Beat the heat with Panta Bhaat (Fermented Rice - Bengali Style) Bhaat or fermented rice is very popular in Bangladesh and the North Eastern part of india, especially, West Bengal, Assam and Odisha. It is basically leftover cooked rice soaked in water and left overnight to ferment. This is then relished next morning as breakfast along with various side dishes like potato fry or any other curry, green chilies, onion, burnt / roasted red chilies, lime, fish fry, papad or pickle. It is considered a staple breakfast diet in the rural areas and is also very popular during summer âī¸ times. Ingredients 1 cup cooked rice to taste salt 1-2 green chillies 1-2 roasted / burnt red chili 1 tbsp. coriander leaves 1 slice lime Potato fry / potato bharta (mashed potato) to serve Cooking Instructions 1 In a bowl, take the cooked rice and add water to it. It should cover the rice. Overnight Fermented rice mixed with yogurt green chillies and tad bit chopped onions. To add more probiotic to it I mixed Vegan Kimchi from #bonchon. You can add #saukerkraut to it. This is very good lunch for gut health. In india its a poor men food but this will carry your body through daily grind easily. . Adding yogurt is optional. My plate today, panta bhaat. For us, panta bhaat was never something to be had for lunch. And neither did it come accompanied with anything except some fried potatoes, onion and chillies. It was part of the morning āĻāĻ˛āĻāĻžāĻŦāĻžāĻ°. When I try to translate āĻāĻ˛āĻāĻžāĻŦāĻžāĻ° into English, it would come to mean snack. So yes, in a crude sense, it is a morning snack, and remains one for the vast majority of labouring class in Eastern India during summers before parting for work. Things like its nutritional value, or the health benefits of consuming fermented food had little part to play in the scheme of daily affairs.
