Add starter, rest for 30 mins Add salt, rest 30 mins Stretch & fold, rest 30 mins Laminate, adding the pistachio paste and powders, rest 40 mins 3 sets of CF, 30 mins apart, rest 1.5 hours after last CF Shape, place into banneton and put into fridge overnight. Total BF 5.5hrs at 26C. CR for 12 hrs and baked at 230C for 20 mins in my Challenger Pan with lid on, 215C for 24 mins with the lid off. 🌾 A look back at this 40% semolina sourdough focaccia with medjool dates, gorgonzola, candied walnuts and honey. It was sweet, it was savoury- I really wish I had a slice right now! You can find the dough recipe below. 🍯 100g fine semolina 150g all purpose flour 200g spring water 30g sourdough starter 20g extra virgin olive oil 6g sea salt Mix together all the ingredients, excluding the salt, to form a shaggy dough. Allow to rest 30 minutes. Sprinkle over the salt and an additional splash of water. Dimple the salt into the dough, squeeze and fold until it is incorporated. Rubaud the dough 3-4 minutes. Rest 30 minutes. Rubaud an additional 3-4 minutes. Rest 30 minutes. Perform a coil fold. Allow the dough to bulk ferment in a warm place for an additional 1.5 hours performing coil folds as necessary, whenever the dough looks slack. Coat a 9” cake tin in olive oil. Place the dough in the tin making sure all sides are coated in olive oil. Allow to rise for 8-10 hours in a warm place. The dough should fill out the pan and rise nearly to the top. Drizzle the dough generously with extra virgin olive oil, dimple the dough with olive oiled fingers, top with desired toppings. Bake at 500F for 20-25 minutes. Photo dump 🫶🏻 I’ve been a little quiet on here as I’ve been babysitting my nephew in Chicago and bringing my son along. I wanted to be present with them both and therefore kept my phone mostly tucked away in a bag. It’s been amazing growing a bond with him and also seeing the boys bond as well. Bread was still being baked in the in between hours and a little one celebrated his birthday. Outdoor garden is still a work in progress haha but it’s going to be beautiful this summer I just know it! Today’s bake is number 71 on my journey through ’s “What’s For Dessert,” and while it isn’t winning any beauty pageants, it sure is delicious: Souffléed Lemon Bread Pudding! Baking through a book cover-to-cover means that in addition to the showstoppers, sometimes you have to make less attractive desserts, too. While the final product is very delicious, mine does have some issues (my friend will love this post, as she’s most interested in hearing about the recipes that *don’t* go according to plan—we’re always keeping it real over here!). Claire’s bread pudding starts with toasted cubes of challah soaked in a lemon curd infused custard. The lemon curd is homemade, and frankly, it’s more of a lemon curd “sauce” than a lemon curd, in my opinion. Claire instructs to heat the lemon curd to 170° F or until it coats the back of a spoon. I heated mine to 190° and it was still quite loose. The soaked bread is then baked in a water bath, followed by a few minutes under the broiler to caramelized sugar on top. Everything is served with a drizzle of lemon curd. My bread pudding was underbaked (as evidenced by photo number two), but the overall flavor is fantastic! I’m not in a rush to make this recipe again, but I’m glad I made this stop on my journey.
