During the day, you're likely to see even clearer views of the ocean, mountains, and cityscape. Their bone-in ribeye is quite good, and the foie gras is also excellent. The fries are particularly tasty, while other dishes like risotto and beef are fairly standard. We opened a relatively rare wine—the 2005 Chateau Trotanoy, which is next door to Pétrus. It paired beautifully with the food. Un Foie Gras cuit à la vapeur et dégusté-minute, ça vous tente ? 😋 𝗖𝘂𝗶𝘀𝘀𝗼𝗻 𝗱𝘂 𝗙𝗼𝗶𝗲 𝗚𝗿𝗮𝘀 à 𝗹𝗮 𝘃𝗮𝗽𝗲𝘂𝗿 Choisir un Foie Gras cru frais entier, éveiné. Pour cette recette, il vous faut du sel, du poivre et de l'alcool au choix (vin blanc de votre région, du cognac ou vin doux naturel). Poivrer, saler le Foie Gras de tous côtés puis l'arroser légèrement d'alcool choisi. Bien enrober le Foie Gras dans un film étirable qui résiste aux hautes températures et le laisser reposer une nuit au frais. Il est indispensable de bien enserrer le Foie Gras dans le film alimentaire sans quoi la texture risque d'être trop molle et peu présentable. Le secret est de former une véritable saucisse à la fois pleine et régulière. Après l'avoir laissé 2 heures à température ambiante, le déposer dans le panier d'un cuit-vapeur. Faire cuire le Foie Gras 8 - 10 minutes pour 500 g.
