Frito Chili Pies We needed a quick dinner…. And using a few pantry items, made it happen. Here’s what I did…. -2 cans chili beans in sauce -1 can red kidney beans - drained and rinsed (black or pinto beans also good) -1 can fireroasted tomatoes (any dice tomatoes would be good here) Heated the beans and tomatoes on the stove. Bump up the seasoning with some garlic and onion powders, chili powder or paprika, salt and pepper. The chili beans are seasoned already…. You are just giving them a little something extra. Once heated, assemble. I like to add Fritos to a bowl, top with shredded cheese (I prefer cheddar, but colby jack, Mexican mix, pepper jack would be good also), then add the chili beans and top with more cheese. But you can assemble it however you like! You can also add other toppings…. Sour cream, quacamole, avocado, tomatoes, salsa, cilantro…. Whatever you’d like! It was quick and easy. All of these were items I had in my pantry. I fed my family of four for about $10 and in about 10-15 minutes! …. What’s better on a cold day than tomato basil soup and grilled cheese sandwich? Here’s what I did… *add large can of crushed tomatoes, can of basil, garlic, oregano diced tomatoes, can of tomato paste, and box of broth *season with salt, pepper, onion and garlic powder, and basil (I used both dried basil and prepared basil in the squeeze tube….. if you have pesto, you ca use that also) *optional - parmesan cheese Everything went into the pot and let it simmer until heated. While the soup cooked, I made the grilled cheese with american and shredded colby jack or cheddar. I assembled and put them in the oven. It’s not the usual way I make a grilled cheese but it was an easy way while the soup cooked. And they turned out tasty. This was a delicious lunch. These were all ingredients I had on hand in my pantry. So when my kiddo made the request, it was easy to assemble. Aldi's avocado oil is a staple in my pantry. My favorite way to use it is to drizzle it on sweet potatoes and sprinkling them with sea salt before popping them in the oven.
