#veganbreakfast #southindianvegan 🌱Crispy Cone Dosai served with Vegan Chettinad Vendakkai-Kathrikai & Edamame Mandi / Kaai-Kari Mandi / Mandi Kuzhambu A delightful combination of crispy golden Dosai and the flavorful vegan Chettinad Mandi Kuzhambu; this was not only a hit with my toddler but also a personal favorite. The Dosai's crispiness pairs perfectly with the vegetable-laden tamarind and rice broth, creating an incredibly delicious bite. Ingredients: * 4-5 okra, diced * 2-3 baby eggplants, diced * 3 green chilies * 4 garlic cloves * 5 Shallots * 1 cup tamarind extract * 1 cup starchy rice water * 1 tsp rice flour * 1 tbsp oil * 1 tsp mustard seeds * 1/2 tsp fenugreek seeds * 2 dried red chilies * 1/4 tsp asafetida * 1/2 tsp turmeric * Curry leaves * Salt to taste * 1/4 cup edamame (or Lima beans/Mocchai) * 1/4 tsp jaggery (optional) Method : 1. Heat oil in a pan and add mustard seeds, fenugreek seeds, red and green chilies, asafetida, curry leaves. Stir for a minute. 2. Add shallots and garlic, salt, and turmeric. Mix well. Sauté for 4-5 minutes. 3. Add the veggies—diced okra, sauté for 2 mins and then eggplants. Sauté for 8 minutes until slightly browned. 4. Pour tamarind extract, add frozen edamame, and season with salt. Simmer for 10 minutes until the veggies are tender and gravy reduces slightly. 5. Stir in the starchy rice water whisked with a bit of rice flour and cook for 5 more minutes. Add salt to taste. 6. Optionally, add jaggery for sweetness. 🌱Serve this Mandi Kuzhambu hot over steamed rice, Idli or Dosai. Note: ‘Mandi’ refers to the starchy water left after washing or soaking rice. The Dosai batter is made from a combination of parboiled rice, foxtail millet, little millet, whole urad lentils, and fenugreek seeds that are ground and fermented to perfection. So good! Kariveppilai Podi is just so aromatic and elevates the flavour of the dosai. 🌿Quick and easy home style mini-Masaal Dosai for #sundaybrunch #southindianvegan 🌿Served with some thin Karnataka style coconut-ginger chutney, mixed veggies Moong Dal Sambar and some of that yummy potato-onion mixture on the side — simply delicious! 🌿Batter ratio— Idli rice to whole Urad dal (1:4) + 2 tbsps of fenugreek seeds. Ground to a smooth batter consistency with salt and fermented overnight. 🌿Coconut ginger chutney: into a blender added a cup of grated coconut, an inch piece of ginger, 2 green chilies, a tsp of tamarind extract, 2 tbsps of chutney dal / pottukadalai and blitzed to a paste. Added water to thin it down and salt to taste; tempered with 1/2 a tsp of mustard seeds, a pinch of asafetida, a red chili and a few curry leaves. Done! 🌿Urulaikizhangu/ Potato Masaal recipe : microwaved 2 large potatoes until fork tender. Peeled and chopped them roughly/crumbled them up. Heated a pan with some oil, added 1/2 a tsp of mustard seeds, a dried red chili, a tsp of Channa dal, crushed ginger, 2 chopped green chilies, a few cashews, curry leaves and a pinch of asafetida. Added a thinly sliced onion and sprinkled 1/2 a tsp of salt and turmeric. Added the crumbled potatoes into the pan, sprinkled some water and tossed everything on medium heat until well combined. #brunch #veganfood #milletrecipes #glutenanddairyfree 🌿Soft spongy Kal Dosai Savory porous pancakes made from a fermented batter of ground Rice, Foxtail & Little Millets, whole Matpe lentils and fenugreek seeds. 🌿 Cauliflower Salna Spicy cauliflower stew made from freshly ground spices, South Indian style. Here’s the recipe— Into a blender, added 1/4 cup of grated coconut, a tsp of poppy seeds (kasa-kasa), a handful of cashews (~8-10), 1/4 cup of water and let it all sit—getting soaked for 10 mins. Added a tbsp of fennel seeds to the blender and bitzed everything to a smooth paste. In a pan, heated a tbsp of oil, added 2 chopped medium sized onions, 3 diced tomatoes, a tbsp of ginger & garlic paste, a slit green chili, a few mint leaves (pudina) and sautéed everything until slightly pulpy with a sprinkle of salt & turmeric. Pulsed everything to a smooth sauce. Kept aside. Blanched a cup of cauliflower florets in hot water with some salt and turmeric. Drained and kept aside. Roasting cauliflower is optional —In the same pan, added 2 tbsps of oil sautéed the cauliflower florets for 2-3 mins until nice and golden. Kept aside. In the same pan, heated a tsp of oil, added a bay leaf, 4 cloves, 2-3 green cardamoms & a small cinnamon stick. Poured the onion-tomato sauce into the pan, added 1/2 a tsp of salt, turmeric, coriander powder, garam masala, red chili powder and a tbsp of Kashmiri red chili powder. Mixed well. After simmering for 5 mins, added the roasted cauliflower florets and mixed well. Covered and cooked for 5 mins. On low heat, poured the blended coconut-cashew-fennel seeds mixture into the simmering cauliflower stew, added 1/4 cup of water and adjusted salt/consistency/seasoning. Simmered for 5 mins. Done! Again #dosai post , this time tried the dosai with wheat rava turned out #crispydosai . One cup- sambha rava godhumai (wheat rava} soak for 2 hrs and grind it with salt adjust water consistency. Add 1 or 2 ladle of our regular idli/dosai batter. Mix well , if needed u can do tadka and some curry leaves . Lunch today! Chicken, Kolrabhi, potato gravy served with mixed millet dosa. This is how we ate #kolrabhi aka #noolkol as kids. Mom used to add noolkol to her chicken or mutton gravy. Was not a fan of the sambhar they make with it. Freshly roasted and ground spice powder was used. Dosa is the batter made by adding ragi, bajra and sorghum flours to the water from the grinder... I used to wipe clean the grinder with water and use it to thin the idly batter. It will be hit and miss as sometimes I will thin batter too much. After seeing this tip from @happyhomemaker_tamil I am following her method. I fermented the mixed millet batter overnight before making dosas. Somehow like it this way than freshly mixed version. Thick dosa happily eaten with the gravy. #ditasmomcooking #chicken #chickengravywithkolrabhi #dosaipandaram #mixedmilletdosa. #mondaybrunch 🌿If you’ve been following me for a while, you know how I love to swap out rice with ancient grains like millets at every opportunity. I’m a proponent of these amazing grains in Indian cooking. They make meals gluten free and low GI. One of the best ways to include millets in your diet is to make them part of your Idli-Dosai batter, for starters! We hear from nutrition experts that fermented foods have a special place in maintaining good gut health. My love for Idli & dosai knows no bounds and just a few minor tweaks in millets proportion in the batter can not only elevate the taste but also give that gorgeous color on Dosai. With perfect sides, I could eat this all day. So that’s what happened today- Masaal Dosai for lunch. Crispy goodness with spicy dips of Chutney, Sambar and that urulakizhangu (spicy potatoes) masaal! Brunch - two kinds of dosas with thenga podi. All three dishes have one ingredient in common which is Whole black urad dhal!! I have part replaced regular urad with the skinned variety. The ragi dosai is ground urad and methi batter to which shop bought roasted ragi flour was added and fermented overnight. Only downside is have to eat these straight off tawa or else they dry out. The golden dosa is regular idly batter one but made with part red rice and whole urad. Simple modifications which can be easily accepted even by fussy eaters. #dosaipandaram ! This was my lunch today... Bought a new sathu maav mix from a friend who is making them here... got it unflavored. Used it with regular idly batter and some ragi flour, tempered batter with onion and carrots and made of thick dosas... subham!! Chutney is a quick fix one... kiddo has suddenly gone off the tomato thokku that she so likes... so used that to churn out a chutney! One onion sautéed and cooled, a tbsp of pottukadalai ground and to that the sautéed onions, few tbsp of tomato thokku, the last few clingy thokku from my homemade avakaya was added!
