La sauce soja, SHOYU, dans tous ses états. Le SHOYU est une sauce préparée en fermentant du koji de soja et blé dans une saumure. Le mélange koji + saumure s’appelle MOROMI. C’est en filtrant ce MOROMI que l’on sépare le jus (la sauce soja) et une partie plus ou moins solide — les lies. Dans l’industrie, les lies sont souvent destinées au betail. Chez ¿adónde? lab, nous les valorisons autrement. Notre préférence est la macération de pickles : une bombe de saveurs complexes et surprenantes. Ici le daikon (gros radis blanc) prend l’apparence d’un filet de thon. La texture est très croquante et le goût iodé se rapproche de la poutargue. My #shoyumoromi drink. What do you do with the #moromi after the extraction of #shoyu? I thought of an idea…. compressed them into cubes and store in the fridge which I could either make into a drink or make a broth out of it. On its own (depending the quality of water one uses, water without minerals and water with minerals makes a great difference) which I used a restructured water, the taste is somewhat between #veggiemite and mild coffee. 長野産の全長70cmの長芋をいただきました! 漬け5種;ぬか漬け・塩麴漬け・酒粕醤漬け・醤油諸味漬け・味噌味醂漬けにしてみました。どれもいけますが、特にぬか漬けと味噌味醂漬けがいい感じかな? 長芋の生産量1位は北海道、2位は青森、3位が長野で、91%占めてるとのこと。なんで芋なのに生で食べられるかというと、消化酵素であるジアスターゼを含んでいてでんぷんの一部が分解されるかららしいです。漬けてもすりおろしても和えても煮ても焼いても美味しいですよね。70cmもあっという間になくなりそうです~ We got Japanese yam which length is 70 cm from NAGANO. I made 5 kinds of pickled yam ; with rice bran, SHIO KOJI, SAKE Lee & HISHIO, SHOYU MOROMI, and MISO MIRIN. All of them are pretty good, while I especially like pickled one with rice bran and MISO MIRIN. Japanese yam is harvested in No1; HOKKAIDO, NO2; AOMORI; NO3; NAGANO; which accounts for 91% of total production. The reason why it can be eaten raw is it contains digestive enzyme called Diastase which breaks down some portions of starches. It is delicious by pickling, grating, dressing, simmering, or baking. 伝説の醤油麹菌で仕込む「再仕込み醤油」講座を開催させていただきました。ご参加いただいた皆様、ありがとうございました! 「甘露醤油」「さしみ醤油」とも呼ばれる「再仕込み醤油」。お醤油全体の1%くらいでなかなか見つけることも難しいのですが、お醤油をお醤油で仕込み旨味強く、長期間かかるので蔵の個性も楽しめるお醤油です。 今回は、コロナ禍で残念ながら閉店してしまった是友先生の発酵料理店「にっぽんのひとさら」の名物であった生揚げ醤油の諸味を使って仕込みました。そう、「にっぽんのひとさら」から受け継がれた菌をご自宅でまた育んで命を吹き込んで楽しんでいただけるのです!これぞ発酵の醍醐味。 さらーーに、今回は魚料理専門家でもある是友先生によるお醤油と刺身の相性講座も!試食は6種類の醤油(諸味含む)と4種のお刺身。どれにはどれが合うのか??ご参加の皆様それぞれからのご意見がこれまたとっても面白かったです。 今年はたくさんの講座で講師をさせていただき本当に勉強になりましたし楽しかったです。来年はさらに色々チャレンジできますよう! I did an instructor of "SAISHIKOMI SHOYU" workshop with legend SHOYU KOJI. Thank you for your participation. "SAISHIKOMI SHOYU" is also called "KANRO SHOYU" or "SASHIMI SHOYU" which accounts for about 1% of total SHOYU production, so difficult to find at stores. As it is brewed with SHOYU instead of brine, UMAMI is strong. Also as it takes longer time for brewing, various unique characteristics of each brewery can be enjoyed. This time we used specialty MOROMI from NIPPON NO HITOSARA which Ms. KORETOMO used to run. This means we can bring microorganisms from NIPPON NO HITOSARA to our house, grow them, and enjoy! It is really a real charm of fermentation. Furthermore the congeniality workshop of SASHIMI and SHOYU by Ms KORETOMO; fish dishes' expert. Taste 4 kinds of SASHIMI with 6 kinds of SHOYU. Which goes well with which? It was really interesting to observe participants' preference. This year, I learned a lot via being an instructor of various workshop. So much fun! After about a year of fermentation, the moromi is pressed and drained to yield soy sauce. The moromi itself is a tasty seasoning too, but almost never available commercially.

This is the most common task around the brewery. Stirring the moromi. The Shoyu moromi in the early months is very active releasing carbon dioxide. These gases builds up and cause the top of the Moromi to puff up. We de-gas the barrel and introduce oxygen to the ferment. Similar to a punch down for a wine maker. 這次我將厚油豆腐煎至香脆、以味醂和醬油醪作調味。 ・ 先用充足的橄欖油將厚油豆腐的表面煎至金黄色、 ・ 然後加入味醂増加甜味。 ・ 這樣就煎完了、上碟後才添上醬油醪。 ・ 最後、加上一點點切好的秋葵作裝飾、送飯一流呢! ・ ============================= ・ Give pressed tofu a good roast on a pan with olive oil until the tofu becomes crispy. ・ Add mirin rice wine to it to make sweeter. That’s all up until this point. ・ After putting tofu on a plate, add shoyu moromi onto it. ・ I sprinkled boiled okura over the moromi. I got rid of all film yeast from my shoyu-moromi. I made sure it is film yeast (no harm) by asking a shoyu brewery from which I bought shoyu koji for this batch.
