Ingredients for Jjajangmyeon: 250g Jjajangmyeon noodles 150g pork belly, thinly sliced 1 medium onion, finely chopped 1 medium zucchini, diced 1/2 cup black bean paste 2 tbsp soy sauce 1 tbsp sugar 1 tbsp Sankhya Farms Infused Basil Oil 1 tbsp vegetable oil 2 cloves garlic, minced 1 cup chicken broth 1 tbsp cornstarch mixed with 2 tbsp water Salt and pepper to taste 2 green onions, chopped (for garnish) Side Dish: Stir-fried Korean spinach with sesame seeds Instructions: Cook Jjajangmyeon noodles according to package instructions. Drain and set aside. In a pan, heat vegetable oil and Sankhya Farms Infused Basil Oil over medium heat. Add pork belly and cook until browned. Add onions, garlic, and zucchini. Sauté until vegetables are tender. Stir in black bean paste, soy sauce, sugar, salt, and pepper. Cook for 2 minutes. Pour in chicken broth and bring to a simmer. Stir in the cornstarch mixture to thicken the sauce. Add cooked noodles to the sauce, tossing to coat evenly. Cook for another 2 minutes. Remove from heat and garnish with chopped green onions. Friends, I had the most amazing culinary experience this weekend. Let me tell you the story. I was into a much too long bike ride and decided to grab a bite. As I’m locking up my bike, a man asks me, “are you about to get food?” I guess it was written on my face, and I responded in the affirmative. He said “I just ate there,” pointing to @amici_chicago “and the food is amazing!” After a short exchange, I decided to stick my head in. I immediately met the owner and chef Alfie. He started describing the menu to me, particularly his arancini’s, which are originally an Italian dish, but he has interspersed with culinary items of other cultures. First, the food was amazing. Period. Two, the atmosphere was so down to earth. I was ear hustling Alfie talk to another customer about food, and cooking, and the subtleties of taste and flavor. I had the tikka masala arancini, but definitely want to go back and try the African dishes. As I was leaving, I introduced myself, and inquired how long the business had been there (I had never visited the restaurant there before). Alfie said a few months, and we talked about the kind of business he was trying to build, one where there is friendship and family, not just a monetary transaction. Listening to him reminded me of a line from a movie, where someone described cooking as a gesture of love. Of sustaining others. I can’t wait to go back. I plan on literally trying the whole menu. Who wants to go check this place with me? Let me know and we will get it on the calendar. Small businesses like this is so rare, and I want to see it thrive! Holla. Final note: Turns out the initial man I spoke with was a first time customer just like me. He was a security guard from a business across the street. What is it about food and flavors that evoke fond and powerful memories? Tasting something that you loved and hadn’t had in a long time can be so satisfying. When @snaggletoothchi shut down, it was such a sad time - but also one that birthed some amazing new opportunities for their owners (I’m a HUGE fan of the raw dishes chef @jennifer.skim is doing at Passerotto!) I never thought I would be able to enjoy their pastrami cured salmon again. But, never say never! Thanks to a recent pop up at @passerottochi - I was able to get my hands on not only their pastrami cured salmon, but their gravalox as well! This was my Christmas Breakfast: Toasted Croissant with cream cheese, Snaggletooth’s Pastrami cured salmon with a dollop of caviar. Each bite was as delightful as the last! Afterwards, I pondered about the food scene in our beloved city. There’s been lots of openings & closings. Lots of great dishes & hot new spots as well as a few disappointments. But at the end of the day there are great places just under the radar run by truly passionate people They’re doing amazing, wonderful things. @chicagomag recently published an article about Chicago’s Food Scene losing its Mojo. Yes, there were some valid points, but I felt that overall the author missed the mark about the true backbone of our food scene (the article could have also been applied to any big city) There are countless ethnic-mom & pop-single proprietor owned restaurants that are amazing and staying true to themselves. They may not have any budget for a PR firm or even able to give out a free meal to influencers, but they are still good. They are consistent. They are passionate. And most of all, they deserve recognition and respect. These places make our city continually great and a true foodie town!
