We would love to see it! ❤️ ⬇️ FORK & FORE PORK GREEN CHILI ⬇️ 🔥INGREDIENTS: • 1 pound Hatch Green Chilies • 1 whole Onion, diced • 2 lbs Tomatillos • 1/2 pound Ground pork • 1 pound Pork Tenderloin, diced • 1-2 quarts Chicken Broth • A dash of Lime juice • 2 diced Tomatoes • Fresh Cilantro • Ground Cumin • Salt • Pepper • Garlic • Onion powder • Heavy Cream, just enough (1-2 tablespoons 🔥INSTRUCTIONS: 1. Begin by roasting the green chilies and tomatillos until they’re beautifully charred. Then, dice the chilies, crush or process the tomatillos, and set them aside. 2. In a pot, render the ground pork and sauté the diced onion with the pork until it’s golden brown. Next, add the diced pork tenderloin to the hot grease and let it brown as well. Don’t forget to drain the excess grease. 3. Season the pork mixture with a generous sprinkle of ground cumin, salt, pepper, and garlic. Pour in enough chicken broth to create a simmering broth for the pork. 4. Add the roasted chilies + processed tomatillos along with all juices. Squeeze a dash of lime juice. Add the diced tomatoes, making sure to exclude the seeds and core. 5. Let the chili simmer for a little while, allowing all the flavors to meld together. 6. For that extra touch of creaminess, thicken the chili with a splash of heavy cream, stirring gently until it’s just right. 7. Finally, garnish with fresh cilantro for a burst of color and flavor. We are so excited to announce the release of our “Los Dos Marias” rosé of pinot noir and grenache. The fruit is from the “Four Brothers Vineyard” in Bennet Valley. The vineyard is set at about 800 feet in elevation on an eastward facing slope. Bennet Valley is renowned for its volcanic basalt rock that is embedded all over the area from the ancient Sonoma Mountain volcano. This wine is dense with notes of plum , black cherry , pressed rose petal and beautiful spiced strawberry characteristics. Come on by the shop and enjoy ! This pork and hominy soup is a traditional “low-and-slow” braising recipe. It takes about 3 ½ hours to cook from start to finish because pork shoulder is a fatty cut of meat that takes a while to break down. But the pork fat is what gives this soup its richness. In our 11 days in the road through Texas, New Mexico, and Arizona, Juanito’s came away as my top favorite of the trip. It’s the end of an era in Tucson. After over three decades serving the communities on the city’s northwest side, @clairescafecatalina is permanently closing its doors today. My friends Claire and Steve Johnson are retiring after a lifetime in the restaurant and hospitality business. Claire’s is a place where an eclectic clientele enjoyed delicious, homemade food while perusing equally varied and unique artwork. I’ve been honored to have my photography displayed at the cafe for many years. A metal print of the photo here, from Bear Canyon in Tucson, was literally sold from right over my head at nearly the last minute yesterday as I enjoyed my final breakfast with Claire and her terrific staff.
