So given the weather isn't playing ball again, am guessing plenty of us will be turning back to some sort of comfort food. As always at the start of each week, I use up weekend leftovers + anything else that needs to be cooked before buying fresh. Leftovers consisted cooked Black Venus Rice, handful puy lentils, pangrattato, half pack halloumi, spinach that needed some urgent love too. All got thrown together with a fresh large jar of cannellini beans quickly warmed in the pan with roasted cherry toms blitzed with some red onion, garlic, chilli + extra v olive oil to make a spicy sauce. Needless to say it's yet another new house favourite that can be embellished in so many ways. A bowl full of colour, flavour + nutritional benefits and now a pretty empty fridge. Angie’s Nutrition……Welcome! Today is Meatless Monday! Going meatless one day a week may aide to better health and weight. Do I have a tasty one today! What’s on the menu 🍜 Butternut Squash Rotini 🍜 1 small to medium butternut squash cut into cubes or purchase in package already cut into cubes + 1 box whole grain or chickpea rotini pasta + 1 1/2 Tbsp dark brown sugar + 2 to 3 Tbsp olive or avocado oil + sea salt and freshly ground pepper to taste + 3 Tbsp heavy cream or almond milk 🥛 Pre-heat oven to 350 degrees. Toss butternut squash with brown sugar, olive oil or avocado oil, salt and pepper. Pour onto roasting pan, cover with aluminum foil and roast 45 to 50 minutes. Cook rotini pasta according to package. Strain pasta and add back to pot. When done, Add 1/4 of the roasted butternut squash to pasta. Pour the remaining squash into a blender with heavy cream or almond milk and purée until smooth. Pour the puréed squash to the pasta and stir well to combine 🍜 Enjoy! Hello spring 💚 . . . . For your Meatless Monday consideration: A springy pasta with asparagus, peas and mint. The inspiration came from this weekend’s NYT Food newsletter - but not the recipe, because even though I’m a subscriber, the NYT expects me to pay extra if I want to see the recipes. Screw that. BTW, the @washingtonpost @eatvoraciously doesn’t charge extra for their recipe content. Here’s my recipe: Spring Pasta with Asparagus, Peas and Mint 1 pound fresh asparagus (a mixture of green and white is nice), cut into 1/2 inch pieces 2 TB olive oil 8 ounces wide pasta, such as tagliatelle 3/4 cup fresh or frozen green peas 1 tablespoon white or yellow miso 1 teaspoon nutritional yeast (optional) 2 tablespoons vegan butter 1/2 teaspoon chili oil 1 teaspoon flaked salt, plus more to taste 1 teaspoon freshly ground pepper Zest of one lemon 1/4 cup small fresh mint leaves Heat the olive oil in a 3-quart Dutch oven over medium-high heat. Add the cut asparagus and sauté, stirring occasionally, until slightly softened and lightly browned on the edges, about five minutes. Remove asparagus to a bowl, then fill the same pot with water, bring to a boil, and cook pasta until al dente, according to package directions, adding the peas during the last three minutes. Drain, reserving one cup of the cooking water, then place the pot with the pasta and peas back over medium heat, add the asparagus, and stir in the miso and nutritional yeast with 1/2 cup of the reserved water and the butter, being sure to coat everything well, then add the chili oil, salt and pepper. Add more of the reserved water as necessary to keep the pasta loose. Grab a spoon and indulge in a bowl of hap-BEAN-ness with this comforting Greek soup known as Fasolada. Made with nutritious ingredients and lots of love, it’s the satisfying vegetarian meal you’ve BEAN looking for! 🥣🫘🥕🍅👌 Ingredients 1 bag dried navy beans 1/4 cup oil 3 carrots chopped 3 stalks celery, chopped 1 onion, chopped 4 garlic cloves, minced 1 bay leaf 1 bunch dill, chopped finely 1-2 tablespoons tomato paste 8-12 cups water Red vinegar to taste Salt and pepper Parsley to garnish Directions 1. Soak the dried beans in water overnight, making sure there’s at least 3” water over the beans. After 12 hours or so, drain and rinse the beans 2. In a large soup pot, add the oil on medium heat. When heated, add the onion, carrot and celery and cook until tender. Season with salt and pepper 3. Add the minced garlic and cook another minute. 4. Add the tomato paste and allow it to caramelized slightly 5. Next, add the beans, the dill, the bay leaf and the water 6. Cover the pot and allow the soup to cook on low for 1 hour 45 minutes or until the beans are tender. Halfway through, taste to adjust seasonings. 7. The last 5 minutes of cooking, add a tiny bit of red wine vinegar, starting with 1/4 cup, add more if you’d like. 8. When done, remove the bay leaf, and ladle some into a bowl. 9. You may top with some extra virgin oil and parsley if you’d like. Enjoy!

Mint, spring greens, and lemon is a winning combination. You didn’t need me to tell you this trio works well, but maybe you’d like me to tell you how to make it really sing? 🍋 This unassuming side dish can steal the show with a few tips. Wash a bunch of asparagus and snap the ends off (such a satisfying sound!). Chop them into thirds or fourths on a bias, you want nice sized chunks here but they should comfortably fit on your fork when it’s time to eat. Wash a handful of snow peas and top and tail them (remove the little nubs on both ends). Slice these thinly on the bias. Slicing on the bias makes everything look more beautiful (that’s tip 1). Next up is scallions - wash and remove the roots off 2-3 scallions. Slice these on the bias as well, separating the greens from the whites. Finally, wash and finely chop a small handful of mint. In a sauté pan, heat some olive oil and add the asparagus and scallion whites with just a few tablespoons of water to create some steam. Salt them and sautee just for about 4-5 minutes. You want them to brighten in colour but retain some texture (the crunch is important - this is tip 2). Turn off the heat and stir in the snow peas so they’re warmed, but again, still providing crunch. To finish, add the zest of 1 lemon (we’re using lemon zest only because lemon juice + green = brown and this is tip 3), fresh olive oil, salt and pepper to taste, mint, and the scallion greens. Add tuna OR burrata and some crusty bread and you’ve got lunch. A little bright, a little zing, a little crunch, what more could you want? Leftover mashed potato puffs by• @lemongrasscreations1 Now, as the name suggests, this recipe would call for puff pastry and while that may be a little extra work, I’ll let you in on a little secret. This would save you time, a really good deal of time🥳 Instead of using puff pastry, take your left over croissant, or two (now, you can use any left over baked goody made out of puff pastry) and add to the list of ingredients below and follow the steps 2-3 left over croissants, broken into tiny pieces 3 cups mashed potatoes 1 cup combined shredded white chedder & gouda cheese + 1/4 cup extra 1/3 cup all-purpose flour 1/3 cup sour cream Salt to taste 1 egg beaten Instructions: 1. Preheat your oven to 180°C and grease a muffin tin. 2. In a mixing bowl, add the beaten egg and sour cream until well combined. 3. Add the 1 cup shredded cheese and a pinch of salt to the egg mixture. Mix thoroughly. 4. Gently fold in the mashed potatoes, ensuring the mixture is evenly combined. 5. Add a pinch in each greasedvmuffin cup 6. Spoon the mixture onto the croissant pieces,filling each cup to the top. 6. Add the remaining croissant pieces on top and garnish the tops with the 1/4 cup shredded cheese. Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and puffed up. Allow the potato puffs to cool slightly before carefully removing them from the muffin tin. 💚 RECIPE IDEA 💚 We would like to continue the farm to plate challenge for #meatlessmonday this week. Transportation of food is a huge contributor to climate change and we can all make a difference however small by choosing to buy locally grown ingredients - even better if you are growing your own. You will be spoilt for choice with lots of fresh, local vegetables available at the Earth Market Maitland this Thursday and for inspiration, our Slow Foodies, Marcus and Liz, have provided us with their take on roasted sumac pumpkin and greens with tamari almond crunch and lemon tahini. Rumour has it that Slow Foodie, Liz, scored this highly. We hope you enjoy it too. Notes from Marcus and Liz: • We used homegrown Butternuts • We used Broccoli cut small from Nebo Farm • We used the Tamari Almonds from We’ve Got The Munchies, chopped up. • We always have a stash of toasted sesame, hemp, and flax seeds ready to go or try dukkah from Native Inspired • The tahini dressing is quite sweet. I added an extra tbsp of Tahini and used a stick blender. Because of the sweetness (delicious), I thought the tartness of pomegranate would work better than the currants. • Frozen broad beans could also sub the edamame but edamame is amazing! • And to make the meal more filling, we served it with couscous.
