua Vitae to replace gin, complimenting the herbaceous green chartreuse. Ingredients – Aqua Vitae, Strawberry infused Green Chartreuse, Maraschino Liqueur, Lime Juice. Method – To a cocktail shaker add 25ml Aqua Vitae, 20ml Strawberry infused Green Chartreuse, 20ml Maraschino Liqueur and 20ml of Lime Juice.
