Então, basicamente, Khashlama consiste em carne obrigatoriamente com osso e vegetais cozidos juntos em um caldo rico e delicioso, algumas vezes acrescido de cerveja ou vinho que acentuam ainda mais seu sabor. Diz a lenda que há centenas de anos o Khashlama era preparado por pessoas que viviam no alto das montanhas nas Armenian Highlands. Essas regiões não tinham grande variedade de alimentos, mas sempre tinham bastante cordeiro e naquela época, Khashlama era um prato de verão porque era quando o cordeiro fresco e os vegetais suculentos estavam disponíveis. Era preparado no fogo em fornos de barro armênios cilíndricos tradicionais, chamados tonir. Na Armênia, este é um prato comemorativo, geralmente preparado para ocasiões especiais muitas vezes cozinhado pelos homens da família, que se reúnem para picar os legumes e marinar a carne. Armenian meat-and-potato stew, Խաշլամա / Khashlama. 🥩🥔🍅 Beautifully made and served by @_homester. Her recipe is below. Ingredients: beef, 1000 g potato, 600–900 g tomato, 3 bell pepper, 3 onion, 2 beer, 250-300 ml chilli pepper, 1 herbs, paprika, black pepper, and salt to taste Instructions: 1. Boil the beef until it is semi-cooked (do not overcook!). Change the water after it’s boiled in order to have a clean and light broth. 2. Peel potatoes, cut bell peppers and onions into rings, and slice tomatoes into circles. 3. Layer up the sliced vegetables, pre-cooked beef, and whole peeled potatoes in a pot. Don’t forget to place also the chilli pepper. 4. Pour the beer and the broth into the pot, season with salt, paprika, black pepper, and cook closed on low heat (for about 30–40 minutes) until perfectly tender. 5.
