Some things are hard to explain, like the fact that I've never had a Sage until recently. And in the end I happened to start with his Grange Bara "Fevrier" 2020, if I understand correctly a lower octane version than the Grange Bara. Same grapes but harvested earlier and vinified with shorter times than its older brother. Huge drinkability, wide-open expressiveness and nice lightfootedness, this is a sort of glouglou Syrah which tick all the boxes. Light-bodied and slender, extremely tasty yet showing no weight, it delivers deeply juicy flavors of sweet cherry, ripe strawberry on steroids and raspberry jelly along with an extreme sapidity on the mid to late. Savory and incisive, with very fine tannins. Beautiful nose showing crystal-clear notes of black pepper, laurel, olives, river rocks and cherry syrup. Nicolas Jacob, ormai noto vigneron con trascorsi formativi alla scuola Ganevat, dopo aver iniziato la sua avventura al Domaine Macle, avvia la carriera solista nel 2015 acquistando e rilevando appezzamenti di vigneto sui terroir di L'Étoile e Voiteur. La sua tenuta, situata a South Revermont, oggi si estende su 6 ettari con alcune vecchie vigne "selvagge" che è riuscito a recuperare in quel di Rotalier, dopo che furono abbandonate dagli anziani viticultori della zona, ma che aggiungono sicuramente qualcosa di intrigante nelle sue cuvée. Come il suo mentore Jean-François Ganevat, Nicolas Jacob segue risolutamente un approccio naturale, impegnandosi a valorizzare i terroir del sud dello Jura vinificando appezzamento per appezzamento, dando vita a una moltitudine di micro-cuvée. Le sue viti sono coltivate in biologico, e la sua vinificazione è il più naturale possibile, con fermentazioni spontanee e senza aggiunta di solforosa o altri input. Max is part of a close, mutually-inspired circle of friends including other exciting young German winemakers Andi Weigand, Andi Mann, and Martin Worner aka Marto, who were all classmates during their formative years studying viticulture at Geisenheim University. A bomb, I can't remember having had a better Dauvissat's Chablis than this. Yes, I preferred it to any of their 1er Crus I've tried. How is it possible that the pyramid's base is brighter than the top? For me the explanation is rather simple: less SO2, less oak, less interventionism in general. Then probably the Grand and Premier Crus with over 20 years in bottle can really show their magnificence, but not all of us are lucky enough to have them in cellar. Light to medium body with smooth texture and great drive, here there's no roughness, there's no the brake of sulphites which makes the progression clumsy and ungainly, there's no oaky imprint which often breaks the palate in half between the richness of the entry and the tension of the finish. It delivers focused flavors of ripe lemon, kumquats, dried meadow herbs and wax, it's sharp and energetic, showing off insane saltiness and stony minerality towards the ending, providing cut and freshness. The nose is just stunning, with delicate butter, wax, chamomile, chalk powder, honey and ripe Amalfi lemon. The whole free to jump out of the glass and hover in the air.
