Sunday night wine down.... Tonight's choice ~ 2022 Pago Del Vicario Blanco De Tempranillo. 100% Tempranillo free run juice from Castilla La-Mancha, Spain. Aromas of peach, apricot, pear, lime, pineapple and saline. On the palate is apple, pear, peach, apricot, pineapple, herbs, minerality with a hint of mint and honey. Refreshingly light, crisp with a long finish. It's not often I run across a white Tempranillo. This was such a fun find. Perfect way to close out the weekend. Raveneau Montee de Tonnerre 1999 and 2018 1999 nice creamy nose with a soft salinity. Nutty minerality and honey on the palate. Very rich with nice structure and gently aged fruit 2018 had so much citrus, lemon curd, white flowers, peach, crème brûlée, and broken stones on the nose. Plenty of lemon peel and pith with citrus and yellow fruit on the palate. Started plush but this bottle really got going with air and time. special #Sunday #bake for #PalmSunday #lunch (see next photo set for the main dish it accompanied): an extremely obscure #Lenten version of #bougatsa called #Peloponnese #bread in English in “Real #Greek Food” #cookbook I used and “bougatsa peloponnisou” (#μπουγάτσα #Πελοποννήσου)—so this is not a typical cream bougatsa #pastry (μπουγάτσα κρέμα) … you will find no English-language reference to this, um, sort of like #oliveoil #shortbread using a name descended from the Roman version on #focaccia from a couple of millennia back, redolent of #cinnamon, clove, and #whitewine; so perhaps I’ll write one up … apparently from #Achaea, the northwestern) part of the #Peloponnese penninsula (southern #Greece) … recipes I finally managed to find in Greek indicate it should be flatter than I made it and baked in a pan … the recipe by @theodore_kyriakou was kind of vague on details like “what kind of shape should this loaf be?” compared to the many other dishes from his cookbook that I’ve made over the years (which were all bang on) and didn’t provide any historical background on the bread … one side of my family is from far southern Greece and none of us have ever heard of this or eaten it anywhere in the #Peloponnesus, including in Achaea … so I think the recommended 425F was too hot since the bottom of the bread got nearly black in 50 minutes and I had to tent foil over it for the 14 further minutes it took to properly bake the round loaf I made … tasty anyway … #nom … #peace

This time, we’re talking all things OAK... 💬 After seeing a recent 5 star rating for our gorgeous te Pā Sauvignon Blanc Oke on @vivino, we wanted to share some inside info on why we ferment & age this special Sauv in French oak barrels, and explain the impact on the wine 🥂 Aging white wine in oak barrels can have several impacts on its flavour, aroma, and texture. We actually use a unique style of barrel for our Oke aging, which is a 320 litre ‘Cigar barrel’ which is longer and narrower than the typical 225 litre barrel most often used when aging white (and red) wines. Here are some of the key effects: ⭐️ Aroma: Oak aging can contribute to the wine’s aroma, adding notes of oak, spice, and sometimes a hint of coconut or dill, depending on the type of oak used. ⭐️ Flavour: Oak barrels can impart flavours such as vanilla, baking spices, caramel, and sometimes a subtle smokiness to the wine. These flavours add complexity and depth to the wine, which we absolutely love. ⭐️ Texture: This is a big one! Oak aging can also affect the texture of the wine, making it feel smoother & rounder on the palate. This is due to the interaction between the wine, the oak, and the lees (which are the expired yeast cells - more on that another time!) which soften the wine’s acidity & tannins. Overall, oak aging really enhances the complexity & character of white wine, adding delicious layers of flavour & aroma that can make the wine more interesting & enjoyable.
