Let stand until yeast is frothy, about 5-10 minutes. Stir in olive oil and salt. Gradually add all-purpose flour, mixing until a soft dough forms. Knead the dough on a floured surface until smooth and elastic, about 8-10 minutes. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour. Preheat an oven to 500°F (260°C). My last post was all about the color red and this one, with a couple of handfuls of fresh herbs 🌿, highlights the green. My version of shrimp and squid scampi with a base of very finely chopped onions, shallots, fennel, sweet yellow pepper, chili flakes, and two full bulbs of garlic. Add in the seafood and finished with a good douse of wine. Served with pasta. A bunch of pita breads to accompany. Nothing like fresh, hot out of the oven bread. I know it was good when my 17 year old goes out of his way to pay me a compliment.
