La sauce soja, SHOYU, dans tous ses états. Le SHOYU est une sauce préparée en fermentant du koji de soja et blé dans une saumure. Le mélange koji + saumure s’appelle MOROMI. C’est en filtrant ce MOROMI que l’on sépare le jus (la sauce soja) et une partie plus ou moins solide — les lies. Dans l’industrie, les lies sont souvent destinées au betail. Chez ¿adónde? lab, nous les valorisons autrement. Notre préférence est la macération de pickles : une bombe de saveurs complexes et surprenantes. Ici le daikon (gros radis blanc) prend l’apparence d’un filet de thon. La texture est très croquante et le goût iodé se rapproche de la poutargue. FR/ENG Non, ce n’est pas du thon 😉, c’est un pickle de daikon (gros radis asiatique). MOROMIZUKE - pickles de daikon et carottes, marinés dans du moromi de shoyu (ici la pâte restante après filtration du shoyu). Processus simple: 1. Saler à 10% et presser 48h 2. Essuyer et mariner dans le moromi - ici environ 3 semaines Résultat bluffant: Des pickles ultra crunchy, dorés, très parfumés. Un goût corsé qui rappelle le poisson, et la sauce soja évidemment, très umami. Et tellement beau… 🇬🇧You’d think it was tuna fish. It’s actually carrots and daikon pickled (giant, asian radish) in our shoyu moromi a.k.a. MOROMIZUKE. Moromi is the mash made up by the wheat grains and soy beans in salt brine when making shoyu/soy sauce. We dehydrated some of it to make moromi salt after pressing and filtrating the juice. We also set some aside to make this delicious #moromizuke Easy: 1. Add 10% of salt to veggie and put weight on the daikon for 48 hours. 2. Wipe clean and marinate in the moromi — in our case for three weeks. And the magic is: Crunchy, perfumed, golden pickles. It does make us think of fresh fish and, needless to say, soy sauce! I love keeping extra preserves in our kitchen cupboard, they add interest to our meals. I also find the pickling liquid flavoursome. I use them only if I know what's inside and that means homemade. Preserves containing preservatives and chemicals are a bit silly. Such simple methods and old fashion techniques work absolutely perfectly These wild garlic seed pods in shoyu are so delicious, add to sauces or eat on the side. Simple home made equals no waste.
