Went to Atlantic City over the weekend with my mom and all my sisters. Went out for dinner and breakfast and was able to (hopefully) stay within my points. It is a bit harder since you are just are just randomly picking things from the app like “restaurant style hash brown potatoes”. But, I did pick the higher value points and really kept my portions in check. Bonus I brought home the left over grilled chicken and made chicken salad for lunch. What’s better on a cold day than tomato basil soup and grilled cheese sandwich? Here’s what I did… *add large can of crushed tomatoes, can of basil, garlic, oregano diced tomatoes, can of tomato paste, and box of broth *season with salt, pepper, onion and garlic powder, and basil (I used both dried basil and prepared basil in the squeeze tube….. if you have pesto, you ca use that also) *optional - parmesan cheese Everything went into the pot and let it simmer until heated. While the soup cooked, I made the grilled cheese with american and shredded colby jack or cheddar. I assembled and put them in the oven. It’s not the usual way I make a grilled cheese but it was an easy way while the soup cooked. And they turned out tasty. This was a delicious lunch. These were all ingredients I had on hand in my pantry. So when my kiddo made the request, it was easy to assemble. Everything Bagel Seasoning Cut a circle out of each muffin and lightly butter each side of the muffin. (No waste, butter the cut outs too.) Gently crack an egg into each hole. Sprinkle Everything Bagel Seasoning around the sides. Egg spillage over the side is fine. Air fry at 325° for 8-10 minutes. Mine took around 15.
