We had our usual family meal, calamari fritti and caprese salad to start, a few baskets of their amazing garlic bread, (as you can see the basket is just about empty) and the best dish in the house - Spaghetti Positano or as Roberto used to call it, Cosa Nostra. Canpania ๐ I found out today that lasagna originates from Naples during the Middle Ages. My Nonna's lasagna was the absolute best. She had about 50 layers of deliciousness, her homemade pasta was super thin, and somehow, her lasagna was light. We don't use eggs or beschamel sauce. We keep it simple, meat sauce and cheese - both mozzarella and parmigiano or Romano. ๐ฎ๐น Tonight, I made lasagna on my own for the first time. Of course, I cut some corners, bought oven ready pasta, and shredded mozzarella. My mother made the sugo, and I rolled about 50 plus little meatballs. Our judgement was a little off on the sauce, the pasta wasn't anywhere close to my Nonna's, but all in all, the taste was good. I now know what to do better next time. ๐ How do you like your lasagna?
