Fuelling for a busy day! I recently won a Wellbeing Award at work. Which I'm extremely proud of. However, it did make me realise that I'm pretty good at looking out for the Wellbeing of others, however, pretty hit and miss when it comes to my own! Life had gotten extremely busy recently and looking after myself has totally fallen off my list of priorities. So this week, I'm going to make a conscious effort to take care of me again - move more, nutritious food, decent sleep! Basic, but essential. 💜 beetroot pickle experiment 💜 Basically, I’ve been wondering for ages, why, when one makes a ‘quick’ or ‘fridge’ pickle, does the vinegar and water have to be heated?! I’ve had a sneaking suspicion that if it wasn’t, you could use raw unfiltered vinegar with all the good probiotics in, plus salt and sugar to get a sweet/salty pickle that is ALSO live and full of good bacteria! Perfect Sunday snack means Vegetarian spring rolls!! Here the recipe for it: Ingredients: Rice paper wrappers Shredded lettuce or cabbage Julienned carrots Thinly sliced cucumber Fresh herbs (such as mint, cilantro, or Thai basil) Rice vermicelli noodles (optional) Dipping sauce (such as hoisin sauce or peanut sauce) Instructions: Prepare Fillings: Soak rice vermicelli noodles in hot water until softened (if using). Prepare all vegetables and herbs by washing and cutting them into thin strips. Assemble Spring Rolls: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens. Lay the wrapper flat on a clean surface. Add Fillings: Place a small amount of shredded lettuce or cabbage on the bottom third of the wrapper. Add a few strips of carrots, cucumber, and herbs on top of the lettuce. Optionally, add a small amount of softened rice vermicelli noodles. Roll the Spring Rolls: Fold the bottom edge of the wrapper over the fillings. Irresistibly Fresh Beetroot, Carrot, and Cabbage Salad 🥰 Ingredients👈 - 2 medium beetroots, grated - 2 medium carrots, grated - 1/4 small cabbage, finely shredded - 1/4 cup fresh parsley, chopped - 1/4 cup sunflower seeds - 1/4 cup pumpkin seeds - Juice of 1 lemon - 2 tablespoons olive oil - 1 tablespoon honey (optional) - Salt and pepper to taste Directions👈 1. Today was bright and sunny, so I was inspired to make a colorful spring salad. Instead of lettuce or greens, I went with baby bok choy and I was not disappointed. It has a fresh, mild flavor, it’s crisp and was a nice change. Bok Choy Spring Salad 8 oz fresh snow peas, blanched and sliced 8 oz frozen shelled edamame, thawed 1 lb bok choy, chopped 1/2 large purple cabbage, shredded 2 carrots, shredded 1 medium red onion, diced 4-6 radishes, thinly sliced 1/4 cup raw sunflower seeds (optional) Dressing: 1-2 cloves garlic, minced 1 small piece fresh ginger, grated Zest and juice of 1 fresh lemon 1/2 cup rice wine vinegar 1 Tbsp whole grain mustard 1 Tbsp tahini 2 Tbsp pure maple syrup Put all the salad ingredients together in a large bowl. Put all the dressing ingredients in a jar, cover and shake well. Pour over salad, toss together and enjoy! I’m betting it will be even better tomorrow after the flavors have all marinated. Fancied a #cheekynandos So I got a kids meal which was a medim spiced chicken breast, with a kids chips and spicy rice, some regular garlic bread, a hot flavoured chicken breast as an extra side, with some halloumi. Earth Day is just around the corner! I have been thinking of ways I can do better around the house & kitchen. I bought a reusable washable compostable sponge cloth (in order to use alot less paper towels) and also more usable produce bags. I would love to also move to using sheets of laundry detergent. It can feel abit overwhelming but I am hopeful that my small changes make a difference in the long run for my family.

Fueling my body, feeding my soul 🥑🍓 Here’s what I eat in a day, no secrets, no filters, and varies from day to day: - Glass of water first thing in the morning - followed by black coffee -breakfast: oatmeal, with granola, peanut butter and sometimes chocolate chips. I add honey & cinnamon. Always have that with my Green Juice 🧃 - lunch: on heavy training days I add more carbs. This day I had stir fry chicken with veggies over white rice 😋😋. I accompany this with either my collagen drink, coconut water or lemon water. - dinner: my own version of Pizzadillas 🍕I make them with almond flour tortillas, mozzarella and turkey pepperoni !! I make the tomato sauce for dipping on the side. It’s a colorful mix of fresh fruits, veggies & lean protein. Remember, it’s not about perfection, but about the journey of self-love and wellness. Beetroot with super tasty + healthy ‘Salsa Verde’ What a beautiful combo. Colours and taste were so complimentary. For the salsa I blitzed capers, parsley, olives, teaspoon of garlic powder and a drizzle of olive oil. I love reading about the fact that eating beetroot regularly can metabolise estrogen and testosterone levels so a must for peri/ menopausal diet. It’s fantastic to cleanse the liver with high vit C content and great source of fiber, folate (vitamin B9), manganese, potassium and iron. Beetroot is also high in beta-carotene and antioxidants, which assist to increase the flow of oxygenated blood to the uterus, which reduces inflammation and relieves the discomfort and severity of menstrual cramps. The salsa has so many great benefits but let’s concentrate on the parsley for the moment. Parsley contains several important nutrients, such as vitamins A, K, and C. It’s also a good source of the minerals calcium, iron, magnesium, and potassium. It also helps to flush out toxins. A great way to consume more of it. VEGAN JACKFRUIT GOULASH Todays dinner was a vegan goulash (or gulasch) made out of jackfruit. A quick and easy meal, full of nutrients and perfect for a cozy dinner night. In the original recipe by @johnnys.fitfood the goulash is served with "Spätzle", but we had it with Fusilli Tricolore instead. However, the recipe is so good that you can enjoy it with any side dish of your choice. I bet rice, potatoes or couscous would fit very well with it aswell. By the way, we replaced the red wine with strained tomatoes; however, the taste and consistency were still top-notch. Don't forget to check out Johnny's account for a lot more creative recipe creations and amazing content. Heute gab es veganes Gulasch aus Jackfruit. Ein super schnelles und einfaches Gericht, voll gepackt mit Nährstoffen und perfekt für einen gemütlichen Dinner-Abend. Im Originalrezept von @johnnys.fitfood wird das Gulasch mit "Spätzle" serviert, aber wir hatten es stattdessen mit Fusilli Tricolore.
