When I first went Paleo 9 years ago, Mexican food was what I missed most, no ๐ฏ๐ฎ or enchiladas ๐ซ Paleo Chili Verde to the rescue!!!!! This meal takes a little work but so worth it ๐ Recipe courtesy of Everyday Paleo 3.5 pounds boneless pork shoulder (trim off fat) 2 Tbsp coconut oil 1 yellow onion ๐ง chopped 4-6 garlic ๐ง cloves minced 1 Tbsp cumin 1/2 tsp paprika 1/2 tsp black pepper 1 cup chicken broth 2 pounds tomatillos (with husks off) 2 jalapeรฑos (seeded for less spice) 1 bunch cilantro Juice of 1 lime Salt to taste Cut pork time 1/2 inch cubes Heat oil in large pot, add pork when oil hot, brown for 4-5 minutes. Then remove with slotted spoon & set aside. Add onions & garlic & sautรฉ for 7-10 minutes. Then add cumin, paprika & pepper Add chicken broth & scrape all the goodness off the bottom of pot. Return pork & bring to boil. Turn heat down & simmer. Wash & dry tomatillos. Heat a cask iron skillet & char tomatillos & jalapeรฑos about 10-15 minutes. Add tomatillos, jalapeรฑos, cilantro, & lime juice to a blender & blend until smooth. Add tomatillo mixture to simmering pork & season with salt. Simmer on low for 2-2.5 hours until pork is fork tender & liquid has reduced. Taste & season more if needed. You know what I love about this time of year when itโs cold outside???? Cooking hearty meals like a stew, chili or loaded soup!!! The smells of a simmering stew is just so warm & inviting ๐๐๐ I also love making big batches & freezing them for a quick weeknight meal. This hearty Paleo meat stew is AMAZINGLY GOOD. Give it a whirl this weekend ๐ 3 lbs stew meat cut into small pieces (I used elk) 2 Tbsp avocado oil or any other fat 2 yellow onions ๐ง chopped 2 large carrots ๐ฅ chopped 8 stalks celery chopped 8 garlic ๐ง cloves chopped 2 large parsnips or potatoโs ๐ฅ 2 cups beef broth 2 cups red wine ๐ท 1/2 can tomato paste 1 bay leaf ๐ 2 Tbsp each chopped fresh rosemary & thyme Salt & pepper to season meat Preheat oven to 300F. Heat 2 Tbsp of oil in a large Dutch oven pot, add half the meat & brown on all sides. Remove from pot & brown the other half of meat & remove from pot. Add veggies to pot & cook for 10 minutes. Add meat back & add the rest of the ingredients. Bring to a simmer, then cover & place pot in oven. So tis the season of cooking & Paleomg has done it again with this AMAZING Mexican meatloaf recipe!!! I paired it with cilantro lime cauliflower rice. Itโs not very pretty ๐ but itโs comfort food at its finest ๐ 1 pd ground meat (I used Elk) 1 pd Chorizo 1 red bell pepper, chopped 1/2 onion ๐ง chopped A few garlic ๐ง cloves minced 7 oz can of diced green chiles 1/2 Tbsp each of garlic powder, onion powder, & cumin 1 tsp chili powder 1/2 tsp of salt & black pepper 1 cup almond flour 1 egg ๐ฅ 1/4 cup chopped fresh cilantro 1 cup salsa Preheat oven 350. Mix all ingredients except salsa in a large bowl. Press mixture firmly in a loaf pan then add cup of salsa on top. Dry Rub SlowCooked Ribs Recipe During the summer weekends the last thing that I want to do after a long day on the boat & in the sun is make dinner... am I right ๐๐ผโโ๏ธ Slow cooked ribs to the rescue, nothing says summer like fall off the bone ribs!!!! Add some easy sautรฉed greens & dinner is done!!!! I got this recipe from my friend Janayle in 2014 & we love it. Itโs a dry rub Memphis style rib.... you can use a pre-made rub or the homemade rub below. You can use any left over rub to season your side veggies/greens... Genius!!!! Dry rub mixture 1/4 cup paprika 2 Tbsp ground black pepper 2 Tbsp salt ๐ง 2 Tbsp cumin Dash of cayenne (if you like spicy ๐ฅต) Rub mixture on both sides of 1 rack of pork or beef ribs. Cover & refrigerate overnight. Add 2 cups beef broth or water to the bottom of the crock pot & add your ribs. Cook low for 8 hours. The first was a pesto, prosciutto, nut cheese & arugula pizza & the second was mixed with TJโs cauliflower gnocchi with chopped chard added for an extra dose of leafy greens ๐ฅฌ Recipe courtesy of Against all Grain. 1/3 cup toasted pine nuts 1.5 cups packed basil ๐ฟ leaves 3 garlic cloves Juice from 1/2 lemon ๐ 1/2 tsp salt ๐ง 1/3 cup EVOO Place all ingredients in a food processor except EVOO. Process the ingredients while drizzling in the EVOO. Recipe courtesy of PaleOMG.com 1Tbsp avocado oil 4-6 garlic cloves chopped 6 cups raw spinach 2 avocados ๐ฅ Juice of 1 lemon ๐ 1/2 cup basil ๐ฟ 1/2 Tbsp of each parsley, thyme, & garlic powder Salt & pepper to taste Heat oil in a pan & add garlic & spinach, sautรฉ until spinach is wilted. Then transfer to a food processor along with all the other ingredients. Process till smooth & creamy. We are on week two of the tale of four pesto recipes ๐๐ผ Last week was a mixture of parsley & pistachios & this week is cilantro, almonds & roasted red bell pepper. I like top wild caught halibut ๐ with this unconventional pesto. I also sautรฉed up some veggies with the pesto too. Yum!!!!! Recipe courtesy of paleOMG.com 1/2 cup raw almonds 1 bunch cilantro, stems removed 7 oz jar of roasted red bell peppers, drained 8-12 garlic cloves 2 Tbsp olive oil 1/2 tsp of salt, pepper & onion powder Add garlic & oil in a small baking dish & roast at 425 degrees for 6-8 minutes. Meanwhile add all the other ingredients to a food processor & pulse a few times. When garlic is done roasting add to mixture including the oil too. This is a Spanish dish that is sweet & savory & screams comfort food. Nothing says easy meals like a slow cooker meal. You can add spinach, kale or arugula at the end for an extra dose of greens ๐ Give it a try ๐๐ผโโ๏ธ 2 pounds ground meat (I used elk) 2 green bell peppers chopped 2 bunches green onions chopped 1 onion chopped 4-8 cloves of garlic minced 14.5 oz diced tomatoes undrained 8 oz tomato sauce 2/3 cup dried apricots chopped 1/4 cup pimiento stuffed olives sliced 1 Tbsp cumin 1 tsp salt 1/2 tsp dried oregano 1/2 tsp black pepper 1/4 tsp cayenne 1/4 sliced almonds toasted Cauliflower rice Cook meat, bell pepper, onions & garlic in a large skillet until meat is browned. Place all the ingredients (except almonds) in a slow cooker & cook on HIGH for 3-4 hours. Then stir in almonds & mix with ๐ or cauliflower rice to keep it Paleo. As most of you know we just got back from Mexico & unfortunately I came home with a cold ๐คง... I might have had a few too many ๐น& ๐ฎ ๐ฌ Any who, when Iโm feeling a little under the weather I love to make chicken soup & because Iโm missing the warm ๐ฒ๐ฝ weather I decided to make Mexican chicken chowder. Recipe courtesy of Against all Grain. 2 cups peeled & sliced carrots ๐ฅ 3 cups peeled & cubed butternut squash or ๐ 4-5 cloves minced garlic Juice of 1 lime 2 cups tomatillo salsa (homemade or jarred) 6 cups chicken broth 1/2 tsp salt 3 cups cooked chicken shredded 4 handfuls of spinach or 1 bunch chopped kale Garnish with chopped cilantro & avocado ๐ฅ Add the first 7 ingredients in a pot & bring to a boil. Simmer until veggies are tender about 20 minutes. Then if you like, purรฉe veggies with an immersion blender until thick like a chowder. Then add chicken & spinach & simmer until chicken is warm & spinach is wilted. Garnish with cilantro & avocado. We were on a family vacation in Maui a few years ago & I stumbled across this chop chop kale salad. I loved the salad so much that I had it 3 days in a row ๐ฌ I even took a picture of the menu so I could replicate the recipe at home. One thing I love when itโs cold & rainy outside is staying in & cooking!!!!! Nothing says winter like a warm bowl of chili, I have a few chili recipes & this is by far the easiest!!!! I love to freeze this chili & pull it out for an end of the week quick meal ๐๐ผ This was one of the first Paleo recipes I tried in 2012 & itโs a pantry/freezer meal.... you probably have all the ingredients in your pantry & freezer. 2 pounds ground meat (I used elk) 1 yellow onion chopped 6 cloves of garlic minced 14oz can pumpkin purรฉe 28oz can diced tomatoes 15oz tomato sauce 8oz diced green chilies 1 cup chicken or beef broth Spice mix 2Tbsp chili powder 2Tbsp cumin 1Tbsp paprika 2tsp salt 2tsp coriander 2tsp cocoa powder 1tsp garlic powder 1/2 tsp cayenne Heat 1Tbsp oil in pot & add ground meat, let brown for about 8 minutes. Remove meat with slotted spoon & set aside. Add onions & garlic, sautรฉ for 5 minutes. Then add all the ingredients in the pot & simmer for 15 minutes. Healthy eating can be easy and quick it just takes a little bit of planning recipe courtesy of a Real Simple magazine. ๐ฅฆ๐ฅ๐ 1lbs Yukon gold potatoes 1/4 and tossed with 2 tablespoons oil 4 6oz salmon fillets seasoned with salt and pepper 1lbs broccoli chopped and tossed with 1 tablespoon of oil 2 tablespoons lemon juice 1 shallot finally chopped 1/4 cup olive oil 1/2 teaspoon Dijon mustard Preheat oven 450 degrees Place potatoes on a foil rimmed baking sheet and roast for 15 minutes. Meanwhile prepare your salmon and broccoli. Mix around your potatoes and add your salmon and broccoli and roast another 15 minutes. Meanwhile make your vinaigrette with lemon juice, olive oil, shallots, dijon mustard and 1/4 teaspoon salt. Paleo Crunch Recipe ๐๐ผ๐๐ผ๐๐ผ When I decided to try the Paleo lifestyle 7 years ago this was one of the first recipes I got from a my coworker June Sipat & absolutely loved this โgranolaโ hack!!!! Eat with almond milk to act like cereal or top with Greek yogurt & berries or just by itself for a crunch sweet snack!!! 1/2 cup ground flax seeds 1 cup raw pumpkin seeds (pepitas) 1 cup raw sunflower seeds 1.5 cups almond meal 3 cups shredded unsweetened coconut 4 cups raw sliced almonds 1 tsp cinnamon 1 tsp salt 1/2 tsp baking soda 1/2 cup liquified coconut oil 1/2 cup raw local honey ๐ฏ 3 tsp vanilla extract Preheat oven to 250 degrees Combine dry ingredients in large bowl. Combine wet ingredients in a small bowl, then mix with dry ingredients. Spread mixture on 3 baking sheets & bake for 1 hour. Gently stir mixture & bake for another 15-30 minutes depending on how crunchy you want your Paleo crunch. Add few cloves of minced garlic 1 bunch stemmed & chopped up kale 1 red bell pepper diced 1/2 cup toasted almond slices Heat 1 Tbsp oil, add chicken mixture & cook 7 minutes. Add kale & peppers & cook another 5 minutes. Then add toasted almonds & enjoy. Makes 3 servings. ๐ฅPALEO PANCAKE RECIPE๐ฅ ๐๐ผโโ๏ธYou know what I love about cold Sunday mornings.... making pancakes ๐ฅ I have tried a few Paleo recipes & this one by far is the best. The easiest part is you throw all the ingredients in a blender & pour directly onto the griddle. Instead of drowning my pancakes with butter & syrup I put fruit in them, today is apple slices but during the summer we use blueberries ๐ค Courtesy of Against all Grain. 3 eggs ๐ฅ 3/4 cup almond or coconut milk 3 Tbsp maple syrup or honey ๐ฏ 3 Tbsp coconut oil, melted 3 Tbsp coconut flour 1/2 tsp vanilla extract 1 cup raw cashews 3/4 tsp baking soda 1/4 tsp salt ๐ง Blend all ingredients in a blender & pour on a griddle sprayed with coconut oil. One of the key ingredients is anchovies.... do not be afraid they give the sauce an amazing depth of flavor ๐ค To stay Paleo I use spaghetti squash, but you can use pasta noodles or for a gluten free option the cauliflower gnocchi from TJโs is so yummy!!! ๐ฃHomemade cranberry sauce recipe!!! ๐ฆ Thanksgiving is tomorrow & one of my favorite side dishes is cranberry sauce!! I grew up on the canned stuff (no judgement ๐) but one of my coworkers 5 years ago suggested that I make my own because itโs so easy. So I said why not, I love to cook letโs give it a try!! It truly is the most easy side dish you will make & itโs kinda fancy ๐๐ผ๐๐ผ 1 bag fresh cranberries 1 cup orange ๐ juice 1/2 cup honey ๐ฏ 1 tsp ginger 1/2 tsp orange zest Pinch of cinnamon Bring all the ingredients except the cranberries to a boil, then add the cranberries & simmer about 10 minutes until they all burst. ๐HOMEMADE CHICKEN STOCK RECIPE Whenever we feel little under the weather ๐ค homemade chicken stock to the rescue. Nothing beats making a big batch of chicken stock on a cold Sunday afternoonโค๏ธโค๏ธ I have tried a few recipes & by far this one is the best & easiest to make. You can freeze the stock & pull it out for soups, stews or by itself in a mug ๐ฅฃ Mmmmm. Whenever John & I roast a chicken we freeze the carcass & save it for our next batch of stock. Courtesy of Everyday Paleo #breinthekitchen #paleoeats #homemadechickenstock 1 chicken carcass 5 stalks of celery 1 onion 6 cloves of garlic 2 teaspoons of salt & pepper Place all ingredients in a pot (I use my pasta pot with the colander insert for easier clean up). Fill with water enough to cover the ingredients & bring to a boil. Simmer for 4 hours. Discard the cooked down veggies & carcass & enjoy your homemade stock ๐๐ผ๐๐ผ. I made a double batch today!! Fun fact did you know that if the above ingredients are simmered for an hour itโs a broth, 3-4 hours itโs a stock & 8-24 hours itโs a bone broth ๐ค
As some of you know I love healthy eating & have been Paleo for the past 8 years. I wanted to share with you one of my favorite food hacks/healthy swaps. We were in Hawaii ๐บ๐๐ a few years ago & every morning we went to the breakfast buffet & I had to resist all the ๐ฅ๐ฅ๐ฉ & I saw smoked salmon which I absolutely love. But I wanted to avoid the classic bagel & cream cheese paring with the salmon. As I walked all the areas of the buffet I found the Bloody Mary section (yeah you saw that right, this buffet was fancy ๐) & I saw these huge slices of cucumbers ๐ฅ & the idea ๐ก popped into my head.... instead of a bagel use ๐ฅ slices & instead of cream cheese use spinach or arugula. I went to a neighbors BBQ last night & I brought sunny deviled eggs ๐๐ ๐ฅas an appetizer, everyone raves about these so I thought I would share the recipe!!Courtesy of Everyday Paleo 12 hard boiled eggs ๐ฅ 7oz sun-dried tomatoes ๐ 6 tablespoons EVOO (I use the oil from the jar of sun-dried tomatoes) 2-3 garlic cloves 1/2 cup fresh basil ๐ฟ Salt & pepper to taste Cut the eggs in half & place the yolks in the food processor along with the rest of the ingredients.
