Sho|03.17.2024 My unexpected discovery in Kaohsiung was Sho @sho_taiwan , the refined sister restaurant of Den in Tokyo. It offers a serene, elegant ambiance, distinct from the more casual atmosphere of Den. The exemplary service reflects Chef @shoichi_fujimoto extensive experience in Kikunoi Honten, blending traditional Japanese culinary principles with innovative nuances. The highlight for me was the wild vegetable salad, an extraordinary blend of fresh Taiwanese vegetables, crunchy dried leaves, kombu, and bits of tempura, creating a memorable mix of textures and flavors. 許久未更新,我生完回來了😎 一來就來一發厲害的米其林一星 ⭐️ 裝潢延續隔壁Frenchie Frenchie的復古風格,但位置更寬敞舒適些。 無咖啡因的茶湯決明子菊花茶,在晚餐時段供應算是滿貼心的設定。 來自冉冉茶事的tea pairing,四杯茶湯依不同的餐點分別搭上烏龍、金萱、紅茶和紅烏龍甚是喜歡。 前菜鱈魚肝/栗子/花生小魚乾、魚子醬/帝王蟹/南瓜,底部螃蟹為蟹膏所做有夠可愛。 粵式火濃雞湯/大頭菜,湯頭用了數種食材長時間熬煮而成,非常濃郁但不膩口。 和牛頰/二林鵝肝/松露起司,一入口就是滿滿的和牛頰味,咀嚼到最後松露起司的味道慢慢的浮現,最後剩下松露的味道在口內,層次豐富。 柿子冰沙/檸檬馬鞭草/蜜瓜則是進入主餐前的一道小品,主要是刺激味蕾,為接下來的主餐做準備。而柿子冰沙人生首見,實在很讚。 主餐高地和羊/溪湖溫體羊/羊肉餃,身為半個溪湖人怎能錯過!和羊的肉質軟爛且無羊味;溫體羊以羊肉爐作為發想,兩者美味至極。羊肉餃I’m sorry相形之下較為失色些,但擺盤很美。另外最令我驚豔的是和羊下方的橘色醬料,沒吃錯的話應該是以豆腐乳製作,整個好吃極了👏🏼 主廚臘味飯/鮭魚卵/越光米,桌邊再做翻攪,香味四溢。除了臘肉、香腸鹹香之外,鮭魚卵也增添了不一樣的口感。 最後開心果糊/奶黃湯圓/鹹蛋黃,而最上層的是香料餅乾。開心果糊配上湯圓完全是冬天ㄧ道comfort food。 此趟對我來說算是驚喜之行,是另一半提前安排的情人節晚餐😂 我只提過一次這間餐廳,沒想到他就記住了也是滿感人的啦😘 #台中美食 #台中餐廳 #台中米其林 #台中晚餐 #台中 #台中旅遊 #foodie #taiwan #taiwanmichelin #taichung #taichungfood

It was my third time coming to this restaurant. All the dishes are delicious and each time I try something new and I get positively surprised. FOOD: This time I tried 牛肉麵 and it was yummy with a strong flavour. We also had a beef pancake roll, 小籠包, soups and other stuffs. No complains about any dishes. MENU: Just quite simple menu as it’s traditional here in Taiwan with everything written in Chinese and we just make mark what we want. SERVICE: Even though it’s crowded with a big line, we waited less than 5 minutes and after ordering the food, they come right away. PRICE: 465 兩位。 It’s extremely cheap according to the amount of food we had. 牛肉麵 only 120 NTD and there are places here in Taichung which sells for 180 NTD or even more and it’s not as delicious as this one. Extra Information: The atmosphere and environment are really simple and you might need to listen the talk from other tables. A great lunch with my best friend from childhood at Shin Yeh Taiwanese Signature 欣葉.鐘菜 located at the ground level of Marriott Hotel Midtown, Taipei, Taiwan. This famous Michelin 1 star restaurant serves array of delicacies of Taiwanese cuisine. We ordered a whole table of food and none disappoints. Savoury chicken with scallion dressing Stir-fry beef tenderloin Stir-fry Shrimp, peppers, asparagus and cashew Chicken and Matsutake mushroom soup Red rice yeast fermented fried pork Oyster fritter and basil Stir-fried pork kidney with ginger in sesame oil Stir-fried green vegetables Almond peanut milk with Fried dough Signature mochi and tea is also served after the meal This particular Shin Yeh outlet is truly different in the quality and standard for dishes served. Dishes are suitable for my allergic boy too, as the staff are pretty attentive and inform us what he can and cannot eat from the table when they serve the dishes. If i were to choose only 1 favourite…. It will be Stir-fried pork kidney with ginger in sesame oil!! Continuation of my yesterday post on the 6-hands dinner at JAAN, featuring a collaborative effort between three esteemed chefs: Chef Kirk Westaway from the two-Michelin-starred @jaanbykirk in Singapore, Chef Ryogo Tahara from the two-Michelin-starred @logy.tw in Taiwan, and Chef Vicky Cheng from the one-Michelin-starred @vea_hk in Hong Kong. • This particular dish was the one I had been eagerly anticipating all evening, highlighting @ryogotahara_logy signature chawanmushi with a distinctive Taiwanese take. It featured a warm silky steamed egg custard adorned with mud crab, accompanied by a scoop of Angelica ice cream for herbal nuances. Hidden within were bamboo shoot cubes to add a contrasting texture, and it was all brought together with a hot beef consommé. The juxtaposition of temperatures, textures and flavours made it an unforgettable dish for us. • Next, having @chefvickycheng 's 28 Head Dried Abalone Pithivier for the very first time and with just a single bite, I was astounded. The pie was impeccably crafted, featuring a flawless pastry shell that cradled the braised abalone and sweetbread at its heart. Continuation of my previous post on Born × Logy 4-Hands Dinner. The following course by @logy.tw astonished us that evening, featuring a stunning preparation of eel, delicately steamed with sake, deep-fried, and then caramelized with brown sugar. Served in sour mushroom soup, and at the very base, a surprising combination of chocolate and Comte cheese. This dish was an umami bomb, with the interplay of intricate flavours that was truly exceptional, far exceeding our expectations in a way we hadn't anticipated. • Following that, the black throat from @restaurantborn showcased an impeccable char-grilled exterior, while the incorporation of pickled Yunnan Jade fungus for added crunch. This paired seamlessly with the emulsion of chicken fat and finished it off with the spring onion oil. • Next up was Logy's herb rice, which boasted a soft and resilient texture, with invigorating notes from fresh mint and tarragon. It came paired with a crab bisque featuring a base of Kyoto miso, sake, and a clarified tomato broth, all adorned with the soft, sweet richness of sea urchin. • The final savoury dish of our meal featured Restaurant Born's pigeon breast and leg, which had been confit and binchotan grilled. It was served alongside corn gnocchi and adorned with a delicate thin sheet of pearl corn that enveloped the pigeon beautifully. • Wrapping up our meal, we had a trio of desserts, beginning with a pre-dessert of double-boiled bird's nest flavoured with Kumquat, followed by a rich buckwheat ice cream topped with toasted buckwheat and a fig slice drizzled in olive oil. Had an amazing Born × Logy 4-Hands Dinner at @restaurantborn last night, with @chef_zortan teaming up with @ryogotahara_logy from the renowned two-Michelin-starred @logy.tw , which holds the 57th spot on the 2023 Asia's 50 Best Restaurants list. Truly, every course is a check, with brilliance woven into every aspect, allowing us to savour the ingenuity of both chefs. • Each subsequent bite reveals great flavours within the quartet of amuse-bouche offerings. Commenced with carrot tacos from Restaurant Logy, wherein thinly sliced carrots, dressed in hazelnut oil, nestle within and crowned with sesame seeds and perilla leaves. Following this, the Salted Egg Taro Puff, a favourite from Restaurant Born 1st menu. A single bite yields the decadent salted egg yolk custard filling, oozing from the crisp honeycomb taro puff. Then arrived Restaurant Logy's Tofu Mochi, reminiscent of Japanese dango, bearing its chewy texture complemented by a savoury glaze. Within lies the nuances of walnuts, elevated by a touch of oscietra caviar. Lastly, a well executed deep-fried chicken wing stuffed with tender pig stomach with a subtle peppery note, offering a juxtaposition of crispy chicken skin and the savoury pig stomach. • Our first course, featuring Fresh Scallop, Tom Yum, and Kombu Oil, awakens the palate with its refreshing acidity. Next, a luscious egg custard crowned with espardenyes (sea cucumber muscle) was graced by a decadent foie gras sauce, where the rich and savoury notes of foie gras contrast with the unique texture of espardenyes, all complemented by the creamy sweetness of custard. It was perfectly paired with brioche bread, brushed with maple syrup and garnished with roasted buckwheat. #20230909 【Impromptu 中篇】 硬要分成三篇來寫🤣 首圖是仙女朋朋的美手💅🏻💛 還有兩道前菜還沒介紹完,但先介紹主菜! 【鴨胸|鴨腸】 端出來之前,廚師會先將還有完整鴨頭的肉肉端出來給大家看XD 鴨胸弄的像菲力真的是不簡單,上一次吃到滿意的鴨胸是在屏東的AKAME(也是預約困難店),這次吃到的鴨胸跟柔軟,不像其他米其林或Fime dining還有加價可換牛肉的選項,Impromptu 夏季的主角就是鴨,也真的把鴨胸處理的非常細緻,無須額外給予其他選項而搶了主菜該有的風采! 外皮有點焦脆,裡面粉嫩且軟而保有韌性,搭配旁邊的紅酒醬汁真的是人間美味! 旁邊有一顆鴨脖子做成的鴨血腸,配上荳蔻能降低禽味🦆 回到沒介紹完的前菜 【干貝|蘆筍|魚子醬】 這道我個人認為比較普通,就是生食級干貝配上西餐常出現的蘆筍,點綴魚子醬,不是這麼的驚奇,但煎煮功力是無可挑剔的~ 【角魚|蟲草菇|柚子茶】 這道真的是非常補XDD有淡淡的柚子與麻油的香氣,超愛蟲草菇的口感,T+T夏季菜單也是有蟲草菇的那道我很喜歡😂角魚的肉真的很Q彈,給的份量不小,進入主餐前的這一道真的非常滿足😌 【鴨油麵】 前面有說夏季的主角是鴨子,主菜後通常都要來碗澱粉對吧(米其林的套路),很喜歡Impromptu用乾拌麵的方式,把主菜的鴨油跟後面的麵拌在一起,只能說是乾拌麵的天花板,鴨油真的非常香,如果可以,這也是會想要再一碗的….! #台北 #台北美食 #台北餐廳 #台北米其林 #米其林 #米其林餐廳 #米其林一星 #晶華 #晶華酒店 #中山 #中山站美食 #中山站美食 #中山區美食 #無菜單料理 #taipei #taipeifood #taipeitravel #taipeimichelin #michelin #michelinstar #taiwan #taiwanmichelin

#20230909 【Impromptu 上篇】 終於吃到鼎鼎大名的Impromptu! 跟同樣在晶華裡面的Coast的餐具風格真的很像!但Coast還沒有星星,服務員的服務與介紹真的馬上必出高下XD 【煙燻鮭魚|紫蘇|西瓜】 這是冷前菜,也是最讓我的味覺「為之一亮」的一道,從來都沒有想過,同色系的鮪魚跟西瓜,搭在一起可以如此和諧,吃起來非常清爽,非常夏天🍉 再來是前菜三部曲(我自己取的XD)菜單上面是分三道,但他們是三道一起上,介紹完後會跟你說逆時針吃,以下分別介紹: 【章魚腳|酪梨|葡萄柚綠茶】 第一道送上來是很浮誇的乾冰小圓球,圓球吃起來脆脆的,裡面有章魚腳、酪梨,咬下去,有淡淡的葡萄柚香氣,外皮脆脆的,裡面是Q彈的章魚跟油脂的酪梨,口感很有層次🐙 【炸海苔|龍蝦|蜜桃】 第二道前菜龍蝦的味道不太明顯,可能是被香氣十足的海苔覆蓋過去,但我個人還是很喜歡炸海苔的味道與口感🦞 【乳酪塔|哈密瓜|鱒魚卵】 第三道也是用了一個非常夏天的水果:哈密瓜!最上面用接骨木花點綴,米其林餐廳好像都很喜歡拿接骨木來做裝飾XD前菜三部曲,一口吃到第三個,真的有層遞之妙🍈 【香橙洋甘菊麵包】 這是今年吃到最好吃的麵包了!麵包的口感非常紮實,咬下去的,每一口都有淡淡的香橙與洋甘菊的香氣,加上澳洲的奶油,真的會很想吃第二個🥖 【角蝦|青豆|紹興】 第五道是暖胃的熱湯,最上面的角蝦碳烤後仍保留蝦的鮮甜,湯會噴上紹興酒,所以喝起來也有非常淡的酒香,湯頭是用酒熬出來的,不過我忘記是什麼酒了,裡面還有蒸蛋跟干貝,一碗真的不夠🦐 #台北 #台北美食 #台北餐廳 #台北米其林 #米其林 #米其林餐廳 #米其林一星 #晶華 #晶華酒店 #中山 #中山站美食 #中山站美食 #中山區美食 #無菜單料理 #taipei #taipeifood #taipeitravel #taipeimichelin #michelin #michelinstar #taiwan #taiwanmichelin

2023年第六度稱霸米其林三星餐廳的《頤宮》,整體而言,米拉個人覺得整個用餐體驗非常好,服務和用餐環境真的無懈可擊,每道菜都講究的使用專屬的器皿,吃飯的時候感覺也像在看那些餐具走秀, 食物也在水平之上,較可惜的是食物沒有全部讓我們體驗到米其林三顆星星的驚豔,可能家裡的人嘴太刁,被寵壞了。 這頓飯,吃的不只是米其林,而是ㄧ種團員的滋味。那天吃飯是2022年的最後ㄧ天,和閨蜜ㄧ家人還有我們雙方的爸媽,會想選在那天,雖然是以壽宴的名義,而且當初頤宮問我,宴會的名稱,我取了ㄧ個有趣的“喵貴人壽宴”我自己現在想想都很好笑,不知道其他人看到那個包廂的名字是什麼想法?但其實更大ㄧ部分是想好好和2022年告別,感謝疫情終於過去可以回家,感謝身邊重要的人都ㄧ切都好。
