Share them with friends or keep them all to yourself—we won't judge! 😋🔥 Honey Chicken Kabobs Ingredients: 1/4 cup vegetable oil 1/3 cup honey 1/3 cup soy sauce 1/4 teaspoon ground black pepper 8 skinless, boneless chicken breast halves - cut into 1 inch cubes 2 cloves garlic, minced 5 small onions, cut into 2 inch pieces 2 red bell peppers, cut into 2 inch pieces skewers Directions: In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions, and peppers in the bowl, and marinate in the refrigerator for at least 2 hours. Preheat the grill for high heat. Drain marinade from the chicken and vegetables, and thread onto skewers. Lightly oil the grill grate. Summer.. a time when appetites wane along with the energy to create and the inclination to stand in a hot kitchen. The challenge, therefore, is to come up with ideas that are quick to cook and light to eat without compromising on flavour or fun. I love a stir fry rice preparation that ticks all the boxes. Left over rice gets used up or they can be pre-prepared. The fan / air conditioning can be on when the mise en place is set up. And the actual cook time is a few minutes. I give you my Aromatic Mushroom & Herb Rice. It’s made with garlic, spring onions, chives, parsley, mushrooms and pizza seasoning for an extra flavour burst. I have it on its own, but it also acts as a fantastic side to a chicken or salmon dish. Dip one rice paper wrapper into the water for about 15-20 seconds until it's just pliable. Lay the wrapper flat on a clean, wet cloth. Arrange a few pieces of lettuce on the lower third of the rice paper, followed by a small handful of vermicelli noodles, if using. Top with a few pieces each of carrot, cucumber, and cabbage. "Great timing," I chided myself. Running a temperature during the summer is weird in more ways than one. Imagine feeling hot, sweaty and fidgety one moment, and getting the chills in the next one. The conflicting desire to dive into a blanket and sample some icecream at the same time gets me nowhere. Also, I realize that my thoughts are scattered all over the place. Much like the flaming-red blossoms of the Gulmohar after a freak thunderstorm in summer. These showy blooms are also Nature's way of reminding me that my birthday is around the corner. That's how it has always been for as long as I can remember. Out of the myriad flowers associated with summer, the Gulmohar or 'Krushna chuda' blooms closest to my day. While it has multilple contemporaries, some of them intoxicatingly fragrant, the fiery red hues are imprinted in my memory. The rest of them bloom under the cover of darkness  while the the Krushna chuda is at its splendid best during the scorching midday. The reddish orange canopy takes on an flaming appearance as the direct rays of the sun light it up. It almost feels that it has aced the pressure test nature has put it through. Perhaps my soul has imbibed some of its fierce quality. And I find myself channeling every once of strength I can muster to prepare a meal that heals my body and soul. I gather a copy of Beyond Dalma and the seasonal vegetables picked from the 'haat' last week, and cook like a possessed soul.
