I am coaching My friend Michele how to make a Lentil soup with no oil. Today's big meal was lunch, and it was colorful! I rarely have four separate prepared foods on my plate, but was feeling creative. So, I reheated black beans that I made in the pressure cooker yesterday (that were cooked with diced tomatoes, half of an onion chopped, and a bunch of dried herbs/spices: onion, garlic, chili powder, cumin), and added some frozen corn and topped it with cilantro. I cooked long-grain brown rice with some curry powder, and dried onion and garlic. Also some steamed chard and kale. And a salad of grated carrots and cabbage, topped with salsa instead of dressing. It was a delicious, filling, healthy meal with no added salt or oil. Is that even possible?!
