After our storms, I cleaned up under our Tempranillo vines, fed it with some earthworm castings, and added a fresh layer of Texas top soil. These vines are year 3. We have been working hard, granted there are only 8 of them, but we have learned a ton through conversations with our winery and vineyard friends and our friends at @12fireswinery . Olivier Horiot Solera NV Champagne 🍾 Last summer I was in Barcelona and we had a 28-course lunch at the #2 restaurant in the world @disfrutarbcn and boy what an experience this was. We ended up going with the winepairing but to celebrate my brother’s birthday we wanted a bottle of champagne to start. I asked the sommelier to recommend some interesting champagnes and he told us olivier horiot (the terroirist) makes some very good and interesting stuff. We went for the solera which is a zero dosage champagne made from all 7 grapes you are allowed to use in the champagne region. So 7 varietals - Arbane, Petit Meslier, Chardonnay and 4 pinots ( Blanc, Gris, Meunier & Noir) but all from one soil (kimmeridgian limestone) in the south of champagne region. This Champagne is fermented in oak barrels and blended under a solera method, hence the name. Super sharp and fresh, complex, evolving notes of apple and brioche and some tertiary notes like almonds. I’d rate this 92/100 points. Definitely recommend this. 鱸のムニエル、海苔のソース。 @yy_otsumami さんの海苔のソースを転用しました。わいyおつまみさんのレシピは、ホタテと菜の花を海苔のソースで食べるという、あまりにも魅力的な構成でした。帆立も菜の花もありませんでしたが、とても新鮮な美味しい長崎県産の天然鱸が手に入ったので、これでも美味しくなるイメージができました。開けている菊鹿シャルドネ。とても素晴らしいワインです。樽のかけ方が絶妙で、樽香が舌にまとわりつかないのが秀逸です。ミネラル感の保持が素晴らしく、魚介系の旨味を引き出しつつ、美しい酸が味わいに統一感をもたらします。 まずは、鱸に塩と白胡椒で薄く下味をつけておき、薄く小麦粉を纏わせます。高温のフライパンで皮面から焼きます。この時、鱸はとても皮が厚く伸縮性が高いため、手で押さえつけながら反り返りを防ぎます。皮に切れ目を入れていましたが十分ではなかったのか、結局反り返りは防止できたものの、皮が片測に寄ってしまうという失敗をしてしまいました。家庭料理なのでそんなことはお構いなく、弱火のグリルにつっこみます。鱸の旨味がついたフライパンに、水でふやかした焼き有明海苔を入れ、水を加えながら加熱して海苔を溶かします。そこに生クリームを加えて、少し塩をしたら海苔のソースができます。皿にソースを敷き、焼き上がった鱸のムニエルを乗せたら完成です。 合わせたのは、熊本県山鹿市のワイナリー、熊本ワイナリーの菊鹿シャルドネです。山鹿市のシャルドネ100%で造られ、ステンレスタンク発酵、木樽熟成です。完熟した白桃の蜜感、シャキッとした赤い林檎、溶け込むように香る樽由来のバニラ、溌剌とした酸味、輪郭のあるストラクチャーが特徴です。熊本のシャルドネがこんなに美味しいのかと毎回感動します。 ワインは熊本、鱸は長崎、海苔は佐賀という、大満足の九州ペアリングです。鱸は特に今の時期、脂がのっており、噛むとジューシーに旨味が口腔内を満たします。海苔のソースは、魚の持つ旨味と方向性を合わせつつ、磯の香りを気持ちよく追加してくれるので、食べる手が止まらなくなります。そこにこの秀逸なシャルドネを合わせていくと、補完的に酸味を与えつつ旨味を引き出し、輪郭のあるストラクチャーによって、料理とのバランスで後退することなく添い遂げ、結果的には味わいの空間を広げることとなります。やはり、クラシックスタイルのシャルドネの底力は素晴らしいです。海苔のソース、帆立でも試してみたいし、菜の花があったらなぁと思いつつ、満足度の高いディナーとなりました。 #ワイン #ワインとともに #ワイン好きな人と繋がりたい #ワインと料理 #ワインペアリング #ワインのある暮らし #ワインのある生活 #ワインのある日常 #ワインスタグラム #ワインを楽しむ #ワインを日常に #ワイン好き #自然派ワイン好きな人と繋がりたい #イタリアワイン好きな人と繋がりたい #料理好きな人と繋がりたい #wine #winelover #winetime #winetasting #winedrinkers #winedays #winedaily #winereviewer #winerating #winelife #lifewithwine #igerswine #italianwine #organicstyle #naturewine

Il Domaine Denis Mortet è stato fondato da Charles Mortet nel 1956. Come era frequente allora nella tradizione borgognona, le uve prodotte dalla sua azienda venivano, per lo più, vendute e non vinificate. E’ con l’avvento di suo figlio Denis e della moglie di lui, Laurance, che l’azienda, nel 1978, inizia ad imbottigliare e vendere direttamente il vino prodotto. Nel 1993 Denis Mortet prende le redini della cantina e la ribattezza con il proprio nome: Domaine Denis Mortet. Allora l’azienda era costituita da 4,5 ettari di vigneti ubicati nei comuni di Gevrey-Chambertin, Chambolle- Musigny e Vougeot. Oggi la proprietà Domaine Denis Mortet conta 11,2 ettari di vigneti lavorati sin dal 1996 senza l’ausilio di diserbanti e fertilizzanti chimici. Il primo riconoscimento all’operato del Domaine Denis Mortet arriva nel 1995 quando, la Revue du Vin de France, nomina Denis Mortet miglior produttore di Francia. Dal 2000 sino alla sua morte, Denis Mortet viene affiancato nella gestione aziendale oltre che dalla moglie Laurance anche dai figli Arnaud e Clémence. La volontà dei Mortet è quella di esprimere fedelmente con il loro lavoro la stretta complicità tra vigneto e natura. I fratelli Arnaud e Clémence Mortet, alla guida dello storico Domaine Denis Mortet, hanno con la vendemmia 2016 inaugurato una loro nuova cantina dal nome Domaine Arnaud Mortet. Il nuovo domaine ha preso avvio includendo ai loro possedimenti altri 4 ettari vitati presenti nelle zone di produzione di Gevrey-Chambertin e di Charmes-Chambertin. Sia lo storico Domaine Denis Mortet che il nuovo Domaine Arnaud Mortet si avvalgono dello stesso gruppo di collaboratori ed i vini delle due aziende sono prodotti seguendo i medesimi standard qualitativi. Just indulging our delight in the beautiful visuals of Bud break on our scenic hillside vineyard. We're about 3 weeks into leaf growth and it's always so beautiful to see them unfurling their delicate tendrils. Those are not grape clusters by the way, just the way the leaves look when they first appear. We're still a couple weeks from seeing any actual tiny tiny grapes. There's no predicting this year's vintage at this point, weather's been pretty average for April Oregon. Мой витамин К 🌱 Murviedro Crianza Темпранильо Сира Монастрель DOP Испания 2019 ⭐⭐⭐⭐🌠 Апрель заходит тяжело: вроде и весна в разгаре, и солнышко светит, и птички поют, но почему-то ни сил, ни вкуса, ни аппетита, ни, соответственно, вина! 🤒💤 - Доктор, посмотрите, что это у меня? - О Господи, больной, что это у вас? 😵 У нас, похоже, авитаминоз, и ничто не радует, даже огромный фруктовый торт 🥞 и +10 🍋🍋🍋🍋🍋🍋🍋🍋🍋🍋с фотосессии, которые достались мне ОДНОЙ! Но авитаминоз явно не у меня одной, поэтому, пожалуй, спОлзаю в сад, нарву кроликам травы, они тоже как-то приуныли и исхудали после зимы. 🐇🐇 Что у нас там наросло? Пырей, одуваны, клевер, сныть, крапива, лаванда, земляника, мусор какой-то… А ну-ка, ну-ка, вот молодая крапивка ничего так себе, ммм… Хрум-хрум. Если зайцам ок, то, может, и мне поможет? 🙏 А эти мохнатые дурачки не такие уж и дурачки! Молодая крапива: а) реально вкусная, б) легко жуется, в) полезная как +100 🍋. Посмотрите, что за чудо эта крапива: витамины А, В, С, Е, К, микро- и макроэлементы - железо, магний, медь, кальций, кремний, селен, флавоноиды, фитонциды и органические кислоты. Крапива укрепляет иммунитет, ускоряет метаболизм, выводит шлаки и токсины, обладает противовоспалительным и кровоостанавливающим действием.
