MEAL PLANNING FOR MAY - I’m pleasantly surprised by my progress in Meal Planning for May. There are a couple of factors contributing to this: Firstly, I recently received my 5kg loss chip at my WW Meeting last Wednesday and it has really motivated me to stay on track and continue seeing results. Tilsett risottoris og vend den inn. Spe med kraft av høns el grønnsaker. Vend inn litt etter litt til en kremet konsistens, men husk å la risen være aldente, dvs med litt tyggemotstand. The freshness of the lemon in the hot weather is divine 😍 Let me know if you try 🥰 Ingredients •1/2 tbs olive oil •500g Chicken •1/2 tsp paprika •1tbs butter •1 small onion, diced •2 garlic cloves, minced (or 1 tsp powder) •1 cup orzo pasta/ risoni (uncooked) •1 medium zucchini, grated •2 cups low sodium chicken stock •zest and juice of 1 small lemon •1/2 tsp each dried thyme salt, pepper •1/2 cup of light cream (I used Philadelphia 60% less fat light cooking cream) Add ins: •30-40g Mozzarella •30g crumbly feta •Fresh Parsley Method: Season the chicken with 1/2 tsp salt, paprika and pepper. Heat the olive oil in a large pot over medium high heat. Add chicken and cook until the chicken is mostly cooked 3-4 minutes. Remove the chicken and set aside. Melt the butter in the same pan over medium-high heat. Add onions and sauté for 3-4 minutes. Add orzo and toast for 2 minutes in the pan. Add the grated zucchini, garlic and cook for an additional 2 minutes or until the onions are tender. Add in the chicken stock, lemon zest and juice. Season with the salt, pepper and thyme. Stir the chicken back into the pot and cover with a lid, reduce the heat to medium-low and simmer for 8-10 minutes or until orzo is tender. Stir throughout the cook time to ensure the pasta does not stick to the bottom of the pot. Once the orzo is cooked through, add the cream and stir until Combined. Remove from heat and stir through the feta, mozzarella until all melted through. Season with salt, pepper and fresh parsley and enjoy! Well, the forecast called for rain and, apparently “rain” here consists of frozen white flakes… and it just kept coming… and I was committed to an event that had me outside well into the afternoon. My meal forecast called for “easy dinner” but one not to forsake that Saturday night standard. It was a perfect opportunity to go to the freezer for a pre-prepared Lamb Shank in a Balsamic-Fig Jus. It was gifted in a promo a while back and needed only a reheat, which I did via sous vide. I reduced the cooking Jus into a sauce, made some Creamy Cauliflower Mash, and Sautéed Kale with Cherry Tomatoes. Not a bad go to, and there are leftovers, so stay tuned for wherever that goes. I actually did it! I cooked up a pot of #Spiderman organic mac and cheese with filet mignon! I'd like to think I'm the first person who came up with this combo 🕷 🧀 🕸 🥩 Instead of butter/ milk I used #applecidervinegar (very tangy and almost zero calories!), fresh garlic, and garnished with red 🌶 flakes and croutons. Then I poured that over a bed of shredded organic romaine 🥬 for some extra crunch and nutrition. This is definitely one of the tastiest meals I've ever made. It's a great combination of flavours and textures. Plus, never have I ever eaten a meal with 🕷 shaped pasta bits "crawling" on my food 😁😄😃😄😁 If you look closely you'll also see some 🕸 shaped pieces. Stage 2 Chicken "Chowmein" Ingredients: 💥Chicken 100g, ground/minced 💥Cabbage 140g, cut into long thin strips 💥Garlic 2 cloves, chopped or paste 💥lime for garnish Dry Spices: Himalayan salt Black pepper Turmeric powder Paprika Cumin powder Corriander powder 1. Add garlic to a hot pan and slightly roast 2. Add chicken to the pan and cook until all water evaporates. Add some water if the chicken is stuck to the pan and cook until dry. Add the dry spices and mix thoroughly 3. Add cabbage and cook to your liking. I cooked mine until the cabbage water evaporated and it became a little dry/crunchy. 4. Snack Prep! Balancing work and family life, school runs, after school clubs, play dates, food shopping etc etc, can make life very busy! What I find helpful is whilst I am making lunch or dinner, is to chop up some healthy snacks that are ready to go in the fridge. Especially when you have a little person that is raiding the fridge/cupboards all the time as they’re hungry! Plus it’s always more enticing when It’s chopped up and ready! Mindful eating focuses on the present eating experience with heightened awareness beyond the self, and without judgment. 💭 Intuitive eating often integrates concepts of mindful eating but also considers eating specifically in response to hunger and satiety cues, nurturing a positive body image, addressing non-physiological reasons for hunger, and physical activity.
