Happy Chinese New Year! May this year be as bright, happy and comforting as a pineapple upside down cake. Here’s our recipe with all our love from team Butterkicap. Ingredients: 1 cup butter 3/4 cup sugar 3 eggs 5 tablespoons warm milk 1 cup flour 1 1/2 teaspoons baking powder 1 can pineapple slices (8oz can)   For Syrup: 6 tablespoons sugar 4 tablespoons pineapple juice   Preheat the oven to 165 degrees C. In a mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs and warm milk and beat for another 2 minutes. Lastly, add the flour, baking powder and salt. Mix lightly until just combined. Set aside. Grease an 9″ round pan with butter. Place one pineapple slice in the middle and arrange the rest circling the centre slice. Place cherries in the middle of each pineapple slice. Next make the syrup. In a pan over medium heat; melt 6 tablespoons of sugar in 8 tablespoons of pineapple juice. Remove from the heat as soon as your sugar mixture turns light golden brown. Immediately pour over pineapple slices, as evenly as possible. Pour cake batter over the pineapple slices and gently spread to even out the top. Bake the cake for 35 to 40 minutes. Let the cake rest for 5 minutes before carefully inverting the cake pan onto a plate. It’s best served warm. #butterkicap #cny2023 #cny #pineappleupsidedowncake #pineapple #comfortfood

Did you know that the name ‘rendang’ comes from the Sumatran word ‘randang’ which means ‘slowly’. This refers to the caramelizing process that takes at least 2 hours to get that rich tender beef flavour that we love. Traditionally, it takes between 8 hours to 3 days to cook rendang! Luckily, this does not apply to Justine Lim’s Nonya style rendang recipe. Her recipe will take just 2 to 3 hours. Ingredients: a) Main Ingredients * 1 1/2 kg of beef , cut into cubes * 1/2 cup of water * 6 tablespoons cooking oil * 1 stick cinnamon * 3 cloves * 3 star anise * 3 cardamom pods * 3 lemongrass, cut into 3 inch in length and pounded * 1 kg thick coconut milk or santan * 1/2 cup of water * 1 tablespoon tamarind pulp, soaked in some warm water for the juice and discard the seeds * 6 kaffir lime leaves, very finely sliced * 6 tablespoons kerisik (toasted coconut) * 2 tablespoon of gula melaka or palm sugar or cane sugar * salt to taste b) Spice Paste * 3 lemongrass, white part only (pounded) * 6 cloves garlic * 2 inch ginger * 13 dried chilies, soaked in warm water and remove seeds * 6 shallots * 2 inch galangal, sliced Method: 1. Blend the spice ingredients into a paste. 2. Marinate the beef chunks with the spice paste for 1 hour. 3. Heat the oil in a wok, fry the cinnamon, cloves, star anise, cardamon and lemon grass for 5 minutes till you smell the aroma. 4. Add the beef and spice paste for 2 minute.  5. Add water, coconut milk and tamarind juice, at medium heat for 10 minutes. 6. Add 3 kaffir lime leaves, kerisik, Gula Melaka or palm sugar or brown sugar. Keep stirring till well combined. 7. Lower the heat, simmer for another 1 1/2 hours with lid covered until the meat is tender and the gravy has dried up with a nice dark brown caramelized colour. 8. You can add salt and sugar to taste. A classic nonya dish and childhood favourite recipe by Justine Lim FB: justinescakesnkueh Pong teh is a braised meat dish, cooked with potatoes in a gravy of fermented bean paste, gula melaka and soy sauce. Oh and this dish tastes even better after keeping it overnight once the potatoes soak up all the delicious bean and palm sugar flavours. Ingredients: * 4 shallots, peeled and roughly chopped * 5 cloves garlic, peeled and roughly chopped and 2 whole cloves of garlic, unpeeled * 6 Tbsp of oil to fry the potatoes first and save 3 tbs of oil to fry the rest of the ingredients * 2 tbsp of salted tauchu, fermented bean sauce * 2 tbsp dark soy sauce * 2 tbsp soy sauce * 2 tbsp of gula melaka or palm sugar, chopped * 1/2 chicken, cut into bite-sized pieces * 4 small Yukons peeled and cut into large pieces * Shiitake mushrooms, soaked and sliced to half each * Chestnuts, boiled and peeled * 3 to 4 cups water * salt to taste Method: 1. Mince shallots and garlic. Set aside. 2. Heat oil at medium heat and fry potatoes till golden brown. Set aside. 3. Discard some oil and leave 3 tablespoons of oil in frying pan. Sauté the shallots and garlic paste and fry for about 2 minutes. Make sure paste doesn’t burn. 4. Add tauchu paste. 5. Add mushrooms and fry for another 1 minute. 6. Add chicken and fry for 2 minutes 7. Add potatoes and 3 cups of water. Bring the broth to a boil. 8. Add palm sugar, soy sauce, dark black sauce, salt & pepper to taste 9. Add chestnuts. 10. When the water boils, reduce the heat and simmer, stirring occasionally, for at least 20 minutes or until the chicken is tender. 11. Garnish with some chopped spring onions or cilantro. 12. Pisang rebus memang cukup senang untuk disediakan. Buka mata, tutup mata, dah siap! Untuk menyediakan hidangan ini, pisang yang paling sesuai untuk digunakan ialah pisang Awak. Pisang jenis ini mempunyai isi yang manis dan tebal.   Bahan-Bahan: * 3-5 biji pisang Awak Cara-Cara: 1. Letakkan pisang ke dalam periuk dasar dalam. 2. Isikan periuk dengan air hingga menenggelamkan pisang. 3. Panaskan periuk atas api sederhana besar dan tunggu hingga air mendidih. 4. Biarkan pisang masak hingga empuk. Happy Malaysia Day! While roti canai, rendang and nasi lemak are often the first things that come to mind when you think of Malaysian food, we have so much more! Introducing Umai! Have you heard of this dish? It is a traditional native dish of the Melanau people in Sarawak, which was originally eaten by fishermen who prepared and ate their catch while still out at sea. It’s the Bornean equivalent to the Hawaiian ‘Poké’. It’s absolutely delicious, just make sure the ingredient are fresh. Ingredients: * 50g Fresh prawns, removed shell and head * 30g of onions, sliced * 30g of Red Chillies, sliced * 30g of shallot, sliced * 30g Calamansi, cut into half * 20g pf ginger * 1/2 tablespoon of ground nuts * 1/2 tablespoon of dried sago * Salt to taste * Sugar to taste 1. In a bowl, place the peeled fresh prawn. Make sure they are cleaned thoroughly. 2. Add in the sliced onions, red chillies, shallots and ginger, 3. Squeeze in some calamansi juice. 4. Season to taste with salt and sugar. 5. Mix evenly. Refrigerate if not serving straightaway 6. Sprinkle ground nuts & dried sago before serving. Selamat Hari Merdeka!! 🇲🇾✨Today, as the country celebrates its Independence Day, we at Butterkicap wanna celebrate some iconic Malaysian dishes with you… Starting with this awesome roti canai recipe by Aunty Zah! Ingredients: * 1 kg flour * 1/4 cup butter * 1 1/2 cup water * 1/2 cup milk * 1 egg * 1 tsp condensed milk * 1 tsp salt * 1 cup oil (set aside in a bowl to soak dough balls) 1. In a large bowl, mix all the wet ingredients except oil. 2. Add flour and knead into a ball. 3. In a separate bowl, add the oil. 4. Make small balls out of the dough and place them in the bowl of oil. Let this rest for 5-6 hours. 5. Flatten out a ball of dough. Hold with two hands and whip it around in a circular motion smacking it against the table after each round. This will stretch the dough. 6. Once it’s thin enough. Stretch out the edges of the dough until it’s almost translucent. 7. Fold it in. Then roll (spiral) from both ends. Place one side of the spiral on top of the other. Repeat until all the balls of dough have been stretched out and rolled into layered balls. 8. Gently the balls until it’s like a pancake, and cook on medium heat in a pan until golden brown. This is my 3rd time making the famous butter kicap chicken 🍗 Saw the recipe on @grungeee feed and i’m stucked on it whenever i lost idea what to serve for lunch/dinner. What you need & How you do it 😂 - chicken any part - garlic - onion - potato - tomato - unsalted butter - kicap manis (kipas udang please) Lump all ingredients in a pan and bake them for 30mins at 180-200C You can be as creative as you can on the ingredient, so this round i scrub the chicken with chinese 5 spice, pepper and garlic powder to give strong flavour 🤌🏼🤌🏼 #butterkicap #onepanmeal #onepanchicken #dinner

Mi goreng mamak - One of my go to orders during mamak sessions. Don’t we all miss those days? Till we get to reunite with our favourite mamak, this recipe will keep you accompanied. Ingredients: 3 tbsp oil (groundnut oil - @yashkri_the_authentic_oilers) 2 medium onion, sliced 1 tbsp ginger garlic paste 3 tbsp dried chilli paste 1 tbsp oyster sauce 1 tbsp sweet soy sauce 1 tbsp tomato sauce 1 tbsp chilli sauce 2-3 tbsp peanut sauce/chunky peanut butter 1-2 firm tofu, cut into cubes Shredded carrots Kailan/mustard greens Yellow noodles Dried tofu Salt to taste 2 eggs, lightly beaten Beansprouts Fried onion, garnish (@add.onzz) Tips: If you’re making extra to be kept refrigerated, remove the noodles from the pot/pan before adding in the beansprouts. Only add in the beansprouts when you’re ready to serve. Bahan2 - ayam dipotong sesuka hati (sis potong kecik2) - Butter 1 - 2 sudu - Bawang holland - Bawang putih - Halia - Lada kecik / lada hitam (kalau nak pedas2 sikit) - Kicap - Sos tiram - Cendawan shitake (kalau suka) - Ubi kentang (kalau nak) Cara memasak - Panaskan butter dan masukkan bawang, lada. - Naik bau masukkan ayam dan cendawan/kentang. - Garing sikit, masukkan bahan2 lain sesedap hati. Tambah air sikit. - Ayam dengan kentang dah masak, siap dah la tu.. Sebenarnya resepi asal letak semua sekali pastu bakar je dalam oven atau microwave. Hihi. Sometimes just serving you dad a cup of coffee or simple cekodok is enough to make his day and show your love and appreciation. Happy father’s day! * 550g very ripe bananas * 100g all-purpose flour * 16g self-raising flour * 40g sugar, amount adjusted for sweetness * ½ tsp sea salt * Cooking oil 1. Mash bananas until smooth 2. Add all-purpose and self-raising flour and mix until combined. 3. Next, add sugar. You may want to start with half the sugar, mix and give the batter a taste. If your bananas are very sweet though, do not omit the sugar altogether and add just a little as this helps to caramelize. 4. Finally, add salt. 5. Fill your wok with about 4cm depth of oil and bring to frying temperature. 6. Use teaspoons to scoop out batter. Immediately drop the batter into oil. 7. Add in a few more scoops of batter and let it fry until the skin is dark and crispy, turning it around in the oil occasionally. 8. Scoop out and transfer fried fritters to a plate or colander lined with paper towels. 9.
