Les gyromitres (gyromitra esculanta) Appelé aussi fausse est une espèce de champignons toxiques de la famille des Discinaceae dans l'ordre des Pezizales. Cette espèce a longtemps été considérée comme un champignon comestible car son taux de toxines, extrêmement variable, plus faible sous les climats froids, est encore atténué selon le mode de préparation, mais il peut occasionner chez l'homme des troubles neurologiques tels que la maladie de Charcot et une atteinte du foie et des reins, parfois mortel. Sa chair est cassante et cireuse, il possède un pied trapu et creux à maturité qui peut atteindre 5 cm et son chapeau, qui peut atteindre 5 cm de haut et 10 cm de large, présente des lobes cérébriformes assez fins de couleur brun bistre à brun rouille. ⚠️ attention confusion possible pour les debutants qui pourront confondre le gyromitre dit « comestible » avec certaines morilles qui, elles, sont de bons comestibles (après cuisson). Le chapeau du gyromitre évoque plus une forme de cervelle, et la couleur est également plus foncée que celle des morilles. Contrairement à son son nom (l'épithète esculenta signifiant « comestible » en latin), ce champignon est toxique pour les humains, voire mortel s'il est consommé cru.Il peut provoquer des intoxications graves ou des accidents mortels, même lorsqu'il est cuit, en cas de consommation répétée ; séché, il reste légèrement toxique car la gyromitrine se transforme en monométhylhydrazine (ou méthylhydrazine), qui est dégradée lors du séchage mais reste présent sous forme d'hydrazine. Une étude publiée en 2023 associe la consommation de ce champignon avec une recrudescence dans un village de Savoie de cas de sclérose latérale amyotrophique (sous le nom de « maladie de Charcot », qui est en fait une maladie neurodégénérative. Giftlorchel - Gyromitra escuenta 💀 Dieser Pilz galt lange als Delikatesse und wurde noch vor 100 Jahren in Massen auf dem Viktualienmarkt in München verkauft. Jedoch war es extrem wichtig, die Pilze zuerst für längere Zeit zu trocknen, sie dann zweimal im Freien abzukochen und jedes Mal das Kochwasser wegzugießen. Nur so war es halbwegs sicher, den Pilz zu verzehren. Schon ein ziemlicher Aufwand und fast schon Irrsinn nur für eine Pilzmahlzeit! Und selbst nach diesem Prozedere kann nicht komplett ausgeschlossen werden, dass sich noch Gyromitrin oder dessen Abbauprodukt Monomethylhydrazin im Pilz befinden. Diese Giftstoffe können heftige Vergiftungssymptome auslösen oder sogar zum Tod führen. In Russland gehen auf diesen Pilz sogar ganze 45% der Vergiftungen zurück! Dieses Jahr waren die Fruchtkörper bereits sehr früh zu finden und die Suche im Frühjahr ist immer etwas ganz besonderes und magisches. Bei den Speisemorcheln gibt es viele verschiedene Arten, die teilweise nur über DNA-Sequenzierung unterschieden werden können. Essbar sind sie jedoch alle gleichermaßen gut. Essentiell ist eine ausreichend lange Garzeit, ansonsten kann es zu Unverträglichkeiten kommen. Bei dem Verzehr großen Mengen Morcheln wird auch immer wieder das Morchella-Sydrom beobachtet. I’ve always been a bit confused as to why Gyromitra esculenta are considered “false morels”, since to me, there isn’t much of a resemblance (see my last post for a comparison). Still, I find the rich texture and colour of these mushrooms absolutely fascinating, and it is certainly true that they are found at the same time of year. 😊🍄☔️

The taste of these mushrooms is delicate, nutty-sweet, and I could recognize their aroma with my eyes closed. But...there's always a but! They are deadly poisonous unless you know how to cook them. False morels (gyromitra esculenta) at Linn of Quoich 🍄 a first find for me, but they didn't go in my basket as these are poisonous, containing the toxin gyromitrin. Nevertheless, false morels are still eaten in some parts of the world after preparation (it's thought that cooking or drying lowers the toxin concentration), and toxicity does vary geographically. A little bit of education is your best friend when foraging so take time to recognize the differences between these and true morels (morchella sp.) before you pick anything! True morels have a honeycomb-like structure to the cap, rather than the irregular bumpy structure of the specimens seen here. True morels are also completely hollow on the inside unlike the false morel. And finally, I couldn't resist showing some of the stunning scenery to be had at the Linn of Quoich 🧚🏻♀️🏞️💖
Idag kom äntligen våren på riktigt och tio steg utanför dörren växte plötsligt två toppmurklor, Morchella conica! De har aldrig visat sig tidigare. Dessutom växte det stenmurklor, Gyromitra esculenta, överallt bland granarna på baksidan. Ich hatte schon fast die Hoffnung aufgegeben, dieses Jahr noch eine Giftlorchel zu finden, doch dann stolperte ich an einer mir bekannten Stelle heute Nachmittag doch noch über ein altes Exemplar. Die typische, gehirnartig gewundene Struktur des Hutes, der schon abgefallen ist, kann man noch gut erkennen. Es ist wichtig, diesen Pilz genau zu kennen, weil man ihn schnell mal mit einer Morchel verwechseln kann. Morcheln haben allerdings immer eine wabenartige Struktur und einen hohlen Stiel. Der lateinischen Artname "esculenta" bedeutet "essbar" und in der Tat wird dieser Pilz in vielen Ländern gegessen. Das fordert aber einen hohen Tribut, denn er löst eine schwere Vergiftung aus, wenn er unzureichend gegart verzehrt wird. Jedes Jahr sterben wieder Menschen beim Versuch diesen Pilz zu essen. Es sollen schon bloß durch die Dämpfe des Kochwassers Vergiftungen ausgelöst worden sein BITTE DIESEN PILZ AUF KEINEN FALL ESSEN! Today i stumbled upon an allready decaying specimen which nevertheless still clearly shows the typical, brainlike structure of the cap. It is important to know this mushroom because it can easily be misidentified as a morell (although morells always have a honey comb like cap and a hollow stipe). The latin species name "esculenta" translates as "edible" and it is indeed eaten in many countries. This takes its toll tough because the mushroom causes a serious poisening when consumed unsufficiently cooked. Many people have died from this. Some have even intoxicated themselves just by inhaling the steam of the water in which the mushrooms were cooked. PLEASE DO NOT EAT THIS MUSHROOM! 1-4 are a FALSE morel!! Probably one of the gyromitra species. These are generally not eaten. From Google: Gyromitra species, also known as false morels, contain hydrazines, hydrazones, and hydrazides, including gyromitrin. Gyromitrin is a hydrazone that breaks down into MFH when heated or in stomach acid, releasing acetaldehyde. MFH contains monomethylhydrazine (MMH), which is toxic and used for rocket fuel. So, probably don't want to eat something in rocket fuel 🚀 But it was still a really cool find! My first time finding one. And hopefully it's a sign of real morels soon 😁 5-Fairy ring mushrooms! Piestrzenica kasztanowata (Gyromitra esculenta). Grzyb trujący, dawniej uznawany za jadalny (esculenta po łacinie oznacza jadalny). Niektórzy dalej uważają ją za jadalną po odpowiedniej obróbce, jednak zawarta w niej gyromitryna uwalnia się w formie lotnej w trakcie obróbki cieplnej, a do tego ciężko jest stwierdzić jak długi czas jest potrzebny do jej usunięcia. Und noch ein Fund von heute. Endlich habe ich mal ein paar recht stattliche und reife Frühjahrs-Giftlorcheln gespottet. Eigentlich sind das bei uns sehr häufige Frühlingspilze, aus irgendeinem Grund musste ich dieses Mal aber wochenlang suchen. Wieso die Suche? Ich bin wohl simpel genug gestrickt um es ziemlich unterhaltsam zu finden, diese hirnartig-alienhaften, auf dem Waldboden verstreuten Gebilde zu begutachten. 🧟 __________ And another find from today. Piestrzenica kasztanowata / Gyromitra esculenta (trujący)😍 Kochani trochę wybił mnie z rytmu szybszy pojaw grzybów wiosennych i nie zapoznałam Was z wiosennymi gatunkami, które spotkałam. 🫣 Dziś przyjrzymy się piestrzenicy kasztanowatej. Jest to grzyb, którego ludzie najczęściej mylą ze smardzami. Przeglądając instagrama często widzę radość ze znalezienia smardzy, a na zdjęciach znajduje się właśnie ten jej trujący sobowtór. Postaram się wrzucić niedługo porównanie tych dwóch gatunków. Pamiętajcie, że dobrze jest znać jadalne gatunki, które chcecie zbierać, ale też wiedzieć z czym trującym możecie je pomylić. Piestrzenica kasztanowata pojawia się od marca do maja. W Polsce występuje tylko na niżu i w niższych górach i jest dość częsta. Rośnie, pojedynczo lub w grupach, głównie w piaszczystych lasach sosnowych i świerkowych, na zrębach, w młodnikach i uprawach leśnych. Często można ją spotkać w miejscach, w których została naruszona ściółka, czyli brzegach potoków, zaoranej w lesie ziemi, miejscach po wycince drzewa, czy rozrytych przez dziki. Piestrzenice składają się z główki i trzonu. Główka ma kształt nieregularnie kulisty i silnie pofałdowany, przypominając wyglądem mózg, lub zwiniętą, zgniecioną szmatkę. Powierzchnia jest barwy od żółtobrązowej, brązowej, ochrowobrązowej przez kasztanowobrązową, a nawet czarnobrązowej. Czyli w ciemnych odcieniach brązu. ☺️ W środku główka jest kremowa, pusta i poprzerastana. Wysokość główki dochodzi do 12 cm, a szerokość do 15 cm. Główka jest zrośnięta z trzonem. Trzon jest biały lub żółtawy, krótki, nieregularny, od dołu trochę zgrubiały. U młodych owocników jest pełny, lecz z czasem staje się pusty. Miąższ grzyba ma białą barwę, jest chrząstkowaty i bardzo kruchy, a owocnik w środku jest pusty. Grzyb trujący. Zawiera substancję toksyczną – gyromitrynę, która powoduje zaburzenia żołądkowo-jelitowe, uszkadza czerwone krwinki, niszczy nerki, śledzionę, wątrobę i wzrok. Objawy zatrucia pojawiają się zwykle po 6-15 godzinach. Frühjahres Giftlorchel ( Gyromitra esculenta ) STARK GIFTIG UNTER KIEFER ODER OBSTBÄUMEN ERSTFUND APRIL 2024 Kostversuche sollten bei diesem Pilz grundsätzlich unterlassen werden. Erst recht nicht im rohen Zustand. Denn das Gift GYROMITRIN zerstört die Organe, allen voran die Leber in kurzer Zeit. Darum sollte man dringend aufpassen und auf die hirnartig gewundene Struktur achten, denn Morcheln und Lorcheln können durchaus im gleichen Habitat vorkommen, zum Beispiel auf Mulch oder auf Obstwiesen. Gewundender/ gehirnartig aussehender Hut in rötlich-braunen Tönen mit einem hellen Stiel. Innen gekammert/ gefüllt. Frühjahrs-Giftlorcheln enthalten eine große Menge Gyromitrin welches hitzelabil ist und schon beim Kochen dieser Art zu Vergiftungen führen kann. 🍄Funddatum 09.04.2024🍄 🍄Und hier ist noch die vierte Lorchelart von meiner Feierabendrunde am 09. April. Die tödlich giftige Frühjahrslorchel, der Verwechslungspartner der beliebten Morchelarten. Da ich aber erst kürzlich einen Beitrag mit schönen jungen Exemplaren von der Frühjahrslorchel gepostet habe, soll hier vielmehr der Standort das Thema sein. Ein Holzlagerplatz mit Nadelbäumen (letztes Foto), in diesem Fall Fichten, deren Borke sich schon größtenteils vom Stamm gelöst hat und verteilt auf dem Boden liegt. Am linken Bildrand ist noch eine alte Kiefer zu sehen, die ein sehr beliebter Begleiter der Frühjahrslorchel ist. Und der sattgrüne Bodenbewuchs zeigt uns, dass genügend Feuchtigkeit im Boden vorhanden ist. Gestörte Bodenverhältnisse durch das Herumziehen und Abladen der Stämme, begünstigen nochmals das Wachstum, genauso wie etwas Kalkeintrag durch den kalksteingeschotterten Waldweg. Jämförelsebild mellan två förväxlingsarter: Stenmurkla - gyromitra esculenta ☠️ (vänster) VS toppmurkla - morchella conica s. lat. 🍽 (höger). Stenmurklor och toppmurklor växer ungefär samtidigt (vår och försommar). Man ser på bilden att stenmurklan har en hjärnlikt vindlad hatt medan toppmurklan har en kamrad hatt (som en bikupa typ). Stenmurkla är en farlig giftsvamp som tyvärr fortfarande säljs och äts i Sverige. Svampen växer i barrskog oftast på sandiga marker och gillar markstörningar : den hittas på hyggen, vid rotvältor, längs stigar och traktorspår. Svampen ansågs förr vara en utmärkt matsvamp (och visst doftar den gott!) men numera avråder både livsmedelsverket och svampkonsulenternas riksförbund all förtäring av stenmurkla eftersom svampen innehåller giftet gyromitrin som påverkar nervsystemet, är cancerframkallande och skadar lever, njurar och röda blodkroppar (i Frankrike gäller försäljningsförbud sedan 1991…). #svamp #svampplockning #mushrooms #champignon #morchella #gyromitraesculenta
