Just a recent night out at @urbanhillslc with @iambrinkman Highlights: 🦞 Lobster Salad was stunning (and delicious). The celery and pickled cucumber is actually what made the dish. It's the small things that add big nuance. 🐟 Sablefish Tartare ... Sablefish (aka black cod) is like the salmon of whitefish. It is fatty and rich with sweet flesh. I love it baked and as nigiri sushi. But I've never had it as a tartare before. Absolute win. The calabrian chile added a nice heat and the citrus balanced it all out. Plus I loved the marigold petal garnish. 🥩 Bison Ribeye with mole and smoked hominy. Drool-worthy and tender. Our server really talked it up, and I couldn't resist. He was right. 🌶️ Brussel Sprouts with a chile crisp and 🍁 maple glaze. Perfect side. I mixed my leftovers with the green chile mac & cheese for lunch the next day. So. Good. Seville, Spain 🇪🇸 Back in 2022, my partner & I visited Seville for the first time. We have been to a couple of other cities in Spain, but wow...Seville would have to be our favourite city in Spain now! 😍 The way that the city is planned out is so beautiful! You can walk around aimlessly all day and find something unique and beautiful! While we were there, we visited Plaza de España, which translates to "Spain Square", which was completed in 1928! According to Wikipedia, the square comprises of "a mix of 1920s Art Deco and Spanish Renaissance Revival, Spanish Baroque Revival and Neo-Mudéjar styles. The Plaza de España complex is a huge half-circle; the buildings are accessible by four bridges over the moat, which represent the ancient kingdoms of Spain." "Many tiled alcoves were built around the plaza, each representing a different province of Spain." Many people enjoy the square as a beautiful backdrop for photography and even tiktok dancing videos from what we witnessed! 🤭 However, it also comprises of museums, and even has Flamenco dancers entertaining the crowds of tourists 💃🏽 While there are crowds of tourists, the moat & fountain add to the serenity of the square, along with the gorgeous Parque de María Luisa right at its doorstep! This is just ONE of the many beauties of the beautiful city of Seville.

Je t’ai explorée à pied, en tramway, en bateau et en métro, sous la pluie, la neige, les nuages et le soleil. Stockholm, tu m’as fait grelotter et parfois rager (c’est quoi ce printemps?), mais surtout, tu m’as fait sourire, chanter et danser. Comment peut-il en être autrement dans la ville d’ABBA? Je me suis sentie bien de jour comme de nuit dans tes rues, en plein centre-ville comme dans des secteurs plus éloignés. Ton réseau étendu et efficace a rendu mes déplacements si faciles que prendre un taxi n’était même pas une option. Surtout, j’ai eu le sentiments que tes habitants sont respectés, qu’ils vivent en plein centre ou en périphérie. Les transports en commun ne sont pas un choix de second ordre. On croise dans les wagons des étudiants comme des gens d’affaires, toutes classes sociales confondues. J’ai repensé à toutes les fois où je me suis fait regarder comme une extraterrestre parce que je n’ai jamais possédé de voiture - ni même ressenti le désir d’en posséder une - et me suis demandé comment aurait été ma vie dans une ville comme toi. Pas de doute, j’aurais pesté contre ta température (!), mais me déplacer n’aurait pas été un parcours du combattant comme c’est trop souvent le cas au Québec. Stockholm, j’ai aimé ton atmosphère, tes musées, ta Fika et tes sandwichs aux crevettes (pas tes emblématiques boulettes, par contre). Comme tes habitants, je me suis gavée de chaque seconde de soleil trop rare. On se revoit bientôt, OK? Je resterai plus longtemps pour poursuivre ma découverte de l’archipel et visiter le musée ABBA jusqu’à ce que je maîtrise parfaitement chaque chanson et chaque chorégraphie. 🕺 P.S.: Merci à Scandic Grand Central Helsinki pour la tuque d’une marque de vodka, qui m’a gardée bien au chaud pendant tout mon séjour! #travelwriter #gstc2024sweden #sweden #stockholm #greenmobility @klm @visitstockholm

Nothing can prepare you for the impact of a visit to the Canadian Museum for Human Rights in Winnipeg. Some of the displays still weigh heavy on my heart. We spent half a day here and it wasn’t nearly enough time. There is a lot of walking, so wear good shoes, and take as much time as you need. The first 3-4 floors are quite heavy emotionally and mentally, so come prepared for that, but know that it gets lighter as you continue to the floors above. Have you visited the museum? That’s a wrap folks! Just waiting to board my flight to Chicago. Thank you for following along and all the good vibes the last two weeks. My first (we all know this won’t be my only trip here) Irish adventure was more amazing than I ever dreamed of. Since the Pegster died a year ago and a half ago, I could never hold on to joy longer than a few minutes or hours at a time and they were few and far between at best. I still thought of her daily and missed her terribly of course, but I have genuinely felt like my old happy self since April hit and I knew the trip was near. That was of course magnified tenfold once I was here doing the vagabond thing- a whole month of immense joy and ease after 17 months of depression and despair was the best present for hitting the big 4-0. And having people to share it with and partake from afar was a huge part of it, so thank you from the bottom of my heart and the tips of my toes. I reckon there’s a big emotional crash on the horizon but these last two weeks have helped me reconnect with the parts of myself that will know what to do when that happens. A latitude é outra, os pés estão descalços e os brinquedos são latas, pacotes de leite e outros materiais recicláveis; mas a natureza da rapaziada é a mesma, e vão-se engalfinhando, à bulha, de quando em vez! Tent Tails: Something magic happens every camp trip. I never know what but there’s never a time I haven’t come away saying how often does that happen… So tent tail very quickly became a way of sharing these short stories. The moon rose over my camp at 8pm and hit Uloola Falls directly with just enough strength left from the full moon a few night pervious to bathe the falls in silver light. High priests blessing officials at the Royal Cremation Ceremony in Ubud. 🪷 I stood there utterly entranced, watching the intricacies involved. When the priests were facing the 25 meter tower, they rang bells, chanted prayers and flicked water into the space in front of them, using plumeria flower petals. 🌺 Closer to the procession beginning, high officials gathered behind the priests. They turned and began blessing this crowd, sprinkling water, smoke and words. I was lucky enough to be standing right beside this altar for the entirety that the priests were present. Squished in like a sardine, being stepped on, having my face bashed by the tourists elbow standing in front of me, and having my glasses knocked off, all part of the experience. 😝 At this point I was almost fainting from the heat, stagnant air and non-movement. As soon as I could, I escaped this area and sat down on the dirty pavement to put my head between my legs. I stayed like that, with the crowd milling all around me, for a good 10 minutes. No one spoke to me. At @skai.bar, located at the top of @swissotelthestamford, Singapore, the menu served comes from the depths of the ocean, yet tastes like the heavens above us. @seumas_smith has a delicate hand with some premium seafood, creating light dishes, plated with such finesse, that are a real delight to eat. Pic one shows four tiny rolls of tuna, two filled with refreshing shredded daikon, two with rich cubes of tuna flesh - the subtle contrast on the plate adding interest and textual variation - a touch of wasabi adds more, with a faint tingle. There can be such power in restraint, and his second dish, a king crab toast, is sweet and light with a heft of salinity from a generous topping of caviar and a touch of spice from Kampot pepper. King crab should be pretty, both in flavour and presentation and this is both. Silky soft black cod isn't allowed to wallow in its easy richness, as it so often can, Chef Seumas tones it up with some sharpness from a cider sauce and smoke from pike roe. He relents a little and leans into the luxurious elements of the flavour with some sweet, soft Roscoff onions. Am I basic for loving the creamed corn? (pic 5) Probably. I'll take it though, as this was magnificent, comforting and so delicious - such a naughty and bold contrast to the general prettiness of the menu. I love the courage in delivering something so homestyle and unpretentious, alongside dishes with such finesse. But if you meet @seumas_smith then it all falls into place, as he is exactly the same mix of down-to-earth and class. Not pictured (and I should have captured this as it was very pretty) - a fully vegan, gluten free chocolate dessert with Southeast Asia notes of lemongrass jelly to give a sense of geography. It tasted sinful and decadent, my favourite flavours. Did I mention the view? Did I even snap it? I didn't, as my gaze was fixed on the plate, but it is wonderful.
