Sausage and pea risotto. Tonight while my dinner was cooking, I was able to attend a telehealth appointment. Feed the dog and wash my daughter’s hair. I adore waffles and I have great sweet memories of all the ones I ate while living in Brussels many years ago. For today’s challenge I made Vlaamse Wafel now also known as Brussels Waffles. As Regula describes them, the Vlaamse Wafel is made from a light yeast batter, made even lighter thanks to the addition of whipped egg whites and a dash of baking powder. When cooked properly, the exterior should be crisp and the interior soft. Mine were exactly like that so, I guess I cooked them properly 😉. This brings me so much joy! Making back to school lunches and snacks. Today I got to work along side my best friend in the kitchen and together with two thermies we whipped up a storm. Once upon a time we would have bought biscuits, and cheese and bacon rolls, and pre packet snacks like tiny teddies. I’ve not done a calculation but I can tell you I am saving my family hundreds of dollars a year by making more from scratch at home. The banana bread itself would cost me $5 a slice out at a cafe. Today I’ve made a whole loaf for less than that with bananas that no body would eat because they were over ripe. The best thing is today I did not have to buy anything to bake all of this is using things from my fridge and pantry, including left over Christmas ham that I had previously frozen.
