The Greek Orthodox Easter is around the corner and these mini egg NYC style cookies taste like pure Easter-tinged joy 🐣 •Ingredients 115g butter, room temp 100g light brown sugar 100g granulated sugar 1 large egg, room temp 2 tsp vanilla extract 315g plain flour 1 tsp baking powder 1 tsp bicarbonate of soda 1 tsp salt 200g mini eggs @cadburyuk , crushed 100g chocolate chips •Method 1. In a large mixing bowl, add the butter, light brown sugar and granulated sugar and mix until creamy. 2. Add in the egg and vanilla extract and mix again. 3. Then, add in the plain flour, baking powder, bicarbonate of soda and salt and mix until a cookie dough is formed. 4. Add in the mini eggs and chocolate chips and mix until combined. 5. Put the cookie dough in the fridge for at least 30 minutes. 6. Preheat the oven to 180° and lined a baking tray with parchment paper. 7. Roll the cookies and place 4-5 of them on the baking tray. 8. The star of the show here is definitely the Jaffna Crab Pittu Kottu. It’s a revelation! The crab is incredibly fresh, the pittu is fluffy and light, and the flavors all come together in a symphony of deliciousness. This is honestly the best pittu I’ve had in a long time. But the excellence doesn’t stop there. The Jaffna Pot Rice is another must-try. The presentation is beautiful, and the first bite transports you straight to Jaffna. The mutton masala is also fantastic - tender meat in a rich and flavorful sauce. Honestly, I could say almost everything on the menu is a winner! To complete the experience, I ended my meal with a perfectly spiced masala chai. It was the perfect way to warm up and cleanse the palate after all that delicious food. The restaurant itself was buzzing with activity. There was a constant stream of customers, which is always a good sign when it comes to fresh and delicious food. Overall, Coffee Colombo is a fantastic surprise. While the name might suggest a coffee haven, it’s truly a haven for incredible Sri Lankan cuisine, especially pittu.
