Pessach Torte 🎂 Pessach ist leider schon wieder vorbei, aber ich möchte euch diese wirklich simple schnelle Torte, die nicht gebacken werden muss, nicht vorenthalten. Matze schmeckt etwas wie Knäckebrot ohne Salz: ziemlich fad. Aber kombiniert man sie mit Aufstrichen oder anderen Zutaten, sind Matzen köstlich - als Pizza belegt, als feines Gebäck oder als Matzeknödel in einer klaren Suppe ein wahrer Genuss. Matzen Kuchen ist super simple. Die einzelnen Matzot für 10 Sekunden tränken - in einer Milch deiner Wahl oder in Wasser. Dann mit einer Creme deiner Wahl schichten und mindestens 4 Stunden, am besten aber über Nacht im Kühlschrank kalt stellen. I’m late! The Passover Seder was a week ago and I’m just posting our Seder plate. Passover symbolizes liberation from exploitation and slavery, and in addition, compassion and respect for all living creatures . The chicken egg* was replaced by sunflower seeds, which represents renewal, spring and new traditions that don’t harm animals. Instead of the animal bone, we used roasted beet which symbolizes the animal blood that has been shed in the name of the Passover tradition. Passover stands for liberation from slavery; how can serving butchered body parts and eggs of another species, who suffered and was brutally killed, can ever symbolize freedom? Passover Seder is about being thoughtful and reinventing old and cruel traditions. Please always choose compassion * In the egg industry, male chicks are separated shortly after hatching and are ground up, asphyxiated, or electrocuted, while fully conscious. This practice occurs in all egg production. THANK YOU to everyone for being so understanding about not having bagels yesterday. After we got the notice about pie fest being canceled, I made the decision that we should not invest any additional resources (labor, kitchen time, ingredients) into this week. So we finished our projects & cleaned up. This meant we only had pre-packaged deli / schmear / krauts / (limited) baked goods at @atwatervillagefm yesterday & I worked by myself at the market. Except for a few folks, everyone was so kind & understanding. One of our regulars, who is maybe 8yo, burst into tears upon hearing there were no bagels. This made me feel a lot of things. Knowing we are a favorite part of this child's week, means a lot to me. We'll be back to bageling this week. And post-Passover pre-orders, which include our challah & babka, will be open later today. Wusstest du, dass Jüdinnen*Juden gerade fasten? Es ist Pessach und es wird die Befreiung aus der Sklaverei der Pharaonen und der Auszug aus Ägypten gefeiert. Alle Chametz, also Getreidearten wie Weizen, Hafer, Roggen, Gerste und Dinkel, wenn sie länger als 18 Minuten mit Wasser in Kontakt gekommen sind, fermentierte oder Hefe enthaltende Lebensmittel, sind verboten; nicht nur sie zu essen und zu trinken, sondern sogar sie zu besitzen. Demnach verzichten wir in der Woche von Pessach nicht nur Brot, sondern auch auf Pasta, Pizza und auf jegliches Gebäck. Stattdessen essen wir Matzen (ungesäuerte Brot). Matzen sollen an die Flucht aus der Sklaverei in Ägypten erinnern, bei der die Menschen keine Zeit hatten Brot zu backen und stattdessen Matzen entstanden sind. 22-30 April 2024: Passover. Chag Pesach samech! ✡️ Potato Kugel Recipe 😋 Last year I made my first Kugel, and I have no idea why I had not made Kugel before then?! I am not Jewish, but my mother was, and I can not recall her making this dish. It's basically like a big baked Latke or Rösti, and can be made in a number of ways, which can be dependent on which sect of Judaism one subscribes to, and the time of year... If I am a newbie at the recipe, then I consult an expert with the most accessible version. @zardyplants in this case, was it, and they did not disappoint! The only difference to my Kugel is that one of my potatoes was a sweet potato, and I didn't use coconut milk. That's it. LINK IN COMMENTS! You need to make Kugel! It's crunchy on the outside, soft in the middle, and can stand up as a meal on its own. I garnished mine with a savoury lemon cashew cream... This is NOT diet friendly guys - just a warning. 𝗖𝗛𝗢𝗖𝗢𝗟𝗔𝗧𝗘 𝗠𝗔𝗧𝗭𝗢 𝗕𝗔𝗥𝗞 Passover is around the corner and there will be lots of Matzo to get creative with! This chocolate matzo bark makes a perfect sweet treat and is a great way to use up any extra matzo! Thanks to @theyummyvegan for sharing this easy and delicious recipe. Photos @theyummyvegan 𝗪𝗵𝗶𝘁𝗲 𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗠𝗮𝘁𝗰𝗵𝗮 3-4 pieces of plain or salted Matzo
7oz (200g) @pascha.chocolate Vegan White Chocolate 
2-3 oz (100 -150g) @naturescharm Matcha Sauce (you can easily make one with Matcha Powder, sugar and water 𝗠𝗶𝗹𝗸 𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝘄/ 𝗖𝗿𝗮𝗻𝗯𝗲𝗿𝗿𝗶𝗲𝘀 & 𝗣𝗶𝘀𝘁𝗮𝗰𝗵𝗶𝗼𝘀 3-4 pieces of plain or salted Matzo
7oz (200g) Vegan Milk or Dark Chocolate 
1/3 cup (45g) Dried Cranberries
1/3 cup (45g) shelled Pistachios chopped
Optional: flaky salt 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 1. Place whichever chocolate you are working with first into a microwave safe bowl. Heat for intervals of 15 secs at a time until the chocolate begins to melt. Stir and let the residual heat help melt it. Repeat until it’s smooth. 
 2. Using either a spoon or my preferred method of a silicone brush to evenly spread the chocolate over one entire side of the Matzo. Immediately add your toppings while the chocolate is melted.
 3. If adding the matcha sauce then either make a pattern or drizzle it through the melted white chocolate and if adding fruit and nuts then add them while the dark or milk chocolate is melted.
 4. Place the finished coated matzos onto a cookie sheet or freezer safe plate and place into the freezer to set for 10 minutes.
 5. Once set, you can break apart the matzo bark into smaller pieces to serve. Store any uneaten pieces in the refrigerator or freezer. #veganjewishfood #matzo #veganpassover #jewishfooodie #theyummyvegan

SOUR PICKLE RELISH w/ mustard seeds is one of the natural ferments that we love most. IMO (unsweetened) relish is an underrated & unappreciated condiment that adds zest, acidity & flavor to sandwiches, salads, roasted or steamed vegetables, etc. We make ours with cucumber, radish, multicolored carrots, celery, onion, garlic, mustard seed & salt. We add watermelon rind & other veg when in season 🥒 Our pre-order is open for this weekend. It’s been hard to share because truthfully food hasn’t been something I’ve felt connected to at all. 🌱Feeding another human & introducing them to food (after exclusively feeding them one thing for months) can be extremely overwhelming. 🥑Even though my daughter’s been eating solid for 7/8 months now. She is constantly changing. One day she will easily eat a PB&j sandwich but the next toss it on the floor. It can be disheartening too when we spend all this time cooking up something for them to not eat it. ✨I know most of it has been hard because I haven’t been in my own space or flow. On top of that the world got all shook up & I’ve been in flight mode most of the time; running circles in my mind. 💛There are moments of intense grief, low energy, and self judgment. Mothers constantly question if we are making the best decision for our families. Even now trying to raise a vegetarian/vegan child there is so much that comes up! Within myself but also with others making comments about how I choose to raise our family. Questions that arise for me are… “Should I be imposing my belief of being vegan/vegetarian on my daughter?” “Is it actually the best diet for us?” “What is the right decision to keeping us healthy & balanced?” 🤍I believe that we should eat what feels the best in our bodies & what aligns with our souls! As pieces of my life start to come back & I find my ground I hope to share more. 😘 I’m feeling some what better & slowly coming back into my creative flow. Who's ready for a little @chefmegantucker story time? In late 2016 I wanted to start a small business while working my corporate grocery job, but wasn't sure what kind of cuisine to serve. After seeing lots of carrot lox on recipe blogs, I was working my own version, just for personal use. Meanwhile, I was working on beet pepperoni for the pizza program at my job. One day, after making a batch of the pepperoni, I thought, "with different spices, this could be CORNED BEETS!" Immediately after, the lightbulb moment happened and I realized I needed to veganized the Jewish deli and name it after my grandparents. Hello Halvah Granola, the first recipe I have made from @noshwithmicah ‘s brand new cookbook that comes out March 5th from @thecollectivebookstudio . What’s a Sunday without a toasted bagel, vegan cream cheese, onions, capers and carrot lox? Here is a simple and delicious take on “lox” made from carrots! Thanks to @theyummyvegan for the pic and recipe! Carrot Lox 2 medium Carrots peeled, then cut into ribbons
1/3 cup (79 ml) Water
3 tsp (15 ml) Soy Sauce
1 tsp (5 ml) Maple Syrup
1 tsp Sesame Oil
1 tsp (5 g) Dill chopped
1 Tbsp (15 g) Nori Seaweed chopped fine
few dashes of Liquid Smoke
pinch of Salt Directions: 
Make the carrot lox no later than the night before (the longer they marinate, the better the taste). Cut the carrot into ribbons using a mandolin or vegetable peeler. Blanch the carrots in boiling water for 3-5 minutes, they should be soft but still hold their shape. Add the blanched carrots to a bowl along with the toasted sesame oil, soy sauce, maple syrup, salt, liquid smoke and chopped seaweed. Mix well and store in the refrigerator in a sealed container overnight or for 2 days. Every so often, when you happen to be in the kitchen, give them a mix. 𝗛𝗔𝗟𝗨𝗦𝗞𝗜 - 𝗖𝗔𝗕𝗕𝗔𝗚𝗘 & 𝗡𝗢𝗢𝗗𝗟𝗘𝗦 Haluski (pronounced ha-LOOSH-key) is a classic Polish (as well as Ukrainian, Slovakian & Romanian) comfort food. It’s been enjoyed in many Eastern European Jewish households and become quite nostalgic for many Jewish and Non Jewish people. It’s incredibly simple to make and consists of just five ingredients. What’s not to love about a big bowl of buttery noodles with a subtle sweetness from the sautéed onions and cabbage! It’s easy to make and you’ll be pleasantly surprised at how delicious and satisfying it can be! Photos and recipe courtesy of @theyummyvegan Serves 2-3 Ingredients 8oz (227g) Wide Noodles
1 small head of Cabbage (about 1 lb or 
1 medium (200g) Onion cut root to stem
3-4 Tbsp (45-60g) Vegan Butter
4 cloves Garlic minced
Salt & Pepper to taste Note:
Prep the cabbage by cutting it in half and removing as much of the core as possible. Turn the cabbage cut side down and slice the cabbage thinly into shreds. Directions 1. Melt the vegan butter in a large skillet on medium low heat. Add the onions and sauté them stirring occassionally for 10 minutes or until they take on a golden color. 2. Bring a large pot of water to boil and cook the pasta according to package directions. 3. Add the shredded cabbage to the onions and mix well. Sauté for 7 -10 minutes or until the cabbage becomes soft but retains it’s green color. 4. Season with salt & pepper and add in the garlic. Cook for a few minutes before adding in the cooked pasta. Mix well and allow everything to heat through. Check for seasoning and adjust with more salt & pepper if needed. #Repost @zardyplants @download.ins --- The other night I was just super craving my vegan spinach noodle kugel so I made it. Actually Paul made it. He claims he doesn’t know how to cook but… I think he really does. Kugel is essentially noodle pudding. You’ll see it at basically any Jewish gathering or holiday meal. It’s usually sweet. The original recipe for this savory noodle kugel is written by hand on a piece of paper, in one of the four boxes of recipes my maternal grandmother left to me. It’s the first one I ever veganized. My grandmother catered events in Pennsylvania for a half century. The woman had 3 freezers, a convection oven in the basement, and a pantry bigger than most walk in closets. She lived to feed people. I can feel her spirit in me when I cook. Thought I’d share a little of that with you today. This is actually perfect to serve for Hanukkah or any holiday, served with my seitan brisket and latkes (potato pancakes) if you’re feeling fancy. But it also makes a quick weeknight dinner. I often make it with whole wheat pasta and sub kale for the spinach to make it healthier but it’s great either way. It’s basically creamy baked noodles with spinach and it’s amazing. 𝗣𝗢𝗧𝗔𝗧𝗢 𝗟𝗔𝗧𝗞𝗘𝗦 It’s that time again! Hanukkah begins on Thursday evening and so does the frying of the Latkes. Latkes are little potato pancakes served during the Jewish holiday of Hanukkah. They’re crispy on the outside and soft on the inside, slightly greasy in a good way and the perfect vehicle for Vegan Sour Cream and/or Apple Sauce. Try adding sauerkraut for a little something extra! Recipe & photos courtesy of @theyummyvegan 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 4 med-large (about 2.25 lbs) Russet Potatoes
4 small- med ( 1.5 lbs) Yukon Gold Potatoes
1 small Onion
1/2 cup (68 g) plus 2 Tbsp (30 g) Flour
1/2 cup (118 ml) plus 2 Tbsp (30 ml) Vegan Liquid Egg ( I used @justegg )
1/4 tsp Salt
2 tsp (5 g) fresh Dill
2 tsp (5 g) fresh Chives
Pepper to taste
Oil for frying Optional: 2 1/2 cups Sauerkraut (I used @bubbiespickles ) 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 1. Peel your potatoes and using the grating blade run them and the onion through your food processor. It makes it so easy. Alternatively you can use a box grater and a little bit of elbow grease. 2. Make sure to squeeze out as much of the water in them as possible. You can use a nutmilk bag, cheese cloth or even a clean dish towel. Place the drained potato onion mixture into a large bowl. 3.Add the flour, dill, chives, salt and pepper and mix well. Add in the vegan egg and mix well. 4.Heat a large pan on med - high heat and add about 1/4” of oil. Once heated scoop out about a golf ball size amount of the potato mixture and flatten into a pancake shape while squeezing out any excess liquid. Add the pancake to the oil. Repeat this process until there are 3-4 pancakes cooking (depending on the size of your pan). 5.Using a spatula, press down the latke to thin it out and help it cook more evenly. Allow it to cook for 5-6 minutes to brown thoroughly before flipping and cooking the other side for another 5-6 minutes. Place the hot latke on a paper towel covered pan or plate to drain. 6.Repeat until you’ve used up all of the potato mixture. Serve immediately or keep warm in the oven at very low temp. #veganjewishfood #theyummyvegan #jewishveganfood #latkes

Please keep this in mind in regards to picking up orders, emails, etc. I have a FAQ below, which will hopefully answer any questions you might have 🕎 🕎 FAQ: 1) pre-orders for Hanukkah have closed. DILL PICKLE & GARLIC SALT 🥒 🧄🧂the newest member of our spice collection. Inspired by a conversation on @kcrwevan's Good Food, from earlier this year. We turned hollow pickles we didn't want to serve into a tasty seasoning, perfect for popcorn, avocado toast, or anywhere you'd put garlic seasoning. In my opinion, a certain grocery chain know for their snacks may have hijacked your expectation of pickle flavored things. Our pickles are naturally fermented -- no vinegar, so our seasoning is not anywhere reminiscent of salt & vinegar chips. Each jar contains OVER 3 POUNDS of our pickles, sliced, dehydrated, & ground down into a fine seasoning. The pickle powder is herbaceous & almost floral, but paired with @starwestbotanicals organic garlic powder & Kosher salt, it becomes a strangely delicious topping. CLASSIC CHALLAH (VEGAN)🥖✡️ #weareallbread Challah has been giving us some comfort during these devastating times. 💔🇮🇱 Classic Challah Ingredients: 🥖 1 k"g flour (I used half white, hald whole wheat) 🥖 2 tbsp sugar (you can always be a little more generous here...) 🥖 1 tbsp dry yeast or 25 gram cube fresh yeast 🥖 2 cups water 🥖 2 tbsp oil 🥖 1 tbsp salt 🥖 Date syrup for topping (optional) 🥖 Optional toppings: sesame, poppy, spices, chocolate chips Method: 🥖 Dissolve yeast and sugar in water and let sit and bubble for 10 minutes. 🥖 Add flour and salt and mix until a dough comes together. 🥖 Adjust flour and water as needed. 🥖 Add oil and knead dough for a few more minutes until smooth. 🥖 Let dough rise covered for 1.5 hours, punching down dough once in a while. 🥖 Divide dough to even portions and braid challahs (plenty of tutorials on IG and YT) 🥖 Optional brush with water diluted date syrup and top with desired toppings. 🥖 Bake at 180° for 45-60 minutes or until perfectly golden brown. 🥖 I made a delicious dip made of fried garlic, rosemary and chili in olive oil. #istandwithisrael #jewishfood #jewish #jewishandproud #challah #october7th #veganjewishfood #veganbaking

VEGAN MATZO BALL SOUP 🌱 today @atwatervillagefm. We have quarts of soup with four matzo balls, "no-bone" broth, carrot coins & fresh dill. All made from scratch with @matzoproject matzo crumbs, @dececco_pasta evoo, & a LOT of veggies & aromatics go into making our flavorful broth. We'll have MBS every week though the end of the year with the exception of Thanksgiving.
