Day 95/110 - Monday 15 April 2024 Already our last day in HK. We left the ship around 11AM and just wandered around the many shops in Kowloon. We had a nice simple French lunch at Maison Eric Kayser and walked around a bit more. At night we had a really lovely Chinese dinner with Angie & Lenora at Tin Lung Heen**. This restaurant is located on the 102nd floor of the International Commerce Centre, with 484 meters (1,588 ft) the tallest building in Hong Kong and it’s one of the venues of the Ritz Carlton Hotel which is occupying the top 18 floors of the building. So yes, we had quite a view and even a nice sunrise. More importantly, the food was great: Chinese but not too experimental. The venue itself looks really beautiful, with a height of three floors and top to floor windows it’s quite stunning. We had an 8 course set menu, with portions going beyond our capacity. Certainly not ‘nouvelle cuisine’. We started at 6PM and were finished just before 10PM and jumped in a taxi (we could have taken the hotel car, but I’m not sure the Rolls would be allowed to drop us close to the ship as ‘all aboard’ was 10:30PM). Baile valenciano en la huerta (1889-90). Fiesta en una alquería valenciana (1890-91). El naranjero (1891) y Escena valenciana (1893).” En temporada de cítricos conoce València a través de nosotros. So today, I went to @alma.henriquesapessoa in Lisbon for lunch. Absolutely loved the whole experience - the food was incredible, I was so well looked after and throughout there was such attention to detail. I can really see how they have kept those two stars. After some deliberation I decided to dine from the a la carte, rather than one of the tasting menus. Prior to my chosen food arriving, I had a few ‘surprises’ - if only all surprises in life involved Michelin star snacks! I then had the local fish and shellfish soup which was just exquisite. Probably the best fish and shellfish I’ve ever eaten and though the whole meal was a highlight, this was probably my favourite course as it’s just exactly the kind of food I love most. My main was the monkfish and lobster rice which I loved - and the plate it was served on! Ive had many examples of tomato rice in Portugal and this was so perfectly done For dessert I had the sea flavours and citrus , which was so moreish I could have eaten it twice. At the very end was another ‘surprise’ (and having such a sweet tooth - probably my favourite of the surprises)- the petit fours which offered tastes of Portugal. My favourite (predictably) was the second one which was a pastel de nata in sweet form. With each course, I had a different wine to go with the food. The first one being a vinho verde and this is in the top two vinho verdes I’ve had. So light and crisp and just exactly the kind of wine that I love. The second wine was from the Alentejo region and whilst not my usual kind of wine, it was delicious and was perfect with the food. With desert it was a 30 year old tawny (which is my favourite). Having wanted to eat here for a while now, I had high expectations - which were met and then some. I would definitely like to come back with a friend sometime to try the tasting menu, and also just to experience the exceptional service again. Koan It was a sensation when chef Kristian Bauman and restaurant Koan last year received two Michelin stars after just three months in business. The story of Bauman and Koan is almost unbelievable – a story of first losing it all and then getting so much more back. In 2020 his restaurant, 108 with one Michelin star, closed for good because of the restrictions due to the Covid pandemic. Kristian Bauman then began to reinvent himself and as a Korean born adopted to Denmark, he started to search for his roots, his gastronomic roots. After having operated from different temporary addresses, he finally found the right place, an old warehouse nick named ‘Langelinieskuret’, ‘the Langelinie shed’. Langelinieskuret, near The Little Mermaid, from 1894 was part of the then busy harbor, and functioned as warehouse, custom house etc. Inside you’ll find one of the most beautiful dining rooms in Copenhagen with an atmosphere of both warmth and coolness at the same time. Kristian Bauman explores the street kitchens, the temples, the barbecue culture and the royal court cuisine. The kitchen uses Korean technics and the best local/Danish ingredients to create Korean flavors. Some of the dishes have already become signature dishes such as the tofu seasoned with pine nuts and served with preserved strawberries, Norwegian langoustine and caviar and the seaweed ice-cream with hazelnut oil and caviar. The iconic dessert first appeared at restaurant 108. Koan is without doubt among the very best restaurants in Copenhagen right now. You’re in for a night to remember. The set menu is 3.000 DKK. The meal @belcanto_joseavillez is definitely on the list of the best meals I’ve ever had. The care and attention to detail put into each course came through in every bite and was a symphony of flavours. My personal faves were the tempura with tuna belly and sea urchin and, of course, the “Garden of the Goose that Laid the Golden Eggs”.
