HONEY, PEACHES & THYME… Hooray for honey 🍯 season! After all the early blossoms this year (remember the bamboozlement of hawthorn and the sunny blaze of gorse/furze), I’m expecting good things from this natural elixir this year! One of our neighbouring farmers has a couple of hives on some scrub land that’s surrounded by sally/willow, gorse and hawthorn. He dropped around a jar of this years early batch, freshly jarred and looking inviting! I had some white donut peaches that needed using and had an idea to poach them in a honey syrup with thyme from the garden. I’ve never had it before but I often poach fruit with herbs (pears and rosemary is a personal favourite!) The result was delicious! I poached the peaches in their furry jackets that slipped off when they were perfectly poached. The honey is floral almost with a hint of spice; definitely hints of the gorse there! The thyme gave a background herbaceous note that wasn’t overpowering but really brought out the perfume of the peaches. I reduced the poaching liquor down to a syrup and drizzled that over with a generous heap of pillowy whipped cream. A final flourish of thyme leaves to finish. Peaches, pears & friendship. 🍑👬🍐 Started the day with a load of peaches, that kind of called me, as I went to make my morning coffee... My friend Helenas parents have a peach tree, yes you read it right, a peaches tree here in the Viking North. I got a load of them and they were ready today! So I forgot all about my coffee and started sweet pickling instead. 😊 My thoughts went to all the daughters of the South, as my fingers were burning as I took the skinny off the boiling peaches, and I could imagine them doing the same, and the mother say: 'don't complaint, we have been doing this always!'. Yes I have too much imagination and too much compassion. 😄 Used the rest of the sugar pickling, to poach some pears, as I hate waste. 🍐 My friend Flemming called and told me he had a present for me, so I went by his place. And bought lovely chocolates, youghurt and Belgium waffles, to spoil him back, with the peaches. 🥰 We shared a lovely time and I got a beautiful old hand cranked drill press, that I will restore. 🙏 I feel life is smiling at me these days. 🧡 Recipe:. 1 kg peaches Sweer pickling: 1 ltr. water 500 g sugar 1 juice of a citron 10 cardamom pod 2 staranis Boil for ten minutes. Raspberries with half a poached peach submerged in jello/jelly made from the poaching syrup: Poach around 4 whole peaches in a mixture of about 2 cups of water, 3-4 tbsp sugar, a stick of cinnamon, and a tsp of vanilla extract over medium low heat covered for 15 minutes. Leave the peaches in the liquid overnight (refrigerate when cool enough). Next day, remove the peaches and store them separately. To the poaching liquid, add 1 tsp of agar powder and some sugar (to taste). Heat the mixture over medium heat until the agar powder dissolves and the mixture has reached a steady simmer. In a few small glasses or moulds, place two raspberries and half a poached peach. Strain the jelly mixture over the fruit. Cumin Poached Peaches In my experience peaches tend to be rock hard & tasteless one minute then squishy in the blink of an eye. But as I discovered this weekend they can be quickly poached in a pressure cooker. Cumin is a great flavour with this fruit. Apicius provides a recipe for peaches in a cumin sauce (Sally Grainger has a modern version of this recipe in Cooking Apicius from @prospectbooks ). This is my take on that flavour combo: 4 firm peaches 1 tbsp cumin seeds 300g water 150g sugar 5cm strip lemon peel Juice of half a small lemon Using a sharp knife, make a small cross in the top & bottom of each peach. Place the peaches in a bowl then pour over boiling water. Leave for a minute or two then peel off the skin. (@catherinephipps says you can do this in the pressure cooker). Place a small frying pan over a medium to high heat then dry roast the cumin seeds until fragrant. Add the water, sugar & lemon peel then simmer for 15 minutes. Strain the cumin syrup into a pressure cooker. Add the skinned peaches. Bring up to high pressure then cook for 2 minutes. Allow the pressure to drop naturally. Use a slotted spoon to remove the peaches. Bring the syrup up to boiling point then reduce by half (do not replace the lid). Add the lemon juice to the reduced syrup then pour the over the peaches. Cover & leave to marinate ideally overnight or at least for a few hours, turning every now & then. Roasted Chicken with Clementines & Arak / Poached Pears in White Wine & Cardamom Only with chicken could you get away with this dish. What looks to be an intense turns out much more mellow than you'd expect but in the most flavoursome way. The clementines are delightfully aromatic and the fennel takes on a whole new flavour profile. A comforting dish indeed. Now these pears might just be my favourite dessert I've ever made - the note in the book is accurate, my photo simply didn't do it justice. The first taste of saffron and cardamom almost overwhelms your sense of flavour but you cannot help but go back for more. They're irresistible. Brown Butter Bica de Laza Almond, Charred Cinnamon & Honey Evaporated Milk Crème Fraîche Poached Peaches in Chamomile & Green Almond Syrup Fruit Saba When I went back to anti there was so many fruit preserves from past desserts. I didn't want to throw anything away, so I just made a "masterjam" and added a blend of wine vinegars I had been nurturing at home. The cake is basically euro angel food cake with extra steps, and the cake cookie is the cake batter mixed with the almonds (peeled n dehydrated) from the milk soak spread thinly over a silpat and topped with fleur de sel and sugar to replicate the necessary bica de laza crackly top. The milk soak is milk evaporated down with some almonds and a few charred cinn sticks, then sweetened with honey. The poaching liquid for the peaches are a mix of chamomile and green almond syrup. Also leftovers from older dishes. In my head I wanted to make a really nice tres leches, but ended up with something I would never call a tres leches, but moreso a nice european cousin. The cake and soak tastes like a mix of cinnamon toast crunch x cheerio milk, the peaches tossed in the masterjam with some salt, lemon n evoo reads savory and some slightly salted (yogurt) creme fraîche to balance everything out makes it for a nice all around sweet, acidic, and savory play. Dave said it best, this is angel's dessert he's been working on for the past 6 months. Subconsciously. Thank you to everyone (past and present) at Lucia, especially Dave.
